The Best Brunch Recipes That Will Have You Coming Back For More
Hosting Brunch? Or simply want a nice brunch for yourself to get the day started right? Here are some recipes that you will come back to time and time again because they are just so good.
1. Avocado on Toast
Avocado on Toast is a staple brunch meal and there’s a reason for that. There are so many variations of it and you can dress it up and dress it down as you like. I like mine with some feta and red onion but how you have it is entirely up to you. This recipe is just one version of a brunching classic that you can make yourself but most breakfast places and cafes will serve something similar.
2. Spicy Baked Eggs with Tomato and Chickpeas
This one is so easy and mess free. It’s all in one pan and it is all delicious – there is a fiery kick in this recipe to pick you up in the morning. Fry off some garlic and thyme, add chickpeas and harissa paste, stir, add passata, crack in some eggs and hey presto. A tasty brunch item that requires minimal effort but gives you maximum flavour.
3. Mushrooms with Garlic and Pesto
Mushrooms are a great addition to a meal, no matter the time of day. Mushrooms on toast are incredible as is but the addition of garlic and pesto adds so much substance to it. Grill the mushrooms with some garlic until softened whilst you toast some crusty bread and lather it in pesto. Such a simple twist but it makes the dish. I reckon this would be great with some fresh sourdough and chestnut mushrooms too!
4. French Toast Sticks
This dish is sure to sweeten up your brunch and are such an adorable twist on a classic brunch item. All you have to do is cut bread into strips and you have these handy cinnamon sticks that can be served syrup (which would be great for dipping) or with some fresh fruit if you do not like too much sweetness.
5. Banana Bread Granola
Granola is thought to be quite complicated to make but this recipe is super simple. You get the great smell of baking banana bread without actually having to do so. Who knew combining some oats, spices, overripe bananas and baking could make such a tasty brunch recipe. Served with some yoghurt and fresh slices of banana would finish this off perfectly.
6. Breakfast Muffins
Similarly to Avocado on Toast, you can do as you please with breakfast muffins but this particular recipe is quite decadent. They include a slice of salmon and a mini frittata within a toasted muffin, there is quite a lot of assembling required but if you prepared each item individually and laid out filling like a buffet then guests could assemble their own muffin with fillings of their choice. Because of the numerous options, you are sure to use this recipe time and time again.
7. Forest Fruit Smoothie
If all the goodness of the main dishes is not enough, you can always indulge in this forest fruits smoothie as well – this was you are almost definitely getting your five a day and having a great brunch. Again, smoothies have so many variations and you do not have to follow this recipe alone, there are so many out there and you can even make it vegan if you use alternative milk – oat is my favourite!
