Buddha bowls are really good. Start with a bowl of brown rice, roast some veggies like sweet potato and red onion. For some extra protein add on tofu or crispy chickpeas. Finish it off with a drizzle of tahini and sliced avocado. These bowls are really customizable to your liking. They are really filling from the brown rice. If you want something that isn’t so high in carbs, switch out the brown rice for some quinoa instead.
Another pasta substitute. If you want something that will trick your mind into thinking it’s eating pasta, then spaghetti squash is for you. Drizzle with a little bit of tahini or sauce of your choice. This dinner will keep you full all night long.
