Not everyone has the time to make perfect meals everyday, but that does not mean that they cannot eat well. When I was in undergrad, I had zero energy to make healthy and/or easy meals, so I got caught up eating out and eating pop tarts and trail mix. There are ways around this, you can eat well even if you are lazy and don’t want to cook anything.
I am the type of lazy person where I will not eat meat just because it takes too long to prepare and cook. After a while, I started to miss it, so I found a way to make the process more bearable. I would buy a pack of leg quarters and as soon as I got back, I would separate them, clean them, put on marinade, and finally stick them in large zip-lock bags.
I set the packs in the freezer and then when I need them, I will take one of them out to make for the week. It has been so convenient to be able to break up, what I consider, the long preparation process.
As much as it pains me to say, if you want to eat well, you have to put in some sort of effort. I would wake up on Sunday morning (not early because I was lazy) and put some meat to soak. If you don’t want to have to cook later on into the evening, I would suggest putting frozen meant into the fridge the night before.
Once thawed, put your meat in the oven and cook the sides for your meal. Part of being able to eat well is to eat healthy, so prepare a large batch of your favorite vegetables while the meat is cooking. This way, you can get both out of the way at the same time and the best part, if you are lucky, the food you would have just prepared will last you through the week. After the food is cooked, just package it up and pull it out as desired.
I’m sure that this audience is well aware of the powers of the microwave because microwaves are life, but eating microwaved food all the time is not good for you. So, I had to get creative with how I used my favorite appliance.
If I really could not deal, I would make my eggs in the microwave. It really works and you don’t have to worry about cleaning out a pan later. I have made cheese toast, breakfast meat, tea, and whatever else I think I could get away with. So get creative with how you use a microwave, it can save you time and it will create another way to eat well with your extremely “busy” schedule.
At the end of the day, cooking is the enemy for a lazy person, so if you can find times where cooking can be cut out completely, that is a win! Cereal and ready made oats are great. Granola with yogurt and fruit are also great alternatives.
Especially since I am not a morning person, it was always hard for me to want to wake up in the morning and make myself a good breakfast. I wanted to eat well, but without having to spend thirty minutes to an hour in the kitchen, so these meals made a huge difference for me.
