10 Vegan Foods That Actually Taste Good

Eating vegan sometimes sounds like a struggle, but that’s only because it can be hard to figure out what vegan foods out there are actually delicious. It can take some time to search for those tasty meal options, but the flavors are sooo worth it. To save you the trouble, here are 10 Vegan Foods that actually taste good!

1) Mushroom Quinoa Burgers

Basic ingredients:

  • Portobello mushroom caps
  • Quinoa
  • Whole-grain buns
  • Sprouts/greens
  • Tomatoes
  • Mayonnaise
  • Chopped rosemary

First, create the “burger” patties with mushroom and quinoa. This takes some time, but the results are worth the effort. Put the finished burgers on whole wheat buns, spread chilled rosemary mayo on top, garnish with sprouts and tomato, and serve!

2) Pesto Pasta

  • Spaghetti or zucchini noodles
  • Corn
  • Yellow Squash
  • Zucchini
  • Pesto
  • Grape Tomatoes

No matter what time of year, this summer pesto pasta will always be a hit. Cook the spaghetti per instructions, grill and mix the veggies, combine all with pesto, and you have one of the tastiest and easiest vegan foods!

3) Grilled Asparagus and Shiitake Mushroom Tacos

  • Shiitake mushrooms
  • Corn tortillas
  • Asparagus
  • Guacamole

Combine ingredients and grill in pan. Fill tortillas and drizzle with hot sauce and lime juice. Perfect for lunch or dinner, and great for sharing with friends.

4) White Bean & Mushroom “Meatball” Subs

  • Button mushrooms
  • White beans
  • Bread crumbs
  • Sub rolls
  • Marinara sauce
  • Chopped chard

Prepare and bake “meatballs” with mushrooms and white beans. Cook chard in skillet and set aside. Heat marinara, adding baked “meatballs.” Fill toasted sub rolls with the “meatballs” and chard and serve with your favorite vegan side!

5) Mexican bean rice

  • Red, green, and yellow peppers
  • Wholegrain brown rice
  • Tomato puree
  • Cannellini, kidney, and black beans
  • Sweet corn
  • Veggie stock

Fry peppers, then add in rice. Once cooked, add tomato puree. After a couple of minutes, add veggie stock, corn, and beans. Wait for the rice to be fully cooked, and you have a simple, tasty vegan food!

6) Vegan Sushi

  • Sushi rice
  • Seaweed sheets (nori)
  • Sweet corn
  • Poppy or Chia seeds
  • Red and yellow pepper
  • Carrot
  • Spinach

Everyone loves sushi, and this is a great way to make it vegan! Cook sushi rice, adding chia and poppy seeds. Lay out nori on a sushi rolling mat, spread rice over it, and fill with the rest of the ingredients. Roll the sushi slowly, wetting the exposed nori to stick. Wrap in cling wrap to cool in the fridge for a few minutes, take it out, cut it, and create a spread with ginger, wasabe, and soy sauce for you and your friends!

7) Garlic Quinoa Garbonzo Salad

  • Quinoa
  • Garbanzo beans
  • Broccoli
  • Garlic
  • Lemon juice
  • Coarse-grain mustard

Okay, this might be the easiest of all the vegan foods here, but it isn’t any less delicious! Boil quinoa until tender, then mix in bowl with rest of ingredients. Season to taste and you’re good to eat!

8) Chickpea Curry

  • Garbanzo beans
  • Ginger root
  • Cinnamon
  • Cumin
  • Garlic and onion
  • Cayenne pepper
  • Coriander

Start by frying the onions util tender, then add in the rest of the spices. Stir for one minute, then add in garbanzo beans. Cook util well blended and fully heated. Garnish with cilantro and serve.

9) Blueberry Cornmeal Pancakes

  • Soy milk
  • Whole-wheat flour
  • Ground cornmeal
  • Baking powder
  • Baking soda
  • Fresh blueberries

How about something sweet for a change of pace? Pancakes are a breakfast staple, but if you’re feeling breakfast for lunch or dinner, nobody is judging. They’re a great addition to these vegan foods! Combine dry ingredients in a bowl, stirring in soy milk until mixed. Fold in the blueberries, heat on the griddle until golden, drizzle with syrup and dig in.

10) Chickpea Mushroom Stuffed Zucchini

  • Halved zucchini
  • Button mushrooms
  • Chickpeas
  • Lemon juice
  • Garlic and onion

Scoop out the flesh of the zucchini, then chop and fry the flesh in a pan with the mushrooms and other ingredients. Spoon the mixture into the zucchini shells, bake for 30 to 40 minutes, and serve hot!
