Sometimes when you’re lounging in the warm sun or barbequing on a fair evening, you just need a cold, happy pina colada (I mean I don’t – a friggin’ hate coconut, but I’m not everyone). Luckily, it’s super easy to skip on the rum whilst simultaneously retaining that authentic pina colada taste. In case you don’t know or forgot what else goes into a pina colada other than liquor, here’s a quick list of what you’ll need:
pineapple juice
sugar
coconut milk
heavy whipping cream
Then, as a replacement for the rum flavor, simply add a bit of vanilla extract. Blend all that goodness up and you’ve got yourself an authentic and revitalizing pina colada to beat the summer heat with, hold the liquor.

It may be a bit more complicated, but I can assure you that the result will be well worth the tiny bit of extra trouble! What’s more, despite the extra work, the recipe as a whole only calls for a few ingredients:

strawberries
apple juice
sparkling water
ice
Like I said, it’s going to be a little extra work – in the form of baking the peaches for a short while. Furthermore, you’re going to have to blend the strawberries separately to make the color composition of the drink most appealing. Aside from this, however, it’s an all-around easy mocktail to make, and more importantly, the final result is spectacular!

Instead of spiked watermelon lemonade slushy. Get it? Anywho, this is one tasty slushy for our summer mocktail recipes. All your friends, alcohol enthusiasts or not, will most certainly want a little sippypoo of this delightful drink, and you can make it with relatively few ingredients:
lemonade
frozen watermelon cubes
water
sugar
mint leaves
For this, you’re going to need to make a little reduction out of the sugar and mint leaves, but that’s the most difficult part of the recipe. From there you simply blend everything else together and you’re all done! It also goes great with vodka if you change your mind about the whole no alcohol thing.

What more need be said? As far as summer mocktail recipes go, nothing beats the raw thirst-quenching power of a peach and ginger soda. Plus, you only need a few ingredients:
minced ginger
peaches
seltzer
mint leaves
It takes a bit of time to throw together, as you have to make a simple syrup reduction out of the sugar, water, and ginger, and then strain said simple syrup to get the ginger chunks out. From there it’s as simple as throwing the syrup into a glass with ice, seltzer, and peaches (slightly juiced in the glass). It’s so simple, and yet so delicious!

Nothing says summer like strawberries! That’s why I added this little gem to these summer mocktail recipes: strawberry mocktail mules. Sweet, sour, and refreshing, this mocktail is a must-have for beating the heat and getting all your servings of fruit for the day – and even better, it’s super easy to make. There’s just a couple of steps, and you only need these ingredients:
strawberries (fresh or frozen)
ginger beer
club soda
limes
The process is even easier than getting the ingredients! Just puree your strawberries in a blender (obviously you’ll want to cut the leaves off if they’re fresh) juice a lime, and throw everything together in the glass over ice. Otherwise, perhaps you could throw it all in a blender with ice to make a slushy! Stick a lime wedge on your glass and voila! You’ve got one tasty summer mocktail!

Sorry guys, this one is a little bit complicated relative to our previous summer mocktail recipes. That said, this is well worth the trouble – as a mocktail as well as a cocktail: Lemondrop cream soda! With a name like that, it just sounds delicious and summery, doesn’t it? For this one you’re going to need the following ingredients:
sugar
lemon
heavy cream
seltzer
whipped cream
You can also add whipped cream flavored vodka should you decide to ixnay on the no alcohol thing, though I highly recommend going a little higher-grade than Smirnoff if you can (obviously not if you have monetary restrictions or if your liquor store doesn’t carry anything better). Additionally, the recipe I found for this has a nifty homemade whipped cream recipe if you want the entire process to be from scratch. Whichever way you roll, these are going to be dank-ass summer mocktails (or cocktails, it’s your world).
