18 Tasty Mediterranean Summer Recipes To Impress Your SO

Summer is the perfect season to whip out some of the tastiest Mediterranean summer recipes out there. Mediterranean dishes are always full of nutritious color that guarantees you always a yummy meal. These dishes are full of amazing Mediterranean flavor and and beauty that will leave you questioning why every summer meal is not Mediterranean inspired. These Mediterranean summer recipes will surely wow your taste buds and anyone else’s you cook for.

1) Mediterranean Three Bean Salad

What you need: canned green beans, kidney beans, chickpeas, bell peppers, cucumbers, red onions, tomato, parsley, mint, basil, dijon vinaigrette  

You can get creative with this salad and add your own flare of flavor to the recipe. Be sure to cook the three beans and then add other chopped veggies for an extra crunch in the salad. 

2) Greek Chicken Gyro

What you need: warmed pita, grilled chicken strips, green peppers, onion, tomato, olives, tzatziki sauce

We can’t get enough of the chicken gyro!

 

3) Grilled Kofta Kabob

What you need: skewers of ground beef and lamb, parsley, onion, garlic, pita, allspice, cardamom, sumac, nutmeg, tomato

This is a favorite!!! Serve this with tasty humus!

4) Avgolemono Soup

What you need: chicken stock broth, onions, carrots, celery, shredded chicken, rice, lemon, Greek avgolemono sauce, garlic, salt, pepper

This is a great option if you are experiencing the annual summer allergies or after a rainy day. This is a comfort Mediterranean summer recipe that is very beloved. It’s like chicken soup… but with a tastey Mediterranean twist!

5) Moroccan Lamb Stew

What you need: braised lamb, onions, garlic, carrots, gold potatoes, tomatoes, chickpeas, dried apricots, cinnamon, allspice, bay leaves, ros el hanout 

This is a hearty meal that is perfect for a dinner option with many people. This stew is out of this world and is really yummy for dinner guests.

6) Falafel

What you need: dried chickpeas (avoid the canned chickpeas for this one), hot cooking oil, cumin, coriander, parsley, cilantro, dill, yellow onion, garlic, salt and pepper, baking powder, sesame seeds

Make sure to soak your chickpeas (not from the can) for 24 hours before cooking. Then mix the chickpeas and herbs into a thick fine texture and chill that in the refrigerator. Then, form the patties and fry them! The go great in pita or just on their own.

  

7) Shakshuka

What you need: eggs, tomatoes, bell peppers, onions, garlic, extra virgin olive oil, coriander, cumin, paprika, parsley garnish 

Cook this in a skillet and it is the perfect vegetarian meal that can be served for breakfast, lunch, or dinner!

8) Roasted Veggies

What you need: garlic, oregano, thyme, extra virgin olive oil, parmesan,  zucchini or squash, campari tomatoes, mushrooms, cauliflower, small potatoes

This is a perfect easy side dish that will pair perfectly with a main Mediterranean meal.

 

9) Tabouli Salad

What you need: lime, olive oil, parsley, mint leaves, green onion, fine bulgur, tomatoes, cucumbers, pita, romaine lettuce, lemon garnish

Be sure to chop each of your veggies into very small pieces to get the authentic tabouli feel. 

10) Watermelon Salad

What you need: cubed watermelon, cucumbers, feta cheese, honey-lime dressing, extra virgin olive oil 

This is a juicy salad that leave you feeling refreshed!

11) Greek Traditional Salad

What you need: creamy feta cheese, onion, bell peppers, tomato, cucumber, olives, extra virgin olive oil, red wine vinegar, lemon juice 

When making a traditional Greek salad, make sure to have the feta cheese creamy and served in large chunks (never crumbled feta). This is a really tasty and easy salad to make!

12) Mediterranean Baked Chicken

What you need: chicken breasts, olive oil, garlic, salt and pepper, oregano, fresh thyme, paprika, lemon juice, tomatoes

Make sure to really coat your chicken in the delicious herbs and spices well before hand.

What you need: thin chicken strips, tzatziki sauce, garlic, oregano, rosemary, olive oil, paprika, lemon juice, dry white wine, pita, tomatoes, cucumber, onions, olives

14) Briam

What you need: garlic, parsley, potatoes, red onions, zucchini, tomatoes, oregano, parsley, rosemary, tomato sauce

This is a beautiful and delicious Greek veggie casserole that is irresistible! This is also one of the most beautiful looking dishes that you could ever make, so if you are trying to impress someone, this is the way to do it!


15) Mediterranean Style Baked Cod

What you need: lemon juice, olive oil, garlic, cod fillet, coriander, paprika, cumin, lemon

This is a very yummy meal that tastes great the first time, but also it tastes great for leftovers!

 

16) Chicken Shawarma

What you need: chicken, pita pockets, tahini sauce, extra virgin olive oil, cumin, coriander, turmeric, paprika

This meal is all about flavor! This is best served with pita and it a savory taste that you will always crave after trying it once. This also tastes really great with an addition of humus in your pita for that rich flavor! 

17) Seafood Paella

What you need: shrimp or lobster, mussels, rice,

There are special paella pan available that people use. But, you can always adapt your recipe to the skillet! This is one of those dishes that you can experiment with and get creative. It is typically served with seafood, but you can also use this recipe to cook with chicken or lamb too!

18) Greek Lemon Rice

What you need: rice, onion, garlic, lemon juice, parsley, dill weed, extra virgin olive oil, lemon

This is a perfect side dish to your Mediterranean dinner! This will give a whole new meaning to the rice side dish. The lemon in the rice makes out for a perfect flavor that pairs very nicely with Mediterranean chicken!
