You’ll need:

1 carrot, 2 bulbs of white radish, 2 sweet potatoes, 2 potatoes, 3 stalks of lemongrass, 2 corns, 1 small piece of sugar cane, cilantro, salad of your choice.

First, for this easy vegan recipe, you need to peel the skin, cut every vegetable in the bite-size as you prefer and then wash. This is just for reference if you don’t know how: for carrot, radish, and potatoes, you can cut them diagonally in thin slices; you can cut a bigger slide for corn and cut the sugar cane into half.

For the vegan recipe, because we don’t use the bone to cook, so we need to boil the vegetable to get the amazing soup base. You need to put sugar cane, corn, radish, carrot, and lemongrass into boil first after that is sweet potatoes and potatoes. Seasoning with a little bit of salt until you like. In a frying pan, fry some green onion’s white root until fragrance then pours the luffa in. When luffa is almost done put the enoki in and sautee it until it’s done. Remember to season it with some seasoning powder, or if you don’t have it, soy sauce is another great choice. Serve it with rice or you can just eat it like that!

Mashed Avocado With Mushroom

You’ll need:

White cup mushroom, avocado, salt, mix herb, lime/lemon, pepper, bread

How to prepare:

Mash the avocado and mix it with lime/lemon juice, salt, and pepper. The smashed avocado is perfect when you can slightly taste the taste of lemon juice. Sauteed mushroom in a pan with vegetable oil and salt, wait until it turns into a golden brown color, by then you can put some mixed herb in, give it a quick stir and now it’s done.

Fried Tofu With Lemongrass

Orange cut into a small cube, baby tomato cut into half. Sautee the white cup mushroom and deep fry the enoki. Put spinach, rocket in a bowl, put some baby tomato and orange on top, season it with some salt, pepper and a bit of lemon juice, you don’t need salad dressing for this. After that don’t forget our delicious white cup mushroom, finish up with fried enoki on top, don’t forget to put some salt on it. And now it’s done!

Veggie Spring Roll

You’ll need:

Taro, carrot, fungus mushroom, minced shallot, salt, sugar, pepper, spring roll skin.

How to prepare this super easy vegan recipe:

Mince everything and put it in a bowl, mix them with salt, sugar, and pepper, the ratio is 1-1-1. The rolling is the tricky part, but it’s not that hard: lay the skin down with the pointed edge facing toward you, put the filling in the middle in the rectangle shape, fold the bottom up to recreate a triangle shape, and then both side in, then you can start rolling. Deep fry until it turns to a golden brown.

Serve it with sweet and sour chili sauce.
