We all know the feeling of being starving and craving a delicious meal but not having the energy to prep and cook it. Sometimes beans on toast or a packet of noodles won’t cut it, therefore we’ve made this list of 5 go to meals for when you’re feeling beyond lazy so that you can be chill and satisfied.
A supreme classic among our go to meals. Mac and cheese. Cheesy, gooey, creamy and oh-so-delicious. Did you know it even has its own holiday? July 14th in case you were wondering! It’s one of the most popular comfort foods worldwide and can be made in a variety of simple ways. Oven, stove or even microwave. Here we have a basic oven way but can always be made more exciting by adding extras, like bacon or chicken. Simply cook the macaroni, make the cheese sauce and mix them together before placing in the oven. Takes no longer than twenty minutes!
Quick, easy and on the table in less than 30 minutes. Perfect! Knowing how to make stir-fry at home will save you when you’re tired and can’t spend any more than the absolute minimum amount of energy on dinner. Even more amazing is that it’s highly customisable, so you only have to include vegetables and meats you like and can make it purely vegetarian if you desire. In order to shorten prep time, you can buy ready prepped vegetables at the supermarket. Just chuck everything into a wok or frying pan and fry on a medium heat for five minutes.
A quirky spin on a classic chilli, this fast and filling dish is great served with rice or piled high onto a baked/jacket potato and dolloped with sour cream. You could be even more cheeky and serve it on nachos. Delicious! Dry-fry the chorizo for a few mins in a non-stick frying pan until crisp. Carefully pour off any fat from the pan, then tip in the sauce and beans with 100ml water. Bring to a simmer, cover, then lower the heat and bubble for 10 mins. Spoon over something of your choice and serve.
Simple cooking, but packed with tons of scrumptious Mexican flavour. Perfect to make when you have leftover chicken. Spread 2 tbsp salsa onto each tortilla, then evenly top one of them with the beans, spring onion, chicken and cheddar. Scatter with coriander, if you have it. Sandwich with the other tortilla, then brush with oil. Heat a large non-stick frying pan, then cook the tortilla, oil-side down, for 4 mins. Carefully turn over with a palette knife (or by turning it out onto a plate, sliding it back into the pan), then cook for 2 mins on the other side until golden. Serve cut into wedges or a half moon shape.
For everyone with a sweet tooth, this will be the perfect naughty dinner for you. When I found out it was possible to make a chocolate brownie in one pot in the microwave, I thought I was doomed. But something that tastes that good can’t be that bad, right? Add the dry ingredients to the mug and stir. Place flour, sugar, cocoa, salt, and cinnamon in a microwave-safe ceramic mug. Stir with a fork or spoon to mix well and break up any clumps. Add the wet ingredients and stir. Then add the oil, water, and vanilla to the cup and stir until the mixture is smooth and there are no lumps. Place in microwave and heat for about 1 minute and 40 seconds until the mixture is cooked through. Serve with ice cream, cream or custard.
