10 Vegan Recipes On A Student Budget

Finding vegan recipes on a student budget can be hard. But contrary to popular opinion, you can eat healthy, affordable, vegan food as a student! Don’t be put off from “free from” and vegan food because you think it is too expensive for a student budget. Of course aspects to any diet can vary in price, but here are 10 easy, affordable, and most importantly tasty vegan meals to try on a student budget. Included are main meals, snacks and sweet treats! All of which are mainly plant based which contribute to that desirable low cost. I also like all of these recipes because of their experimental opportunity and adaptability. These are all accessible online, why not give these vegan recipes a try?

1. Breakfast of Champs

Mornings just got a whole lot better with this recipe from AmbitiousKitchen. These vegan pancakes are a game changer. They are also so simple! I love pairing these with vegan chocolate / chocolate ice-cream because it really compliments the banana.

2. Anarchy Cauliflower Pizza

Blasphemer! How dare you meddle with god’s most precious creation. Yeah I was skeptical too but this was so much better than I actually thought it was going to be! The recipe is purely vegetable based, so it is nice and cheap. I also really like this recipe because its very adaptable to your own preferences. For example, this specific recipe is aimed at a gluten free audience so does suggest using cheese – but I adapted it for a vegan diet by using no/vegan cheese. Find the recipe on GoodFood.

3. Sweet and Spice and Aubergine Nice

Having recently become a huge fan of aubergine I was so happy to discover this recipe on AmuseYourBouche. It’s sticky, it’s sweet, it’s spicy, it’s so damn good. I usually pair this dish with sushi/normal rice if I want a more filling meal. This simple vegan recipe is perfect for a student budget because of it’s minimalist ingredients.

4. Spiral(ize) Out of This World Courgetti

I have really been enjoying the new invention that is “courgetti” (courgette spiralized to replace spaghetti). This WallFlowerKitchen bolognese recipe is surprisingly hearty, and a nice alternative to tofu if you aren’t that keen on meat replacement products. The use of vegetables is also a more affordable option.

5. Boujee Brownies on a Budget

These AllRecipes brownies are so good and gooey. It is hard to believe they don’t have any dairy products in them! These are really quick to make too. Batches of brownies are a perfect pudding for sharing in a student house.

6. Winging It

So I have never been a huge cauliflower fan, but when I tried this recipe I was blown away. I think these are one of the best vegan recipes for wings, something I never considered being able to replicate in a vegan diet. A little slice of heaven from a VeganHeaven recipe.

7. Crumble goodness

ThePetiteCook comes through with one of my favourite desserts. This vegan crumble really surprised me with its crunch that went perfectly alongside the sweet apple and berry underneath. Again perfect for sharing in a student house, and affordable on a student budget.

8. Go Nuts!

Okay so bare with me, this recipe is for a pork curry. BUT I substituted out the pork and used my favourite veggies instead. I love love love this affordable GoodFood curry recipe. Plus its so simple you could whip it up for anyone and they will be seriously impressed, the flavours rock.

9. The Holy Grille

This literally Tasty recipe is slightly more challenging but really fun to give it a go! If like me you like to experiment in the kitchen rather than just using replacements, like vegan cheese, this recipe is the one for you. The classic cheese toastie. Except, you make the cheese… out of vegetables! Trust me, its worth a try. Plus you can try using this cheese recipe in so many other dishes. There is even have a helpful step by step video, check it out here:

10. How Could We Forget, Burgers!

This is one of the most minimalist vegan burger recipes that I have used, perfect on a student budget. Who else would it be by then of course but the MinimalistBaker. Burgers are a fantastic meal because they are so adaptable and you can style them to your exact taste. With this yummy vegan patty in the middle you can’t go wrong!
