10 Popsicle Recipes You Have To Try This Summer

Popsicle recipes are an underrated necessity for the summer! Transform your summer parties with homemade popsicles, they’re guaranteed to please. Here’s a list of our top 10 popsicle recipes that you need to try right now!

1. Chai Tea Latte Popsicle

Chai tea is one of those things that just instantly boosts your mood and calms you down, so these popsicles are perfect for a relaxing day lounging by the pool with your besties! To make this treat, steep 2 decaf chai teabags into a cup of water. Let this cool, and mix 2 cups of Greek yogurt with 2 tbsp of honey and a teaspoon of vanilla extract in a separate bowl. Once you’ve mixed these ingredients together, add the cooled tea and mix it all together! Put the finished product into your popsicle molds and freeze. These pops are a super tasty way to chill out and de-stress this summer!

2. Blackberry Lime Popsicle

One of the BEST things about Summer is all the fresh fruit! Take advantage of the fresh, bright flavors of the season with this deliciously easy recipe. Start with 1/4 cup of sugar and a cup of hot water. Mix the sugar in the water until the sugar has dissolved. Next, mix in a quarter cup of lime juice and a cup of blackberry puree (If you aren’t feeling super extra, just take a cup of blackberries and throw it in the blender). Pour the mixture into your molds, freeze and enjoy!

3. Cake Batter Popsicle

Who doesn’t love cake? And tbh, really anything becomes more fun when you freeze it and put it on a stick. So this recipe is really a no-brainer for this summer! Mix together 3 cups of vanilla ice cream and 3/4 cup yellow cake mix. Blend these ingredients together with one cup of milk until there are no more lumps! For a fun pop of color, add in a handful of rainbow sprinkles! Pour the mixture into your popsicle molds and allow them to freeze overnight! Now you can have your cake and freeze it, too!

4. Mojito Popsicle

Is it just us, or do cocktails taste about 1,000 times better during the summer? This summer, skip your boring old regular beverages and try this chilly twist on an old favorite! To make these boozy pops, bring 2 1/2 cups of water to boil, and add in a cup of sugar. Once the sugar is added, turn off the heat and throw in about 20 or so mint leaves. Give the mint time to steep, and the mixture time to cool off! Once the mixture has cooled, combine it with a 1/4 cup of lime juice and, of course, don’t forget the booze! Mix in a 1/4 cup (or more if you’re feeling generous) and allow the mixture to freeze. These mojito cocktails are the perfect adult treat for your next happy hour get-together!

5. Chocolate Strawberry Popsicle

Okay, so let’s be real. Chocolate ANYTHING is an instant winner. And chocolate with strawberries? Yeah, we’re all in! Make these frozen treats by pureeing 2 pounds of whole strawberries. Throw this mixture directly into your molds and allow them to freeze overnight. To add the chocolate shell, melt 12 oz of chocolate chips in the microwave with 1/2 cup of coconut oil. Dip each pop into the melted chocolate and set out on wax paper to dry. You can re-freeze these pops, or eat them right away. The choice is totally up to you, but once you catch a glimpse of these bad boys, our guess is they won’t last very long!

6. Boozy Peach Sweet Tea Popsicle

There’s nothing more refreshing on a hot summer day than a nice big glass of cold sweet tea. So naturally, we had to work it into our list of popsicle recipes. This recipe combines a southern staple with – duh, alcohol- to make the most delicious cocktail cold treat! Start out by steeping 3 peach tea bags in 2 1/2 cups of water. After steeping, let the tea cool while blending together3 1/4 tablespoons of granulated sugar and 2 pitted and sliced peaches. Mix in a 1/4 cup of peach schnapps and the cooled tea and blend some more! Fill your molds with this mixture and let them freeze! Just be ready- these pops are so deliciously boozy, they’ll make you want to spill allll the tea.

7. Mango Coconut Popsicle

Is there really anything that goes better with Summer than coconut? Coconut is one of those flavors that instantly reminds us of summer, so naturally, we had to include a coconut popsicle in our top 10. But we didn’t just go for your typical plain old coconut bar. Oh no, we took it up a notch and we’re serving straight looks with this mango coconut flavor explosion. To make this recipe, peel and dice 2 large mangoes. Mix the mangoes with a cup and 2 tablespoons of coconut milk and 2 tablespoons of honey and blend until smooth.  Pour the filling into the molds and freeze overnight! We recommend being greedy and keeping these pops under wraps because these suckers will be an instant crowd pleaser!

8. Mimosa Popsicle

Two words: Mimosa. Popsicle. Need we say more? Make these super fun pops by combining 2 1/2 cups of orange juice with 3 1/2 ounces of Cointreau (or Triple Sec) into a large container. Fill your molds with the mixture and freeze! When you’re ready, pop that cork and pour yourself a glass of bubbly. Place your pop right into your drink for a slushy treat! Serve with strawberries or your favorite fruit for an extra added flair!

When it comes to classic summer flavor combos and popsicle recipes, it doesn’t get more iconic than coconut lime. I mean, they wrote a song about it so it has to be good, right? To make this signature frozen treat, mix one can of coconut milk with 1/4 cup of regular milk in a blender. Add in 1/4 cup of lime juice and a tablespoon of lime zest, and a 1/4 cup of unsweetened shredded coconut. Blend all of this together and fill your molds! Put the lime in the coconut and put the pop in the freezer until they’re cool enough to eat!

10. Strawberry Cheesecake Popsicle

Popsicles are the perfect dessert during summer months, and if a sweet dessert is what you’re aiming for, these strawberry cheesecake pops are just the right way to go! Make these pops by quartering 6-8 large strawberries. put the strawberries into a small mixing bowl with 2 tablespoons of sugar and 2 tablespoons of water and mix. In a separate bowl, combine 1 package of instant cheesecake pudding with 2 cups of milk, and add in 12 finely crushed vanilla wafer cookies. The wafer cookies will act as the “crust” part of our cheesecake! Scoop 2 tablespoons of the pudding mixture into the top of each popsicle mold, and follow it up with 1 tablespoon of the strawberry mixture. Top it all off with one more 2 tablespoon helping of the pudding mix and your pops are ready to go into the freezer! Let them chill overnight, and tomorrow your sweet ‘sicles will be ready to devour!
