Vegan-Friendly Autumn Desserts You Can Make At Home

Fall is full of tasty desserts from the gooey apple crisps to the rich pumpkin pie. There seems to be an endless array of dishes to choose from, this is if you’re not vegan. Being non-dairy and egg-free, it can sometimes be hard to create vegan treats that actually taste good. However, there is no need to fret, because there are actually more delectable options out there for vegans than one may think. Here are some vegan-friendly dessert ideas you should consider this fall!

Vegan Molasses Cookies

Ingredients: 2 cups all-purpose flour, 2 1/2 teaspoons baking soda, 1 1/2 teaspoons ground cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon ground cardamom, 1/2 cup vegan butter (melted) 2/3 cup dark brown sugar, 1/2 cup blackstrap or fancy molasses, 1/2 teaspoon pure vanilla extract, raw sugar 

Directions: Preheat oven to 350F. In a medium bowl, combine flour, baking soda, cinnamon, ginger, and cardamom. Mix well. In a larger bowl, whisk together melted butter, brown sugar, molasses, and vanilla. Stir the dry ingredients into the wet ingredients until just combined. Wrap tightly in plastic wrap and refrigerate for 30 minutes. Put the sugar into a bowl. Mold the dough into balls, and press the pieces into the sugar. Place cookies on a baking sheet lined with parchment paper, leaving room between cookies. Bake for 15 minutes. Allow to cool for 30 minutes. When done cooling, these cookies will be hard to resist!

Fudgy Vegan Walnut Brownies

Chocolate cravings? These brownies are a vegan’s chocolate dream!

Ingredients: 1/4 cup natural, unsalted creamy almond butter, 1/2 cup coconut sugar, 1/3 cup pure maple syrup, 1/4 cup, and 2 tablespoons melted coconut oil, 3/4 cup unsweetened cocoa powder, 2 flax eggs, 1 teaspoon pure vanilla extract, 1/4 teaspoon salt, 1/4 cup and 2 tablespoons gluten-free oat flour 

Directions: Preheat oven to 325°F. Line an 8-inch square baking pan with greased foil and place aside for cooking purposes for the dish. In a medium bowl, mix together almond butter, coconut sugar, maple syrup, and melted coconut oil. Whisk until it resembles a caramel base and once it does, add in cocoa powder (1/4 at a time), continuing to whisk. Mix in flax eggs, vanilla and salt and add oat flour. Using a spatula mix in walnuts and chocolate chips. Pour batter into pan. Bake for 30 minutes. Cool for 1 hour and then cut into square chunks. These brownies are full of chocolatey and chewy delight, so it might be hard to just have one at a time!

Vegan Maple Orange-Sesame Bites

Sometimes you just want a little bite-size treat? And this dessert provides just enough to satisfy those cravings!

Ingredients: 1/2 cup raw  sesame seeds, 2/3 cup almond pulp almond milk, 3/4 teaspoon fresh ground cardamom seed, 1/2 teaspoon vanilla extract, 1 teaspoon orange zest, 1/4 cup maple syrup, 1 tablespoon melted coconut oil, pinch sea salt

Directions: Grind all the ingredients into a rough dough in your food processor or strong blender. Mold the dough into balls with a spoon or by hand, and roll in more sesame seeds to get that crispy coating. Allow the treats to sit in the fridge four about an hour and serve. This maple treat will give you all the fall feels!

Swedish Apple Pie

Who says vegans can’t enjoy apple pie?

Ingredients: 4 cups firm baking apples, 2 teaspoons ground cinnamon, 3/4 teaspoon ground cardamom, 1 tablespoon raw sugar or granulated sugar, 9 tablespoons coconut oil (melted), 1/2 cup raw sugar, 1/4 cup maple syrup, 1 1/2 tablespoons vanilla extract, 1 1/4 cups rolled oats, 3/4 cup and 1 1/2 tablespoons oat flour , 1/2 teaspoon baking powder, 1/4 teaspoon salt

Directions: Preheat the oven to 350 °F and grease a pie pan. In a large mixing bowl, stir together the apple chunks, cinnamon, cardamom, and sugar. In another large mixing bowl, stir together the melted coconut oil, sugar, maple syrup, and vanilla extract. Add the oats, oat flour, baking powder, and salt and stir just until combined. Spread the apples evenly over the bottom of the prepared pie pan. Spread the topping over the apples. Bake for 45 minutes. Let cool for about an hour, and then cut yourself a slice. This pie will warm you right up!

Vegan Mini Pumpkin Pie Cheesecakes

Pumpkin pie? Cheesecake? Sign me up! 

Ingredients: 15 vegan ginger snap cookies, 1 cup raw cashews1 cup canned pumpkin puree, 1 ripe banana, 1/3 cup agave, 2 tablespoons. lemon juice, 2 teaspoons. vanilla extract, 2 teaspoons cinnamon, 1/4 tsp. nutmeg, 1/4 teaspoons salt, pecans

Directions: Preheat oven to 300°. Line 15 muffin cups with papers and stick a ginger snap cookie in the bottom of each cup Place cashews in the food processor bowl. Blend until smooth, stopping to scrape downsides of the bowl as needed. Add pumpkin, banana, agave, lemon juice, vanilla, cinnamon, nutmeg and salt to the food processor bowl. Blend again until the mixture is smooth. Distribute the batter among muffin cups. Bake 20 minutes. Once these are out of the oven, and the cheesecakes are still warm and moldable, place pecans on top. Let chill in the fridge for 3 hours. And once you’re done you will have yourself a plate full of delicious cheesecakes. It will be hard to just have one!

Vegan Chocolate Turtle Apple Slices

Ingredients: apples, 3 1/2 cups vegan baking chocolate1 tablespoon coconut oil, 1 cup vegan caramel melts, chopped pecans, popsicle sticks

Apples are best served the first day of being sliced so eat up! 

Vegan Pear Oatmeal Bars

Ingredients: 2 1/2 cups rolled oats,  2 teaspoons cinnamon, 1/2 teaspoon salt, 2 cups chopped pears, 1 1/2 tablespoons date puree, 1 cup milk, 1/2 cup water, 1 teaspoon vanilla, butter or coconut oil to grease a baking dish

Directions: Combine oats, cinnamon, salt, baking soda in a large bowl; these are your dry ingredients. Chop the pears and place in blender or food processor with the date puree. Blend until the mixture resembles thick sauce texture. Add the milk, water, and vanilla to the blender/processor, until wet ingredients are fully mixed. Combine these ingredients with the dry ingredients you mixed previously, and blend the two well. Pour the mixture in the greased baking pan. Bake on 375ºF for 25 minutes. Let the batch cool, and then slice into rectangle or square pieces. This dessert works perfectly as a little on-the-go snack or as a dessert after a hearty fall meal!
