10 Egg Recipes You Can Make This Summer

Breakfast is said to be the most important meal of the day and these egg recipes will make you never miss breakfast again.

1. Scrambled Eggs with Ham

These egg recipes are a great source of protein, what a perfect way to start your day. To begin, you will need 6 large eggs, ½ a cup of chopped ham, 1 tablespoon of milk, 1 teaspoon of Ranch dressing, and 1 cup of shredded cheese. This delicious meal only takes about 10 minutes to make. You will spray your skillet with non-stick cooking spray and make sure the stove is set to medium. Add the ham and continue to flip them so that they are evenly cooked. Crack the eggs into the skillet and stir into the ham. Then add in the milk and Ranch until it is mixed well together. Once the eggs are almost done add in half the cheese. When the eggs are completely done remove from heat and placed on a plate. Add the remaining cheese and then dig in.

2. Sausage and Egg Casserole

These egg recipes are amazing but this one is makes a totally delicious leftover.  This can be enjoyed not only for breakfast, but lunch, dinner, and midnight snacks. You will need 1 pound of pork sausage, 6 eggs, 2 cups of milk, 1 teaspoon of ground mustard, 6 slices of bread cut into ½ inch cubes, and 1 cup of shredded cheese. Let’s get started, in a skillet cook the sausage until it browns and then drain it and set it aside. In a large bowl add the eggs, milk, and mustard and stir. Then add in the cubes of bread, cheese, and sausage. Now set this to the side. Get a baking dish and grease it and then pour in the mixture you just created. Cover it and place it in the refrigerator for about 8 hours. Then uncover and bake for 40 minutes at 350 degrees. Then you are done!

3. Breakfast Quesadillas

It’s summer so a typical breakfast meal can be enjoyed at any time of the day. You are the chef so if there’s anything you want to add more of or just not even add, it’s up to you. You will need 3 eggs, hot sauce, 1 cup of cooked black beans, 2 teaspoons of butter, 1 tablespoon of chopped green onions, 2 tortillas, and 1 cup of shredded cheese. Let’s start with the eggs; in a bowl whisk them together with the hot sauce until they are well blended. Add the beans to the bowl and place it to the side. Melt the butter in a skillet until it starts to sizzles and then add in the eggs and green onions. Then place to the side. Add the tortilla to the skillet and once it has reached a golden brown color flip it and add the egg mixture on top. Then once browned removed from skillet and place on a plate grab and eat up.

4. Chicken Cobb Salad

I feel you can never mess up a salad and the more ingredients you add the merrier. Add whatever you like to this egg recipe. I like to prepare this salad with ¼ cup of soy sauce, 3 minced garlic cloves, 1 lb. of cooked boneless chicken cut into ½ inch cubes, 6 slices of bacon cut into small pieces, 1 head of romaine lettuce chopped into pieces, 1 avocado peeled and sliced into small pieces, ½ of a red onion thinly sliced, and 4 eggs cut into halves. In a large bowl add in the lettuce and top with all the ingredients. Cover the salad and shake for about 30 seconds. then pour on your favorite dressing and eat.

5. Egg and Cheese Taco

Tacos are super easy to make and if you eat a couple they make for a delicious meal. This meal will make you never “snooze” through breakfast again. This is my second favorite egg recipes from this list You will need 1 cup of chopped tomatoes, 1/3 cup of chopped red onions, 1 teaspoon of jalapeno pepper juice, 4 teaspoons of lime juice, 1 cup of refried beans, 1 teaspoon of milk, 6 eggs, cooking spray, ¼ chopped green onions, 8 corn tortillas, 1 cup of cheese, and 8 teaspoons of sour cream. Let’s get cooking. In a large bowl combine the tomatoes, red onions, jalapeno pepper, garlic, and beans. In a separate bowl combine the eggs and milk together. Get a non-stick skillet, spray it with cooking spray and then put it over medium heat. Now sauté the green onions for about a minute. Stir in the egg mixture into the skillet for about 3 minutes or until scrambled. On each tortilla spread about a tablespoon of the bean concoction on them. Put about 2 tablespoons of the egg mixture on top of the beans. Add the tomato mixture and cheese and then serve.

6. Deviled Eggs

This egg recipe makes a perfect snack or a simple dish to bring to a potluck. Just 7 ingredients and 30 minutes you will have a dish all your friends will be raving about. You will need 1 dozen peeled boiled eggs, 2 teaspoons of mustard, 1/3 cup of mayonnaise, 1 tablespoon of powdered onion, ¼ teaspoon of hot sauce, salt, and pepper. Let’s get started, cut each of the eggs in half, lengthwise. Place the yolk in a bowl and the eggs on a platter facing up. Now mash up the yolk and add the mayonnaise, onion, hot sauce and a dash of salt and pepper. Stir until the mixture is creamy. Get a spoonful of the mixture and place it into each of the white of the eggs on the platter. You can now serve or chill for about 30 minutes and then serve.

7. Breakfast Chilaquiles

Perfect nachos that you can eat for breakfast. Egg recipes are the best and when you add nachos you take amazing to a new level. You will need 6 eggs, 5 ounces of tortilla chips, 1 cup of cheese, ¼ sliced jalapenos, thinly sliced avocado, 1 cup of pico de gallo, and a cup of sour cream. Scramble the eggs in a skillet for about 3 minutes or until scrambled. Then set aside in a bowl. Add the chips to the skillet and add the cheese, eggs, and jalapenos. Broil until golden brown. Remove from oven and top with pico de gallo, avocado, and sour cream. Then grab a bowl and eat up.

8. Breakfast Dog

This egg recipe is better than a hotdog. 1 pound of breakfast sausage, ½ pound of bacon cut into small pieces, 4 eggs, salt for taste, 4 toasted hot dog buns, and hot sauce. Let’s get started. Add the sausage to a skillet set on medium temperature and cook for about 5 minutes, then set aside. In the same skillet fry the bacon for about 4 minutes or until crispy. Then remove from skillet and pat off the grease. Add the sausage back into the skillet and add eggs. Once eggs are scrambled add mixture into the hotdogs and then enjoy.

9. Egg Mushroom and Spinach Pudding

The combination of eggs and mushrooms is making a comeback. This egg recipe is epic. You will need 3 cups of bread cubes, 1 teaspoon of butter, 1 cup of finely chopped onion, 1 minced garlic, 8 ounces of mushrooms, 4 eggs, 1 cup of heavy cream, ½ cup of chicken stock, and 1 cup of shredded cheese. This pudding mixture is amazing. To get started set the oven to 350 degrees. In a skillet cook the onions, garlic, and mushrooms until golden brown. The set to the side. Beat the eggs in a bowl, chicken stock, cheese, salt, and cream. Soak the bread into the mixture. In a casserole dish add the bread and mixture together and cook for about 30 minutes. Once done give it about 15 minutes to cool off and then enjoy.

10. Breakfast Pita Pizza

What better than pizza for breakfast? A pita pizza, of course. This is one of my favorite egg recipes. You just need 5 ingredients; 7 beaten eggs, 10 ounces of breakfast sausage, ½ cup of pizza sauce, 4 pita slices of bread, and 1 cup of shredded cheese. Heat the oven to 450 degrees. Cook sausage until brown and drain the grease. Pour eggs over the sausage and continue to lift and fold the eggs. Be gentle. Spread 2 tablespoons of pizza sauce on each pita bread. Place in the oven for about 4 minutes and then sprinkle with cheese. Then serve and enjoy.
