Lowe the heat to medium-low and let the sauce thicken, whisking every now and then. Once it has thickened, add the pasta and stir. Season to your liking.

For the veggies, you need 1tbsp of olive oil, 300 g cherry tomatoes, 2 red peppers, 1 large courgette, and some salt and pepper. For the risotto, you would need 1tbsp olive oil, 1 large red onion, 3 garlic cloves, 225 g risotto rice, 1tbsp balsamic vinegar, 250 ml passata, 250 ml vegetable stock, 6 sun-dried tomatoes, some fresh basil, salt and pepper, and optional vegan parmesan.

All you need is 3 bananas (very brown and spotty!), 2 and 1/2 cups of rolled oats, 1/2 cup of coconut sugar, 1/4 cup of nut or seed butter, 2tbsp of ground flax or ground chia seeds + 6 tbsp water, 2 tsp baking powder, 1 tsp baking soda, 2 tsp apple cider vinegar, 1 tsp vanilla extract, 1/2 tsp salt.
To make it you would need to preheat the oven to 180C. Combine the ground flax or ground chia seeds with 6 tbsp water to form an “egg”, then stir it and set aside for 5 to 10 minutes. Add 2 cups of rolled oats into a blender and blend until they form a fine flour. Place this flour into a medium-sized bowl and add the baking powder, baking soda, the remaining 1/2 cup of rolled oats and salt. Mix well and set aside.
Mash the ripe bananas in a large bowl with a fork until they form a runny texture, then add the nut butter, coconut sugar, apple cider vinegar, vanilla extract, and flax or chia egg to the bowl, and mix well.
Slowly mix the dry mixture into the wet and stir well. Pour the batter into a baking paper-lined pan, and smooth the top with a spatula. Bake at 180C for an hour or until the top is golden brown. Rome from the oven and let cool for 10 minutes.

6. Super Easy Vegan Meatballs

All you need is canned or cooked kidney beans, garlic, onion, dried oregano and basil, tomato paste, soy sauce, rolled oats, sunflower seeds, salt and black pepper.
Rinse and drain the kidney beans and mash them well in a bowl with a fork. In a medium pan, heat some oil and saute the onions for 3 minutes, then add the minced garlic and cook for another minute. Process the sunflower seeds in a food processor until they are finely done. Add the onion and garlic to the mashed beans, season with the spices, add the tomato paste, the soy sauce, the ground sunflower seeds and the oats. Season again.
Mix everything with your hands and form the vegan meatballs. Preheat the oven to 180C and bake the meatballs for about 15 minutes. Carefully turn them halfway through baking.

First, preheat oven to 190C. In a mixing bowl, cream together vegan margarine and sugar until combined and fluffy. Add non-dairy milk and vanilla and mix again. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt.
Add the dry ingredients to the wet and stir to form a dough. Stir in the chocolate chips too. Use a large spoon to roll 1-2 tbsp size balls of dough. Space evenly on a baking sheet and bake in a preheated oven for about 10 minutes.
