As we’ve discussed a few times already, fresh salads are a gift sent from heaven. Whether they’re fruit salads or veggie salads, they’re the ideal summer dish because not only are they so damn easy to make, but also incredibly healthy. Imagine a salad full of watermelon or cucumbers, you would get the optimal quantity of water just from eating those salads every day because they’re full of water themselves! So, pens and papers ready, make sure you remember our ideas because they’re simply awesome.
For our first exotic salad, you will need 425 grams of lychees in syrup, 2 stems lemongrass (tip: halved and bashed with a rolling pin), 85 grams golden caster sugar, two 425 gr cans of fresh mixed tropical fruit, 100 grams of seedless red grape and 6 macaroons (try not to eat those beforehand).
What you’ll have to do is simply drain the juice of the lychee into a pan and meanwhile put the lychees in a large bowl. Then, add the lemongrass and sugar to the pan, heat until the sugar dissolves and then boil for a minute. Turn off the heat and set it aside. After, strain the syrup over the lychees and tip in the fruits. Finally, you can serve it with the macaroons and you’re done!
This is one insanely easy fruit salad that will satisfy the lazy ones of us who cannot be bothered to spend more than 15 minutes in the kitchen. You’ll need 1 tbsp chopped mixed nuts (or any kind of nuts you prefer), 1 tbsp sunflower seed, 1 tbsp pumpkin seed, 1 sliced banana, 1-2 cups of berries (fresh or frozen), 200 grams of vanilla yoghurt.
All you have to do is mix everything, layer it up in a bowl and eat it. It’s literally that easy!
What’s good about this salad is that, similar to the previous one, it’s very easy to make. And, good news, you can also add vodka to it, if you’d like! Let’s dive into this recipe. Prepare 200 ml cranberry juice, 1 tbsp caster sugar, 1 large ripe mango, 150 punnet raspberries, and some vanilla ice cream to serve the salad with.
In a small pan heat the cranberry juice and the sugar to a rolling boil, then remove them from the heat and let them cool. Then, peel and slice the mango in thin pieces. Pour them in a large bowl, along with the raspberries. Afterward, pour the cranberry syrup over the fruit and serve the bowls with some ice cream.
This delicious orange fresh platter is, again, extremely easy to make! You will need some soft butter, 50 grams of shelled pistachio nuts, 1 tbsp caster sugar, 6 large peeled oranges, 200 grams of thick Greek yoghurt.
Firstly, heat the butter in a large pan, then add the pistachio nuts and cook for a few minutes. Remember to shake the pan so they don’t burn! Sprinkle the sugar over the nuts and stir until it’s completely dissolved. Turn the heat off and leave them to cool down.
Cut each orange into slices. Arrange them on a big plate and serve with the pistachios scattered over and the yoghurt on top! Voila.
This is one of those really fresh salads to cool you down when you’re boiling. As the name suggests, you’ll need 4 oranges, a few mint leaves, chopped into small pieces, 1 tbsp rose syrup and 12 soft dates, sliced lengthways.
Peel the oranges and remove their white bits. Place them in a bowl, then add the dates, the chopped mind leaves, and the rose syrup. Toss them gently. Pour them in four bowls and serve!
If you’ve never had the blue cheese and peach combination, now’s the time to try it! The ingredients are 2 tbsp olive oil, 1 tbsp honey, the juice of one lemon, 1 bag of mixed salad leaves, a few mint leaves, 4 peaches (slice them into 8 pieces each) and 140 grams of blue cheese cut into chunks.
Firstly, make the salad dressing by mixing together the oil, honey and lemon juice. Add any seasoning to your taste. Then, mix the rest of ingredients together in a bowl and toss them with the dressing before serving.
This is definitely one of the fresh salad ideas on this list! You’ll need one round slice of watermelon, 120 grams of pineapple pieces, 1 tbsp coconut flakes, half a lime, 1 tbsp honey, and a few basil leaves.
Cut the watermelon slice as you would cut pizza and place it in a plate. Scatter the pineapple slices over the watermelon, as well as a few of the basil leaves and the coconut flakes. Then, mix the juice of the lime with the honey and sprinkle it on top. Enjoy the ”pizza”!
The last of our fresh salads today features mango again. You will need 3 mangoes, sliced. 2 tbsp sugar, 2 limes, and vanilla ice cream. Arrange the mango slices on a plate, then mix the sugar and the lime juice and whisk until it turns greenish. Sprinkle it over the mango pieces and serve with the ice cream.
