As the hot weather approaches, we will be looking forward to lighter, more refreshing salad recipes for summer. Say goodbye to those hearty, warming stews and casseroles, and say hello to summer barbecues with delicious side dishes. Three very versatile ingredients are summer corn, tomatoes and feta, so here are some ideas as to how to combine these to create some delicious main and side dishes.
If you love a good barbecue, this will act as the perfect side dish. A colourful mixture of grilled corn, feta cheese, tomatoes and basil, it’s super easy to make and will certainly leave you drooling for more. The best part – if there’s any leftover (highly unlikely, but you never know), this is one of the few salad recipes for summer which keeps well for lunch the next day! If you don’t fancy spending time cooking your corn, you can just as easily take it off the cob raw. You could use these ingredients as the basis of a salad and bulk it up using a variety of different cooked beans, such as chickpeas, black beans, red beans, or even use olives instead. If you want to spice your dish up even more, you could add a dash or two of chilli, or some chilli flakes.
