10 Refreshing Summer Salad Recipes Even Veggie Haters Will Love
Do you wanna eat salads but hate veggies?!! I have some salad recipes that are healthy but won’t be overbearing with vegetables. Personally, I love avocado and spinach and etc. I understand that not everyone is a fan of these ingredients so I will limit them in the selections down below, without further adieu keep reading and find your next favorite meal for lunch or dinner. 1. Italian Style Tomato + Avocado Chopped Salad
Yes I know, this summer salad recipe includes some veggies, but a very small amount, there isn’t even salad in it, it’s not that bad. If this interests you, here are the step by step ingredients. You’re gonna need 2 cups cherry or grape tomatoes, halved or quartered, 2 ripe avocados, diced. 1 large English cucumber, halved and sliced. 1 medium red onion, diced. 8 ounces small, fresh mozzarella cheese balls. The dressing includes 1/4 cup basil pesto, 2 tsp lemon juice and then a pinch of sea salt and fresh ground black pepper. 2. Fruit Salad: Strawberry, Kiwis, Mangoes, Bananas, Blueberry
These are some of my favorite fruits so this is a go-to fruit summer salad recipe for me. It’s very quick and easy to make to store for the week. For an extra bit of flavor add in 2 tablespoons of honey and one lime juiced.
3. Watermelon Salad Bowl
This is not only such a cute meal that it’s Instagram postable, but it’s a healthy meal for you as well. Make sure you use an ice cream scooper to take out all the watermelon smoothly from the bottom half. Then fill all the newly circled watermelon back into the bottom of the watermelon bowl. This salad includes mango, kiwi, blueberry, strawberry, grapes. For an extra bit of taste just drop in a small mixture of 2 tablespoons of honey and one lime juiced.
4. Egg Avocado salad
The ingredients are 1 medium avocado, pitted and peeled. 3 hard-boiled eggs, peeled and chopped. 2 teaspoons of greek yogurt. If you don’t have this, you can include sour cream or light mayonnaise as a replacement. Next is one teaspoon of fresh lemon or lime juice. 1 teaspoon of minced cilantro. Next, add salt and fresh pepper to taste. Again if you don’t like avocado don’t add it. I personally love avocado so I think this spices up the everyday egg salad for me anyways.
5. Cranberry, Feta, and Walnut Salad
If your not a fan of salads, sometimes something a little sweet can make you not only enjoy the salad but tolerate the lettuce taste. Here are the ingredients. Get 2 cups of mixed salad greens. Then 1 cup dried sweetened cranberries. 4 ounces crumbled feta cheese. Half a cup toasted walnut chopped. 2 tablespoons balsamic vinegar. 1 tablespoon honey. 1 teaspoon dijon mustard, 1 teaspoon ground black pepper. 2 teaspoons of extra virgin oil. 6. Buffalo Chicken Pasta Salad
If you really don’t like lettuce, try this alternative. Summer salad recipes can be pasta salads too. Take your cooked pasta and make sure it’s cooled, mix it with the shredded chicken, celery, and lastly carrot. Make the dressing, which consists of 1/4 cup of blue cheese and buffalo sauce. Pour that over the pasta and mix. Enjoy!
7. Skinny Caramel Apple Salad
I love the idea of dessert salads, especially as an alternative to actual dessert. First, start by getting a cup of almonds and placing it in a food processor or a powerful blender, you need it to form into almond butter and then it’s ready. 2 tablespoons of vegetable oil should help with the process. 1 cup of nonfat Greek yogurt should be stirred in and caramel sauce for taste. Chop up chunk like pieces of apples and mix it in. Add the leftover almonds to sprinkle over top and drizzle some caramel sauce over top. This is perfect for dessert at night when you’re really not trying to go for the ice cream.
8. Spring Fling Fluff Fruit Salad
Another dessert salad, with a good amount of fruit intake. This includes fresh strawberries, blueberries, and kiwi. If you’d like to add more than I would recommend grapes or even raspberries. Next, you just mix it up with pudding, either vanilla or chocolate. The photo shows vanilla, but if it were me I would do dark chocolate pudding, and then throw some marshmallows in if you want.
9. Citrus Shrimp and Avocado Salad
Cook a pound of medium pan seared citrus shrimp. 8 cups of greens such as arugula spinach, or spring mix instead. Get some lemon flavored extra virgin olive oil. 1/2 of the juice from a lemon or an orange. 1 avocado sliced or diced. 1 shallot minced, 4 ounces of toasted sliced almonds. Now lastly a pinch of salt and freshly ground pepper. Again if you don’t like avocado you can substitute it or just don’t add it at all. This is one of the most refreshing summer salad recipes.
10. Carnivore Salad
If you’re a meat fan, you’ll enjoy this carnivore salad. It includes bison pepperoni, 2 eggs over easy, some green lettuce, and seeds- pumpkin and etc. I would add some olive oil and vinegar for dressing, some avocado as well.
