8 Super Quick Desserts For When You’re Lazy

You’re feeling peckish, the crave is obvious – you want something sweet. But what do you do if you want to stay healthy or you just can’t be bothered to go into full chef mode and spend ages in the kitchen? I’ll tell you what to do, just keep on reading. We’ve picked a few of the easiest and quickest desserts for you, so you don’t have to bother with cooking something for a long time next time you crave sweetness. And the first one is…

Strawberry yoghurt

No, I don’t mean just buy a pot of strawberry yoghurt, obviously, but what you’ll need is a pot of normal Greek yoghurt, some strawberries and some chocolate sauce. Chop the strawberries, pour the yoghurt over them and just add some chocolate sauce (or lots of it, if you feel like it). Then enjoy! Can’t feel THAT guilty about the chocolate when the other two ingredients are so healthy, am I right?

The quickest tiramisu ever

If you’re craving some tiramisu really bad I urge you not to go to the shop immediately but instead to just spend 15 minutes making this homemade one that you’ll definitely enjoy more. You’ll need 3 tbsp instant coffee granules, 3 tbsp coffee liqueur, 250gr mascarpone, 85gr condensed milk, 5 sponge fingers and a tablespoon of cocoa powder.

Mix the coffee with 2 tbsp boiling water in a jug, add the liqueur and 75ml cold water, then set aside. To make the cream you’ll have to beat the condensed milk and the mascarpone with a whisk until the mix becomes thick and smooth. Finally, break the sponge fingers into two pieces each and soak them in the coffee mixture, but only for a few seconds! After, put a few pieces of the sponge in the bottom of two wine glasses, top with the cream and sift over the cocoa. If you are able to be a little bit patient let it cool for at least 45 minutes.

Mango pudding

One of the great fruity quick desserts, the mango pudding takes less than 5 minutes and is tasty AF. You’ll need a mango (duh), 6 scoops of vanilla ice cream, 2 tbsp of thick cream and 2-3 passion fruits (you can switch those for something else if you don’t have any passion fruits around).

Firstly, peel the mango off and whizz it to a puree form. Add the vanilla ice cream and the cream and whizz the mixture again. All you have to do then is to put it in bowls and add the passion fruit bits. Enjoy!

Frozen blackberry yoghurt

Another of our quick desserts, for this pudding you’ll simply need 200gr blackberries, 40gr sugar, 300gr Greek yoghurt, 50ml honey and 100ml milk.

Put the blackberries and the sugar in a bowl together and leave them until the fruit starts to break down, then mash them together. In another bowl, pour the Greek yoghurt and mix it with the honey, add the blackberries and put the whole mix into a container and put it in the freezer. Wait for two hours and then enjoy your homemade blackberry yoghurt ice cream.

Lemon curd and yoghurt fool

This is another of our very quick desserts to make and to prepare it you’ll need a 300gr jar lemon curd, 500gr Greek yoghurt, 200gr punnet raspberry, 1 tbsp icing sugar and some shortbread to serve.

Put the lemon curd and the yoghurt into a bowl and fold together to get that rippled effect. Divide the mix between four glasses and leave to chill. Then, mix the raspberries and the icing sugar together and crush gently, then spoon with their juices over the chilled mix, then serve!
