Eating fast and easy breakfasts was something that always seemed unhealthy and unappealing to me, because the options always seemed too sugary or bland. Those options were usually cereal or oatmeal. You can definitely spice those up by adding fresh fruit and eating whole grain cereal, but I don’t have time to eat a bowl of cereal or oatmeal in the morning, and prepping those the night before doesn’t usually work out for me.
I’ve come up with a list of fast and easy breakfasts for rushed mornings that taste good, are fast and easy to make (some involve prepping the night before) and easy!
In a mason jar or container of your choice, mix 1/2 cup of oats , spice, and 1-2 tsp sweetener. In a liquid measuring cup, or container of your choice, mix 1/2-2/3 cup milk and 1-2 spoons of yogurt. Stir milk/yogurt into oats. Add fruit and stir. Cover and put in fridge, and you have yourself some overnight oats. I suggest using rolled or instant oats, not steel-cut oats. I personally love using cinnamon as my spice, but you can customize that to your taste buds.
I used to be so against eating cold oatmeal, and then I made this for the first time when I was a freshman in college. It changed my whole breakfast eating world. I try to make it as often as possible, but not too often so I don’t get sick of it. I don’t think I would ever get sick of it, but this is one I definitely recommend making.
This is one of those easy breakfasts that I love prepping because of the flavor of it. This is one of my personal favs and it fills me up and tastes so good when I prepare it.
These are self-explanatory. Hard-boiled eggs fill you up and keep you feeling full hours after you’ve consumed them. You can prep many the night before if you want and even peel them the night before you plan on eating them to save you time in the morning. You can add salt or pepper or bring some sauce to add some flavor to the hard-boiled egg.
This is one of those fast and easy breakfasts that almost anyone can do.
Canned refried beans aren’t just for dips and fritos. Heat up a can in the morning, spread a good spoonful or two on a tortilla, add some cheese and hot sauce (if you like some spice) and you’re good to go in the morning. This is one of my personal favorites because I love beans. The part that takes the longest for this is heating up the beans, so if you want to save some time, I suggest only heating up the amount you plan on eating instead of the whole can.
This is one of those easy breakfasts that’s wonderfully portable, fast, tasty and you can add more than what I suggested to customize it!
The yogurt you use for this is totally up to you. You can choose your favorite flavor, you can choose Greek yogurt, you can use plain yogurt – the yogurt world is your oyster. Layer yogurt in jars, or just do it in a bowl if you don’t have any jars (and if you’re trying to get some, save your pasta sauce jars, just remember to thoroughly wash them) and top with nuts or granola when you eat it! This is one of my personal favorites because I love all types of yogurt and adding fresh fruit to something I already love makes it even tastier.
You can prepare these many days in advance, but you can also make them the morning of. It’s one of those fast breakfasts that tastes good, looks good, and can also be eaten on the go!
To make this breakfast, get 2 tablespoons of chia seeds, 1 cup of full fat coconut milk (or regular milk, choose whatever you like best) 1 teaspoon of maple syrup and 1 teaspoon of vanilla. Whisk all of these together in a mason jar and put in the refrigerator overnight. Top with granola, fresh fruit, or toasted coconut for texture and more flavor! Chia seeds can be pricey, so if you are on a budget like me, this may be a difficult meal to do. But if you budget, or make room in your budget for chia seeds, this breakfast is totally within your reach. I love the coconut milk in this breakfast and think you will too if you try it out!
This is one of those fast breakfasts that can be eaten on the go, looks tasty, is tasty and is easy to make!
Eggs, a little milk, any veggies on hand, cheese on top (if you like it) put it in a pie dish on Sunday and bake then cut a slice every morning and heat in the microwave. I love cutting a slice and eating it real quick on mornings I’m feeling rushed! Prepping breakfast the night before goes a long way in the morning and I’ve learned to take advantage of my night time energy by preparing for the next day the night before.
This is one of those easy breakfasts that can be prepare before the week starts and then should last you all week! You can cut a slice to any size you feel like eating that morning, which is something I love about this dish.
