This recipe is actually for a slow cooker, but I just use the same premise to make a stovetop version. It also calls for steel-cut oats, but I prefer rolled oats because they cook much faster and make my mornings easier. First I cook the oats with milk and water (I only use one and a half cups water not three), and once they are soft I add in the spices, pumpkin, and everything else to let it all simmer together. I cook it on medium-low for about ten minutes. It’s incredible topped with freshly toasted pecans for extra crunch and warmth! (I’ll toast the pecans in the oven at 350 degrees for five minutes.) A warm bowl of this pumpkin pecan pie oatmeal will start your day out on the coziest note.

They’re sticky, sugary goodness but they are literally just fruit so they don’t count as real sugar. It makes the need for any kind of sugar go away (even “good” sugar like maple syrup or coconut sugar), which is perfect for avoiding that midmorning crash. I love topping this recipe with flax seeds, toasted pecans, and an extra dash of cinnamon. Get ready for the most wonderful, apple pie-like breakfast treat.

If you want to be fancy, you can make this version of banana bread stovetop oatmeal which includes caramelizing the bananas in butter (it’s so incredible and is the perfect, luxurious, Sunday morning breakfast!).
And finally, peanut butter and jelly stovetop oatmeal! This is such a delightfully, nostalgic meal that’ll leave you reminiscing in childlike wonder all day. It’s just sweet enough, and you can customize it with your favorite flavor of jelly and most ideal peanut butter (Crunchy? Smooth? Salted? Naturally ground-up peanuts?). I personally adore homemade peach jam and crunchy peanut butter for added texture. This recipe calls for adding the peanut butter and jelly on top at the end, and while that’s delicious I like cooking the oats in some peanut butter and jelly as well to get all the flavors in every bite. This is probably the easiest stovetop oatmeal recipe to make as all you have to do is boil the oatmeal and add in a scoop or two of pb&j! Add a dash of chia seeds on top for some extra protein and fiber and enjoy this warm and wonderful bowl of nostalgic bliss!
