Summer Meals That Will Make Your Tummy Happy
Summer meals can be fun and easy to make, but when you are pressed for time, it can be difficult to find quick and easy recipes that are still healthy. For all of your summer getaways, work schedules, and daily routines, we have meals that will fit every and any standard. Let’s get started on 10 different recipes that will leave you full and ready for more! All the recipes, for all of your taste buds.
1. Quiche
Quiche is one of my favorites. You can get creative with the toppings for this meal, but my favorite is onion and broccoli quiche. Made with protein, vegetables, dairy, (and love), this meal will surely leave you feeling satisfied, without that dreaded bloated and drowsy feeling after a full meal. Nobody likes feeling tired and lethargic after eating, and I find with light but fulfilling meals like this one, we say goodbye to that gross after eating feeling. If quiche isn’t for you, or you have a sensitivity to eggs, not to worry because we have plenty of favorite meals, but this is one of my favorites. I usually prepare this meal the night before and within an hour it is ready. This meal can be eaten for breakfast, lunch, or dinner, and pair with a cup of fruit, and you have all of your food groups!
2. Cobb Salad
Salads are essential for summer meals. The trick (that I find) to make your tummy happy is to keep the meals light. You should still enjoy your burger or pizza, but I personally feel too full and tired afterward so on my work days I like to keep the meals light and simple but filling. Cobb salads are great because they include healthy fats like avocado, nutritious vegetables like tomato and onion, and of course protein like hard-boiled egg or bacon bits, over a bed of lettuce. Enjoy!
3. Chickpea Salad
If there is one way to be creative with salads, it is to use another vegetable instead of lettuce as the primary ingredient. I actually LOVE chickpea salad, and it is super simple t0 make! You’ll need chickpeas, spinach, red onion, parmesan cheese, lemon (to squeeze), and any other add-ons you wish. This recipe is perfect for summer because it is fresh, filling, healthy, and an amazing meal on your lunch break, (or even bring it to the beach!) This recipe is amazing and I hope everyone gets to enjoy it!
4. Yogurt Parfait
Everyone has different tastes when it comes to meals, and that’s ok. I think a yogurt parfait is a classic for a summer meal and a healthier version of an ice cream cone (which is fine by the way). You can substitute dairy yogurt for non-dairy alternatives, but for toppings, you’ll need strawberries, blueberries, banana, and granola. An optional step is to add protein powder or honey, for taste and protein. I used to make these before school when I was in high school, and they provide the energy you’ll be looking for, plus a level of sweetness leaving you full but not overly stuffed.
5. Eggplant Parm
For all of those veggie-lovers out there, you’ll surely love this meal. If you are a meat-lover, though, feel free to swap the eggplant for the classic breaded chicken recipe. Eggplant parm is one of my favorites and combined with the pasta it makes for a perfect summer lunch or dinner. Delicious!
6. Barbeque Chicken
When it comes to summer meals, most of them are done on the grill, or outside, at least in my house. I love a classic grilled chicken with a light glaze of barbeque sauce. This recipe goes perfect with a simple side salad, baked potato, or potato salad. Lean meats on the grill are a classic in the summer.
7. Caprese Salad
Caprese salad is great for summer because it is quick, filling, and who doesn’t love pesto? All you’ll need is arugula, mozzarella slices, tomato, pesto, and for a Caprese sandwich you can put it on ciabatta bread. Classic, but light and filling! Drizzle some balsamic dressing for the perfect finishing touch. Enjoy this refreshing meal!
8. Chicken Caesar Salad
Ah, a classic. I love caesar salad, and this meal is truly a favorite. This summer, pair it with steak, lasagna, or make it a full-sized meal by adding grilled chicken. What I love about this recipe is that it is light and filling, but also high in nutritious value. Sprinkle some lemon juice and cracked pepper for the ultimate taste and satisfaction. Who doesn’t love a Caesar salad?
9. Lobster Roll
Is it summer without a lobster roll? Not everyone is a fan of seafood, but I don’t think this article would be complete without a lobster roll on the list. Lobster is incredibly high in omega-3, lowering the risk of anemia and depression symptoms. Seafood, in general, is a great source of protein, and a perfect dinner in the summer! A lobster roll is perfect for lunch or dinner, anytime. Refreshing and high in protein!
10. Veggie Burrito
On a summer night, the last thing you want to do after work is to cook a big meal near a hot stove. Burritos are great for any time of the year, and you don’t need to stop by Chipotle and drop $12 to get the same Mexican vibe. You’ll need a tortilla wrap, veggies of your choice, rice, beans, and your choice of meat. There are a few steps with this meal, but you’ll feel full and it won’t be from something unhealthy.
In the summer, we all are busy, but love to come home to a nutritious meal. There are plenty of options when we are on the go.
