5 Easy Sweet Potato Microwave Recipes For Your Dorm

After days of Ramen and leftover delivery pizza coming out of your dorm room microwave, your body is likely craving something a little different and probably a little healthier. Sweet potatoes are packed with nutrients and can be super versatile. Here are five different sweet potato microwave recipes to cook in your dorm!

You will need a medium-sized sweet potato for all of these recipes. Start by poking holes into the skin with either a fork or a knife. Microwave on high for 8 to 10 minutes and flip once.

1. Sweet Potato Pie Oatmeal

Ingredients:

1 cooked medium-sized sweet potato

1/2 cup of oats

1 cup of liquid (water, milk, and milk substitutes will all work fine)

2-3 tablespoons of sweetener (sugar, brown sugar, maple syrup, etc)

A pinch of cinnamon

Instructions:

Let the sweet potato cool. As you wait, combine the oats and liquid. Cook for 2 to 3 minutes. Scoop out the flesh of the sweet potato and add to the cooked oats. Stir in your choice of sweetener and cinnamon.

2. Sweet Potato Breakfast Bowl

Ingredients:

1 cooked medium-sized sweet potato

1/2 banana

1/4 cup of milk or milk-substitute

Pinch of cinnamon

Toppings of choice (Nuts, berries, nut butter or granola)

Instructions:

Mash the banana with half of the milk. Add the flesh of the sweet potato, along with the cinnamon and the rest of the milk. Finish by adding your choice of toppings.

3. Sweet Potato and Avocado Sandwich

Ingredients:

1 cooked medium-sized sweet potato, sliced with skin on

1/4 avocado, thinly sliced

2 slices of bread (toasted, if possible)

2-3 tablespoons of soft goat cheese

Mustard

Salt and pepper

Instructions:

Spread the mustard on one piece of bread and the goat cheese on the other. Layer with slices of sweet potato and avocado. Sprinkle with salt and pepper and place the second piece of bread on top.

4. Mediterranean Stuffed Sweet Potato

Ingredients:

1 cooked medium-sized sweet potato

1/4 cup feta cheese, crumbled

2 oz black olives

3-4 sundried tomatoes

Salt and pepper

Instructions:

Let the sweet potato cool as you chop the olives and sundried tomatoes. Combine in a small bowl, along with the feta cheese, salt and pepper. Slice the sweet potato in half and top with the other ingredients.

Ingredients:

1 cooked medium-sized sweet potato, sliced with skin on

1/4 cup canned corn

1/4 cup salsa

Optional: 1/2 sliced avocado, shredded cheese, sour cream, crushed tortilla chips

Instructions:

Let the sweet potato cool. As you wait, combine the black beans, corn and salsa in a small bowl. Cut the sweet potato in half and cover with bean mixture. Add additional toppings, if desired.
