  • 2 cans green beans, drained (14.5 ounces)
  • 1 can condensed, cream-of-mushroom soup (10.75 ounces)
  • 1 can French fried onions (6 ounces)
  • 1 cup shredded cheddar cheese

Directions:

  1. Preheat oven to 350°F
  2. Place green beans and soup in a large microwave-safe bowl
  3. Mix well and heat in the microwave on high, until warm (3–5 minutes)
  4. Stir in ½ cup of cheese and heat mixture for another 2–3 minutes

  • 1 cup yellow cornmeal
  • 2/3 cup white sugar
  • 1 teaspoon salt

  1. Boil sweet potato whole in skin for 40–50 minutes
  2. Run cold water over the sweet potato
  3. Remove the skin
  4. Break apart sweet potato in a bowl
  5. Add butter
  6. Mix butter well with mixer
  7. Stir in sugar, milk, eggs, nutmeg, cinnamon, and vanilla
  8. Beat on medium speed until mixture is smooth
  9. Pour filling into an unbaked pie crust
  10. Bake at 350°F for 55–60 minutes

Directions:

  1. In a large bowl, combine flour, and salt
  2. Cut in butter until mixture resembles coarse crumbs
  3. Stir in water, a tablespoon at a time, until mixture forms a ball
  4. Wrap in plastic and refrigerate for 4 hours
  5. Roll dough out to fit a 9-inch pie plate
  6. Place crust in pie plate
  7. Press the dough evenly into the bottom and sides of the pie plate

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 unbaked pie crust
  • 3 large eggs lightly beaten
  • 1 15-ounce can pumpkin puree
  • 1 ¼ cups evaporated milk
  • (or a 14-ounce can of sweetened, condensed milk)

Directions:

  1. Preheat oven to 400°F
  2. Line a pan with the crust
  3. Bake pie crust for 12–15 minutes
  4. Whisk dry ingredients
  5. Whisk eggs, puree, and milk
  6. Combine (4) and (5), then whisk
  7. Pour (6) into the pan with the pie crust
  8. Bake at 400°F for 45-50 minutes

  • 1 recipe pastry for a 9-inch double-crust pie
  • ½ cup unsalted butter
  • 3 tablespoons all-purpose flour
  • ¼ cup of water
  • ½ cup of white sugar
  • ½ cup of packed brown sugar
  • 8 Granny Smith apples (peeled, cored and sliced)

Directions:

  1. Preheat oven to 425°F
  2. Melt the butter in a saucepan
  3. Stir in flour to form a paste
  4. Add water, white sugar, and brown sugar
  5. Bring to a boil
  6. Reduce temperature and let simmer
  7. Place the bottom crust in your pan
  8. Fill with apples, mounded slightly

  12. Reduce the temperature to 350°F
  13. Continue baking for 35–45 minutes, until apples are soft.

Ingredients:

  • 8 Gala apples cored and quartered
  • 4 sticks cinnamon
  • 1 tablespoon whole cloves
  • 1 teaspoon whole allspice
  • 10 cups water
  • ½ cup brown sugar

Directions:

  1. Place your quartered apples into a slow cooker
  2. Add in cinnamon sticks, whole cloves, and allspice
  3. Pour in the 10 cups of water
  4. Cook on high for 3 hours
  5. Mash the apples with a potato masher
  6. Add in brown sugar
  7. Cook an additional 1–3 hours on low
  8. Strain the solids from the liquids
  9. Discard solids and store liquids in an airtight container

9. Friendsgiving Eggnog

Ingredients:

  • 4 cups of milk
  • 5 whole cloves
  • ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 egg yolks
  • 1 ½ cups sugar
  • 2 ½ cups light rum
  • 4 cups light cream
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground nutmeg

Directions:

  1. Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan
  2. Heat over the lowest setting for 5 minutes
  3. Slowly bring milk mixture to a boil
  4. In a large bowl, combine egg yolks and sugar
  5. Whisk together until fluffy
  6. Whisk hot milk mixture slowly into the eggs
  7. Pour mixture into a saucepan
  8. Cook over medium heat, stirring constantly for 3 minutes, or until thick (do not allow the mixture to boil)
  9. Strain to remove cloves, and let cool for about an hour.
  10. Stir in rum, cream, 2 teaspoon vanilla, and nutmeg
  11. Refrigerate overnight before serving.

