Let’s say it, early morning class blows. You have to wake up before the sun, get yourself together, walk over to campus and sit there while your prof goes on and on for what seems like an eternity. Yes, of course there are the occasional benefits like, if you are fortunate enough to have that as your only class for the day the yippee my friend, you are all done for the day! One of the hardest parts of early class though, especially in the dark, frigid cold winter, if getting out of that nasty sluggish feeling. It’s hard, you feel tired, lazy and like the only place that can keep you safe if under your covers. Chances are you feel this way from the lack of nutrients flowing through your body as your on-the-go so early because let’s face it, it’s tough making yourself a decent breakfast when your scrambling for time so here are a few on-the-go healthy breakfast recipes that will get you through those morning classes.
This recipe is super easy, pretty quick to assemble and darn delicious if I do say so myself. To make a perfect mason jar breakfast parfait, grab yourself a few of the large tubs of your favourite yogurt from the grocery store, whatever fruit you like and you can even throw in some nuts, seeds or protein powder for a few extra grams of protein to really get you through the morning. This recipe is so great and the combinations are literally endless so it’s safe to say these mason jar breakfast parfaits can power you through a whole semesters worth of early morning classes.
If you have never tried overnight oats, now is the time to do so, it will likely change your breakfast life forever. They are incredibly easy to create the night ahead of an early morning class, and like the parfait, the flavour combos are endless. Pop your mason jar into the cafeteria microwave on break and enjoy during class. Watch out, you might have the whole class jealous!
For my savoury breakfast lovers, these freezer-friendly breakfast burritos are calling your name. A little more time consuming but so worth it and can be made in bulk so really, you could have them for an entire semester as long as they are freezer kept. Just wrap in some aluminum foil, toss in the freezer, and grab one when your running out the door. The burrito will thaw enough to microwave before class or on break.
This apple pecan baked oatmeal could fool anyone into thinking it was dessert, it is SO DELICIOUS! Yes, I’ll admit a tad more time consuming as you to have to bake but it’s so great, if you try it once, you’ll probably make it again. Grab a few dorm friends, head to the kitchen and start whipping up your very own breakfast masterpiece. Cut it up into even squares and have for a week’s worth of breakfast!
Another recipe for the savoury breakfast lovers, these Ham and Egg Cups are perfect for you and I’ll definitely be the first to say there undeniably yummy. You will have to bake these ones in a muffin tin but the recipe is quite easy and the results are a fantastic on-the-go breakfast.
Who doesn’t love a good wrap, am I right? Even better, a breakfast wrap. Limitless opportunities, these breakfast wraps can be sweet or savoury. Try a little fruit, almond butter and coconut or maybe some sweet potato, avocado and scrambled tofu. Whatever you chose to do, they are super efficient and will keep you energized all through morning class, just in time for lunch!
