15 Energizing Breakfasts To Help Kick Start Your Day

Breakfasts are really important. A good breakfast can make your whole day much easier. If breakfasts are important to you, you probably already have a few go-to recipes, however, it can get a bit redundant. Doing the same old breakfasts over and over again – they lose their magic. This list offers a few easy energising breakfasts, which will spice up your day. Some, literally. 

1. Veggie Scramble 

A lot of breakfasts come with scrambled eggs and they are definitely one of my favourite breakfast options. If you want to add a bit of variety, you can try adding some vegetables to your scrambled eggs. It doesn’t even necessarily need to be a breakfast, this recipe would also be great for lunch or dinner, but it’s sure to help kick start your day if you have it in the morning. This particular veggie scramble is with onions, tomatoes and spinach, but you can throw in anything you like.

2. Peanut Butter and Fruit Breakfast Roll 

If you think that breakfasts can be a hassle sometimes, you’ll change your mind once you add this into your routine. Surprisingly, you could actually prepare this the night before and have it waiting for you in the morning. It packs peanut butter, cottage cheese and fruit. The cottage cheese adds some extra nutrition. You can swap it out for cream cheese, ricotta or just do the recipe without it.

3. Citrus Green Smoothie 

Smoothies can be amazing energising breakfasts. If you don’t have much time in the morning, smoothies can give you a nutritional and energy boost. This smoothie is made with pineapple, mango, lime, orange, banana and a generous helping of spinach (though you won’t notice it). There’s also a bit of gelled chia seeds (for extra protein). This smoothie is packed with healthy vitamins and is sure to wake you up in the morning.

4. Marple Pecan Quinoa Bowl 

Tired of having porridge every morning? Swap the oats for quinoa. Especially during autumn or winter, starting your day with a nice, warm breakfast is exactly what you need. It’s both comforting and energising. The base is gluten-free oats and quinoa, but you can, of course, take some liberty with the recipe.

5. Berry Oat Breakfast Smoothie 

One more awesome smoothie you can have for your breakfasts. If you are not into citrus, you can make this delicious berry oat smoothie. You can whip it up in a minute and enjoy in the morning. So easy. Not that you have to wait till breakfast to have it. You can make one right now as a pick me up. Dump the ingredients into a blender: 1/2 cup of oars, a cup of milk (of your choice), 1/2 cup frozen berries, 3 tbsp honey (or to taste), 1/3 cup yogurt and some ice. And there you have it.

6. Hot Chocolate Porridge 

This is my favourite type of porridge and I often make it when I get bored of my go to honey, cinnamon and walnut recipe. This particular recipe is sugar free, tastes like an amazing, warming hot chocolate and it’s ready in five minutes. It’s high in fibre, antioxidants and protein, which means that it will keep you full and energetic till lunch.

7. Banana Almond Smoothie 

This smoothie tastes like a milkshake, but is better for you and it should keep you filled up till lunchtime. This recipe, or rather list of ingredients that you put in a blender, is inspired by a little coffee shop on the Puerto Rican coast. It’s a smoothie with banana, almond milk, flax, vanilla, cinnamon.

8. Avocado And Egg Flatbread 

Forget avocado on toast. Avocado on flatbread – yum! This recipe does not require you to make the dough yourself, but honestly, making flatbread dough is so easy. It’s literally just flour, water and salt.

Here’s a little recipe for you: You take a few tablespoons of flour (it does depends on how much flatbread you want to make) and add to it some salt, though you can add other spices or herbs such as smoked paprika, coriander, etc. Pour some warm water in a cup and then gently start adding that water to your dough. You add a little bit, mix with the flour, a little bit more, etc. If you add too much water, then add some more flour.

In the end you should get a neat little bowl of dough, which doesn’t stick to your hands. Leave it to rest for 20-30 minutes while you make your avocado and egg. After it’s rested, you can transfer it to a clean, flat surface (if it wasn’t on one already/ e.g. chopping board), pour some olive oil over it, knead it for a minute or so, until it’s covered in oil all over and then use your hands to form a flat, round (or somewhat round) shape.

While you shape your dough, you can already have a pan heating up, it has to be really hot. When you are satisfied with the shape, throw the flatbread on the pan and cook it through. It should bubble up a bit, and slightly change colour, that’s when you know to flip it. You’ll get a bit of char, a warm soft bread and the satisfaction that you made it yourself.

Sweet potato toast can be made into a variety of breakfasts. You can have it sweet and savoury. It’s quick, easy, packed with nutrients and the perfect start to any day.

10. Tomato Toast With Macadamia Ricotta 

Tomatoes are an amazing breakfast. Tomato and cheese are a staple food in many cultures. In Bulgaria, we make our toast with tomato and Bulgarian white cheese (similar to feta). This recipe uses tomato and ricotta – another amazing combination, which is sure to energise you in the morning.

11. Nut Butter, Banana And Chia Seed Toast

There are some classic breakfasts, such as PB&J sandwiches. If you want to have something similar, you could have some toast with nut butter and banana (with some chia seeds for an extra healthy kick?). You could also substitute the banana for another fruit that you love, or have some on the side. Whatever you choose, this is going to be a lovely breakfast.

12. Spiced Spinach And Potato Cakes With Poached Egg

This is one of the more high-maintenance breakfasts. It’s not hard to make, but it takes a bit more time. You don’t just throw stuff in the blender or eat something, which was prepared the night before. This is the perfect weekend breakfast. It’s a delicious, healthy and hearty breakfast.

13. Pumpkin Granola Yogurt Parfait

This is the perfect autumn treat, though it’s going to be a delicious breakfast throughout the year. This parfaits make both lovely breakfasts and perfect snacks. They are a mixture of yogurt, pumpkin, pear, and granola and in case you can’t tell by the ingredients list -they are loaded with digestion boosting probiotics and fibre so your body will definitely be happy.

14. Quinoa Fruit Salad 

Level-up fruit salad – that’s basically what this breakfast is. If you love fruit and you really enjoy having fruit for breakfast, this is the perfect treat for you. You can use any fruit you like. The salad also has a honey and lime dressing, which adds even more flavour. You can add nuts for texture, as well. In general, it’s a light and refreshing breakfast, especially in a hot summer day.

15, Chocolate Overnight Oats

These are the best. Overnight oats make the best breakfasts. If you love chocolate and you like making overnight oats, so you don’t have to think about preparing something first thing in the morning – this is the perfect dish for you. You get creamy, chocolaty oats, which you can garnish with fruit and maple syrup. Delicious!