  • 1 stick of unsalted butter
  • 2 chopped yellow onion
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 cups chicken stock
  • 1 tablespoon Cognac or brandy
  • 1 tablespoon heavy cream (optional)

Directions:

  1. In a large (10–12 inches) saute pan, cook the butter and onions on medium-low heat for 12–15 minutes (until the onions are lightly browned)
  2. Don’t rush step (1)
  3. Sprinkle the flour into the pan, whisk in
  4. Add the salt and pepper
  5. Cook for 2–3 minutes
  6. Add the hot chicken stock and Cognac
  7. Cook uncovered for 4–5 minutes until thickened
  8. Add the cream (optional)

11. Friendsgiving Mashed Potatoes

Ingredients:

  • Salt
  • 2 ½ pounds potatoes (or ~6 large russet baking potatoes and large Yukon Golds, or all Yukon Golds)
  • 4 tablespoons butter
  • cup whole milk

Directions:

  1. In a large pot, bring a gallon of water and 2 tablespoons salt to a boil over high heat
  2. Peel and quarter potatoes
  3. Keep in cold water until ready to cook
  4. Add potatoes to boiling water and boil about 15–20 minutes, until soft
  5. Heat butter and milk together until butter melts and mixture steams
  6. Drain potatoes well and return to pot
  7. Shake them around in the hot pan or over very low heat for a minute for dry potatoes.
  8. Using an extruding masher or a ricer, mash hot potatoes until smooth (~2 minutes)
  9. Lightly mix in about ½ of the hot-butter mixture until blended

Directions:

  1. In a medium-sized saucepan over medium heat, dissolve the sugar in the orange juice
  2. Stir in the cranberries

  • ½ cup brandy
  • ¼ cup lemon juice
  • 1/3 cup frozen lemonade concentrate
  • 1/3 cup orange juice
  • 1 bottle of dry red wine
  • ½ cup triple sec
  • 1 lemon, sliced into rounds
  • 1 orange, sliced into rounds
  • 1 lime, sliced into rounds
  • 8 maraschino cherries
  • ¼ cup white sugar (optional)
  • 2 cups carbonated water (optional)

Directions:

  1. Use a large pitcher or bowl
  2. Mix together the brandy, lemon juice, lemonade concentrate, orange juice, red wine, triple sec, and sugar
  3. Float slices of lemon, orange and lime, and maraschino cherries in the mixture
  4. Refrigerate overnight for best flavor
  5. For a fizzy sangria, add club soda just before serving.

14. Friendsgiving Brussels Sprouts

Ingredients:

  • 1 ½ lbs fresh brussels sprouts
  • 3 tbsp olive oil (separated)
  • ¾ tsp kosher salt
  • ½ tsp ground black pepper
  • 2 tbsp balsamic vinegar
  • 2 tsp honey

Directions:

  1. Preheat your oven to 425°F
  2. Line a baking sheet with aluminum foil (or use a silicone baking mat)
  3. Trim off the outer, dry leaves, cut the bottom off, and slice lengthwise.
  4. In a large bowl, toss brussels sprouts with olive oil, kosher salt, and freshly cracked black pepper to coat thoroughly.
  5. Transfer the brussels sprouts to a baking sheet and roast until tender and caramelized (~20 minutes)
  6. Place the roasted brussels sprouts back in a bowl
  7. Add the remaining tablespoon of olive oil, balsamic vinegar, and honey and toss to coat evenly

  • Turkey
  • Salt
  • Pepper
  • Chopped onions
  • Carrots
  • Apples
  • Herbs
  • Butter

Directions:

