Gluten Free Zucchini Noodle Carbonara 

I’m sure you’ve heard of gluten free pasta, but why not make your very own gluten free noodles made from zucchini! Trust me, it might seem like a lot of work, but speaking from experience I can confidently say this process is very easy. To make Zucchini noodles all you need is a vegetable peeler or just a knife and cut lengthwise as thin or as thick as you want them! 

What you’ll need for this gluten-free dinner idea

  • 6 medium sized Zucchini
  • 4 Eggs
  • 2 tablespoons Heavy Cream
  • 1/2 cup of Parmesan Cheese
  • 8 Slices of Bacon
  • 4 Garlic Cloves

Instructions

  • You will prepare your noodles and let them sit while you prepare your bacon in a pan
  • In a bowl whisk together your eggs, heavy cream, and parmesan cheese
  • Once your bacon looks done take them out and let them sit and add your garlic to the pan with bacon grease and stir for about 30 seconds.
  • Add your Zucchini noodles to this pan on high heat
  • Turn your stove down to a medium low heat, and add your egg mixture to the zucchini and slowly stir
  • Add your bacon into the pasta and finally top with the Parmesan.

And viola! There you have it a scrumptious gluten free pasta dish, and an easy way to sneak in those veggies!

Sweet Potato Latkes with Asian Dipping Sauce

Latkes are a traditional Jewish Dish usually prepared to celebrate Hanukkah. If you don’t know what a Latke is, the simplest way to describe it is a potato pancake. These sweet potato latkes are a sweet twist on the classic dish and make a perfect gluten-free dinner!

What you’ll need for this gluten-free dinner idea

For latkes:
  • 3 or 4 medium sized potatoes
  • 1/2 medium yellow onion
  • 1 large egg
  • 2 tablespoons of potato starch
  • 1 1/4 teaspoons of salt
  • 1/4 teaspoons ground pepper
  • 1 cup vegetable/canola oil
For dipping sauce
  • 1/4 cup gluten free soy sauce
  • 1/4 cup of rise wine vinegar
  • 1 tablespoon of honey/ dark brown sugar
  • 1 clove of garlic (minced)
  • 1 tablespoon of minced fresh ginger
  • 1 teaspoon of sesame seeds
  • 1 teaspoon of sesame oil
  • 1/4 teaspoon of crushed red pepper flakes 
  • 1 scallion (chopped)

Instructions

  • peel and shred potatoes 
  • shred onions 
  • dry off potatoes and onions to get rid of excess liquid
  • place the mixture into a bowl and add egg, potato starch, salt, and pepper. Mix until well combined
  • heat oil on stove over medium high heat. To test when oil is ready, drop a small piece of the potato mixture into it, if it starts to sizzle it’s ready
  • Lower the heat to prevent oil from splattering. Then scoop 1/4 cup of the mixture and press it.
  • Place into pan and cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until golden brown. 
  • Drain Latkes on a paper towel or baking sheet
  • Mix dipping sauce ingredients in a medium bowl and sere alongside latkes

  • 2 cups of shredded cooked chicken 
  • 1/2 cup of gluten free barbecue sauce
  • 4 Schär ciabatta rolls
  • Coleslaw
  • Dill picke slices
  • any other toppings you want!

Instructions

  • heat the chicken and barbecue sauce ins a skillet over a medium heat until warmed through 
  • toast your rolls (optional)
  • Divide the chicken evenly among the bottom rolls, add pickle slices and coleslaw
  • Place the top of the toll of top and serve

Stir Fry Bowls are one of my favorites. They are also one of the dishes that are easily made gluten free with the tweaking of a few sauces. This is a fantastic gluten-free dinner idea that is full of flavor and perfect for a quick weeknight dinner!

What you’ll need for this gluten-free dinner idea

  • 1 1/2 pounds flank steak
  • 3/4 cup plus 1 tablespoon of Marukan Ponzu Soy Dressing with Sudachi Citrus
  • 1-2 tablespoons vegetable oil
  • 2 garlic cloves 
  • 2-3 teaspoons fresh ginger
  • 2 red bell peppers
  • 1 medium yellow or white onion 2 cups broccoli florets 
  • rice/ cauliflower rice
  • sesame seeds
  • cilantro 

Instructions

  • put the steak slices in a bowl
  • add 3/4 cup of ponzu dressing and marinate for 4-12 hours in refrigerator. Remove steak when ready.
  • heat 1 tablespoon of oil in a large skillet over high heat. 
  • Cook the steak in batches for 5-6 minutes
  • Remove steak from skillet when done. 
  • let the oil heat then add garlic and ginger. Cook for 30 seconds, stirring, then add the vegetables, stirring for 3-4 minutes or until crisp.
  • add 1 tablespoon of ponzu dressing and cook for another 30 seconds
  • serve the steak and veggies over rice garnished with sesame seeds and cilantro.

Gluten Free Lasagna Soup Recipe

Looking for a cozy meal or comfort food on cold day, this is the perfect recipe! This mouthwatering Gluten free Lasagna soup recipe is simple, and filling.

  • 1 pound lean ground beef
  • 1 red onion peeled and diced
  • 1 (26 ounce) jar prepared pasta sauce 
  • 1 pound sliced mushrooms 
  • 1 red bel pepper 
  • 1 tablespoon Italian seasoning 
  • 4 cups beef broth 
  • 6 gluten free lasagna noodles 
  • 2 cups shredded mozzarella cheese

Instructions

  • use a 6 quart slow cooker
  • Brown the meat on the stovetop in a large skillet along with the red onion.
  • drain any accumulated fat and pour pan contents into the slow cooker insert.
  • Add pasta sauce, mushrooms, bell pepper, and Italian seasoning and beef broth. Stir in the broken lasagna noodles. 
  • Cover and cook on low for 7-8 hours, or until fully hot and pasta has reached desired consistency.
  • Serve in large bowls with a small bowl of shredded cheese per person to stir in at the table.
