8 Healthy Microwave Meals For When You’re Feeling Lazy
Everyone has those lazy days where you just can’t even think about trying to cook up a delicious meal; you’re tired, you’ve got work to do or just want to curl up on the sofa and watch F.R.I.E.N.D.S on netflix. So here are 8 healthy microwave meals that you can whip up in a microwave for when that lazy feeling hits you.
1. Omelette in a mug
Now everyone always has eggs in their fridge and breakfast is always an acceptable meal morning and night. Just whisk a couple of eggs in a mug, add a dash of milk and any veggies you might have left over, bang it in the microwave and you’be got a quick healthy dinner.
2. Jacket Potato
Who doesn’t love a jacket potato? Instead of having them baking in the oven for nearly an hour, a quick ten minutes in the microwave does the trick and you can fill them with a variety of toppings. A tuna and sweetcorn mix is quick, simple and healthy. What more could you ask for?
3. Mac n Cheese
You don’t get a more comforting meal than macaroni and cheese, and you can easily make this without putting in too much effort and still get a filling and tasty meal. Just add macaroni, water and your own blend of cheese (be as imaginative as you want!)
4. Burrito bowl
This is a quick and easy recipe you can easily make in the microwave. All you need is microwaveable rice, and anything you fancy adding to it. Think beans, sweetcorn, avocado; basically clean your cupboard out of any leftovers and you’ve got yourself a delicious meal.
5. Poached eggs
Who doesn’t love a poached egg? But with so many elements to it (the hot water, the cracking the egg at the right moment, the vinegar) there’s a lot that can go wrong. But with a quick zap in the microwave you can have some easy poached eggs. Just have them on brown toast and you’ve got a quick and easy breakfast.
6. Baked oatmeal
Now this is a quick and easy breakfast to make. The best thing about it is that you can add so many different ingredients, whether you fancy banana, strawberries or even some chocolate chips if you fancy that sweet treat.
7. Oatmeal cookie dough
When you fancy a dessert that doesn’t come in the form of an ice cream tub, you can always turn to the microwave to give you that simple and sweet dessert. Use coconut flour instead of regular flour and it’s gluten free. Paired with some egg whites, oats and chocolate chips and you’ve got yourself a healthy and fast dessert using just the microwave.
8. Blueberry Pancakes
Who doesn’t love a pancake for breakfast? But we all know they aren’t the healthiest. So this 2 minute recipe is the healthy combination of a quick and healthy microwave meal. With a simple pancake mix using buckwheat flour, add some frozen fruit and you’ve got some delicious and healthy microwave pancakes.
