10 Summer Snack Recipes You Can Enjoy On The Beach
We’re always looking for great recipes we can easily make and take on the go. If you live near a beach, it makes your day that much more fun if you can find fun snacks to bring with so you don’t have to spend your money on expensive vendors or leave the beach all together to go and get something to eat.
There are some great recipes that people of all ages will like, and some that may gear slightly more towards and adult pallet. Either way, these summer snack recipes are sure to be a hit at your next beach visit.
Bomb Pop Cookies
These look like so much fun and so delicious! Something fun for the kids and an easy treat you don’t have to worry about melting.
Ingredients
1/2 cup butter, softened
1/2 cup confectioners’ sugar
1/2 cup sugar
1 large egg, room temperature
1/3 cup canola oil
2-3/4 to 3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
Red and blue paste food coloring
1/2 teaspoon each cherry, raspberry and lemon extract
Directions
Cream butter and sugars until light and fluffy. Add egg and oil, beating well. In another bowl, whisk 2-3/4 cups flour, baking soda, cream of tartar and salt. Gradually beat into creamed mixture, adding flour if needed, until dough forms a ball.
Divide dough into 3 portions. Add red food coloring and cherry extract to one portion. Add blue food coloring and raspberry extract to the second portion. Add lemon extract to the untinted portion.
Shape each portion into a 10-in.-long block. Place red, white and blue logs side by side. Lightly press blocks together. Wrap and refrigerate until firm, 30 minutes.
Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. To create ridges, lightly press cookies with a fork. Bake until set, 10-12 minutes. Cool on pans 2 minutes; remove to wire racks to cool completely.
Crunchy Granola Pretzel Sticks
This is a semi-healthy snack when you include the granola. But the salt and chocolate chips may cancel that out. Either way, this snack looks so yummy!
Ingredients
1 package (12 ounces) dark chocolate chips
24 pretzel rods
1 cup granola without raisins
Directions
In a microwave, melt chocolate chips in a 2-cup glass measuring cup; stir until smooth. Pour into one side of a large shallow dish.
Roll each pretzel halfway into chocolate. Allow excess coating to drip off, then sprinkle pretzels with granola. Place on waxed paper until set. Store in an airtight container.
Giant Lemon Sugar Cookies
Who doesn’t love a lemon sugar cookie? Yum!!
Ingredients
1 cup unsalted butter, softened
1-1/2 cups sugar
1/2 cup packed brown sugar
2 large eggs, room temperature
1-1/2 teaspoons grated lemon zest
2 tablespoons lemon juice
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cream of tartar
4 teaspoons coarse sugar
Directions
Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs. Beat in lemon zest and juice. In another bowl, whisk flour, baking soda, salt and cream of tartar; gradually beat into creamed mixture.
Shape 1/4 cupfuls of dough into balls. Place 6 in. apart on greased baking sheets. Flatten to 3/4-in. thickness with the bottom of a measuring cup. Lightly brush tops with water; sprinkle with coarse sugar.
Bake until light brown, 12-15 minutes. Remove from pans to wire racks to cool completely. Store in airtight containers.
Fruit and Cheese Kabobs
Kabobs are a great, easy snack that can be made by anyone. Let the kids help make these quick healthy snacks!
Ingredients
1 cup vanilla yogurt
1/2 cup sour cream
2 tablespoons honey
1/2 teaspoon ground cinnamon
2 cups fresh strawberries, halved
1-1/2 cups green grapes
8 ounces cubed cheddar or Monterey Jack cheese, or a combination of cheeses
Directions
For the dip, mix the first 4 ingredients. On 12 wooden skewers, alternately thread strawberries, grapes and cheese cubes. Serve immediately or refrigerate.
Peanut Butter Popcorn Bars
This recipe sounds so fabulous. Peanut butter popcorn is a genus combination and I NEED to try this next time I host an event.
Ingredients
10 cups popped popcorn
1/2 cup sugar
1/2 cup light corn syrup
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
Directions
Place popcorn in a large bowl; set aside. In a saucepan over medium heat, bring sugar and corn syrup to a boil, stirring constantly. Boil for 1 minute. Remove from the heat.
Stir in peanut butter and vanilla; mix well. Pour over popcorn and mix until well coated. Press into a buttered 13×9-in. pan. Cool slightly before cutting.
So-Easy Snack Mix
Snack mix is a go-to summer snack recipe because it’s so easy and appeals to all ages!
Place all ingredients in a large bowl; toss to combine. Store in airtight containers.
Roasted Cheddar Herb Almonds
This is a snack that is a little different but sounds so good. This recipe calls for a surprising combination of ingredients, but the end product looks delicious!
Preheat oven to 325°. In a large bowl, whisk egg yolk; stir in almonds. In a small bowl, toss cheese with seasonings. Add to almond mixture; toss to combine. Transfer to a greased 15x10x1-in. baking pan.
Bake 20-25 minutes or until cheese is golden brown, stirring occasionally. Cool completely.
Green Bean Pasta Salad
This may be one of the more complicated summer snack recipes on this list, but it’s also one of the most filling. It may fit more in with a picnic than a snack, but it looked so good, it just had to be included!
Ingredients
8 ounces uncooked spiral pasta
1 pound fresh green beans, trimmed and cut into 1-inch pieces
1/4 cup olive oil
2 tablespoons white wine vinegar
1/8 teaspoon cayenne pepper
1 cup cubed fully cooked ham
4 green onions, thinly sliced
2 tablespoons minced fresh parsley
1 to 2 tablespoons snipped fresh dill or 1 teaspoon dill weed
Salt to taste
1 cup chopped walnuts, toasted
Directions
Cook pasta according to package directions. Meanwhile, place beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, until crisp-tender, 8-10 minutes.
Drain pasta and beans; rinse in cold water. Place in a large bowl. In a small bowl, whisk the oil, vinegar, and cayenne. Drizzle over pasta mixture and toss to coat.
Add the ham, onions, parsley, dill, and salt; toss to coat. Refrigerate until serving. Stir in walnuts just before serving.
Veggie Ranch Tortilla Pinwheels
This recipe includes a LOT of veggies. It’s perfect for the vegetarian snackers out there!
Ingredients
2 packages (8 ounces each) cream cheese, softened
1 envelope ranch salad dressing mix
5 green onions, chopped
1 can (4 ounces) chopped green chiles, drained
1 can (3.8 ounces) sliced ripe olives, drained
1 celery rib, chopped
1/4 cup chopped sweet red pepper
2 to 3 tablespoons real bacon bits
8 flour tortillas (10 inches)
Directions
In a small bowl, beat cream cheese and dressing mix until blended. Beat in the onions, green chiles, olives, celery, red pepper, and bacon. Spread over tortillas. Roll up. Cut each into 1-in. slices. Refrigerate leftovers.
Snack Crackers
When it comes to summer snack recipes, this one is king. It’s quick. It’s easy. It’s delicious. Maybe not the healthiest snack, but oh so yummy!
Ingredients
3/4 cup canola oil
1-1/2 teaspoons dill weed
1 envelope (1 ounce) ranch salad dressing mix
2 packages (10 ounces each) oyster crackers
Directions
In a small bowl, whisk the oil, dill and salad dressing mix. Place the crackers in a large bowl; pour dressing mixture over crackers and toss gently to coat. Allow to stand at least 1 hour before serving.
