The Tastiest Spring Lunch & Dinner Recipes Everyone Will Love

Dinner recipes play a big part in someone deciding whether or not to cook or order dinner for delivery. Finding recipes that are delicious, relatively easy to make, and don’t break your budget can be tough, especially if also trying to feed some people with a selective palate. Here’s a list of some tasty spring lunch and dinner recipes that everyone will love!

1. Fried Rice with Spring Vegetables and Fried Eggs

This tasty stir fry recipe makes a great lunch or dinner for you and others! With plenty of vegetables and fried eggs, you get a well-balanced meal that’s pretty easy to make. Any cooked rice/grain will work but the recipe says that rice that is completely cooled, as in overnight, would be ideal. Dinner recipes such as these are hearty and tasty meals that the whole family will enjoy! Keep some leftovers for lunch throughout the week and make your coworkers jealous.

2. Creamy Lemon Parmesan Chicken

When dinner recipes look as delicious as this one then you know they have to be great. With relatively easy prep you can make this creamy lemon parmesan chicken in under 45 minutes! After seasoning and searing the chicken you just need to add them and the chicken broth, cream, Parmesan, and lemon into your pan and let it simmer about three to four minutes. Afterward, cook the chicken again on the skillet for about five more minutes and voila you have some delicious parmesan chicken to enjoy for lunch or dinner!

The dinner recipes that utilize pesto correctly always end up with a tasty dish. This spinach pesto pasta with shrimp recipe combines a variety of vegetables with the pasta and shrimp to make a delicious and well-balanced lunch or dinner. This recipe is especially great for showing you how to make your own homemade pesto! Just be careful as it is liable to brown if not covered in plastic wrap. 

4. One-Skillet Steak and Spring Veg with Spicy Mustard

Dinner recipes combining steak, spring veggies, and spicy mustard are a guaranteed home run. This is a relatively easy meal to cook so don’t be intimidated by its fancy appearance. It’s a really well-balanced meal that includes tons of veggies such as many peas and asparagus. Plus you’ll also get a great mini-recipe for tasty spicy mustard! However, if you want less heat on that mustard sauce hen swap out the cayenne for some smoked paprika.

Chicken pot pie dinner recipes are even better when they’re smaller and more delicious! This recipe gives smaller versions of chicken pot pies that keep the flaky and creamy tastes but also add extra veggies and more whole grains! You can eat this on-the-go or enjoy a couple for lunch or dinner! For the prep, the part that takes the longest is allowing the dough to chill for 30 minutes. After that, it’s relatively easy and quick and in the end, they should only take about 25 minutes to cook! You can even freeze them and reheat them for some tasty leftovers! 

6. Pork Stir-Fry with Snow Peas

Stir-fry dinner recipes are a great way to make a lot of great food for either a lot of people or for tons of tasty leftovers! This recipe is pretty easy to follow and makes a great spring lunch or dinner. There are only two or three vegetables used as the base because if there were more it might impact the cooking speed and searing of the total stir-fry. This recipe uses a lean pork tenderloin but mentions how you could substitute out for chicken thighs or thinly sliced flank steak. Also, don’t forget you’ll need to cook the rice beforehand so that’s not factored into the speed at which you can whip up this tasty recipe!

7. Skillet-Roasted Chicken with Farro and Herb Pistou

Some dinner recipes, such as this one, take longer to prepare because you need to marinate the meat the night before. Although tedious this may seem sometimes it really brings great flavor to the meat and to the meal overall! This recipe makes a delicious, and quite attractive, meal that’s loaded with great vitamins and nutrients from the farro with acorn squash and kale in particular. If you’re as curious as I was: Farro is composed of the grains of certain wheat species, and an herb pistou is a combination of herbs that’s been boiled then put in ice water, then chopped up/pureed with some added oil and salt. Impress your friends with this delicious recipe!

8. Spaghetti Quiche

Dinner recipes with unique twists take a lot of creativity but usually result in great dishes! This spaghetti quiche recipe seems a bit off the beating path but it surely delivers in taste. It’s a very straightforward recipe that simply involves making the spaghetti then placing it into your oven skillet or pie dish. Then, making your quiche with the standard eggs, cream, milk, butter and such and finally pouring your quiche mix over the spaghetti “crust.” Bake it for about 35 minutes and then heat broiler for about 5 minutes to cook the remainder of the quiche and get a nice golden color on top. It’s a super creative way to make a delicious and different crust for your quiche!

Dinner recipes that are quick to make and delicious are great options you just don’t know what to do for lunch or dinner. This recipe for broccoli, cheddar, and brown rice cakes make an awesome vegetarian meal that you can refrigerate or freeze for tasty leftovers! It’s a really easy recipe to follow that should take no longer than 30 minutes to prep and cook. These cakes could make a great side to some tomato soup or even with a great dipping sauce.

10. Pork Chops with Tomato-Bacon Gravy

Dinner recipes are especially awesome when they give you mini-recipes for other great food such as this delicious tomato-bacon gravy. This recipe seems simple but a pork chop with the tomato-bacon gravy gives it great new flavors. After preparing the bacon, take the extra bacon grease and use it as the base for your gravy! Add the tomatoes and some salt & pepper to cook for a few minutes then add the beef stock and simmer for about five minutes until it thickens. Chop up your cooked bacon and throw it in your tomato gravy to make a delicious new gravy that you’ll now be making at the next Thanksgiving!
