If you love eating healthy but don’t always know what qualifies as healthy, I hear you! I’ve put together seven delicious healthy meals to eat this summer. You won’t even notice you’re eating healthily, because they taste like heaven. Let’s get cooking!
Smoothies are so easy to whip up if you are in a hurry or want breakfast to-go. You can customize them any way you want, make them green, fruity, or both. You can also add protein powder if you want to be full longer. If you make it right, it will taste like a fruity milkshake. Delish! Most importantly, smoothies are packed with all the nutrients your body needs to conquer the day. Oh, and they make for good Instagram content.
This is another great breakfast option for all my avocado lovers out there. This savory treat is perfect for having your friends over for brunch or even a quick brekkie before a beach day. Mash some avocado, sea salt and lime over whole grain toast. If you’re feeling extra hungry, add some fried eggs on top. You get all your healthy fats and protein in one meal. We love a healthy queen!
These bowls are overflowing with antioxidants and key nutrients to fuel your body. My favorite thing about these is you can add anything you want, like chickpeas, brown rice, salmon, sweet potatoes, or kale. Basically, you can personalize it any way you want. If you are a picky eater like me, this is perfect for you. I prefer these for lunch but you can also eat them for dinner! Think of it as homemade Chipotle. Yum!
If you are addicted to Mexican food like me, you will be all over these healthy tacos. All you need is whole wheat tortillas or lettuce wraps, protein of choice (chicken or steak), pico de gallo, guacamole, and veggies. It’s just as good as going to an authentic Mexican restaurant. Super easy and once again, you can personalize them however you want. Whip these up for a fiesta-themed summer party and your friends will love you!
Salads don’t always have to be boring and bland. You can spice up your salads with seasonal fruit like watermelon, apples or blueberries. Toss some mixed greens with grilled chicken or salmon, and a sprinkle of feta cheese on top. Drizzle with balsamic vinaigrette and voila! Salads are great for a light lunch or dinner. Bonne appetit!
Smoothie bowls are great for summertime lounging by the pool, or picnicking at the lake. It’s like eating nature’s ice cream. If you use frozen fruit, it will make your smoothie creamy and ice cold. Use acai packets for the smoothie base and sprinkle toppings like granola, coconut shavings, chia seeds, and fresh berries. It’s like an explosion of flavor in your mouth. So refreshing for summer!
Zucchini noodles are the perfect healthy alternative to pasta. We all have a weakness, mine just happens to be carb-heavy pasta. This is a perfect way to indulge but eat healthy at the same time. Toss your zucchini noodles in fresh pesto and add grilled shrimp for extra protein. My mouth is watering just thinking about this one. I know what I’m making for dinner tonight!