  1. Preheat the oven to 325°F
  2. Pull the neck and giblets out of the cavity
  3. Dry the turkey with paper towels
  4. Season inside and out with salt and pepper
  5. Fill the turkey with chopped onions, carrots, apples, and herbs
  6. Place breast-side up in a roasting pan
  7. Brush with melted butter
  8. Tent with foil and roast for 2 hours (for a 10 to 12-pound turkey; add an extra 15 minutes per pound for larger birds)
  9. Remove the foil, baste with more melted butter
  10. Set oven to 425°F
  11. Roast until the meat at the thigh registers 165°F

16. Friendsgiving Stuffing

Ingredients:

  • 1 (18-ounce, 8-inch round) loaf rustic bread, cut into 1-inch cubes (about 10 cups)
  • 6 tablespoons unsalted butter, divided
  • 2 large yellow onions (about 1 pound), diced
  • 4 large stalks celery, diced
  • 4 cloves garlic, minced
  • ¼ cup finely chopped fresh sage leaves
  • Leaves from 4 sprigs fresh thyme
  • 2 cups low-sodium turkey, chicken, or vegetable broth
  • 2 large eggs
  • 1 teaspoon kosher salt
  • Freshly ground black pepper

Directions:

  1. Dry the bread
  2. Arrange a rack in the middle of the oven
  3. Heat to 225°F
  4. Evenly spread the bread cubes on a large, rimmed baking sheet
  5. Bake until quite crisp, stirring every 30 minutes (90 minutes total)
  6. Remove the bread from the oven
  7. Set oven to 375°F
  8. Cook, the onion, celery, and garlic until tender.
  9. Melt 4 tablespoons of the butter in a large skillet over medium-high heat
  10. Add the onions, celery, and garlic and cook, stirring occasionally, until very soft (about 10 minutes)
  11. Stir in the sage and thyme and cook for 2 minutes more
  12. Remove from the heat.
  13. Mix the toasted bread cubes with the onion mixture
  14. Transfer the toasted bread to a large bowl
  15. Add the onion mixture and fold to combine
  16. Whisk the eggs and broth, and mix in
  17. Place the broth, eggs, and salt in a medium bowl, season with a generous amount of pepper, and whisk to combine
  18. Pour over the bread mixture and stir until evenly combined
  19. Put into a baking dish and top with more butter
  20. Lightly grease a 3-quart baking dish
  21. Transfer the bread mixture into the baking dish

  23. Melt the remaining 2 tablespoons of butter and drizzle over the top

17. Friendsgiving Turducken

Ingredients:

  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1-gallon water
  • 18 to 21-pound turkey, skin intact and boned except for drumsticks
  • House Seasoning*
  • Cornbread Dressing*
  • 3- to 4-pound duck, boned
  • 3- to 4-pound chicken, boned
  • Paprika

Directions:

  1. Brine: Mix salt and sugar with the water
  2. Brine is ready when the mixture is completely dissolved
  3. If the water is heated to quicken the process, make sure it is cooled to room temperature before placing meat in
  4. Let the 3 birds sit in brine in the refrigerator overnight
  5. Preheat roaster to 500°F
  6. Lay turkey skin side down on a flat surface
  7. Dust turkey with House Seasoning
  8. Add a ¼-inch layer of cornbread dressing
  9. Lay duck skin side down on top of the dressing
  10. Dust duck with House Seasoning
  11. Add a ¼-inch layer of dressing
  12. Repeat with the chicken
  13. Begin trussing up the turkey at the neck
  14. Insert metal skewer about ½-inch from the edge and up through the other side
  15. Run butcher’s twine between skin and skewer and tighten to draw both sides together.
  16. Continue down to legs
  17. With every other skewer, draw together the duck and chicken skin
  18. Tie together turkey legs to resemble a standard turkey
  19. Dust turkey skin with paprika.
  20. Roast turducken for 15 minutes
  21. Turn the roaster down to 225°F to finish, approximately 3 hours
  22. Remove turducken from roaster once the internal temperature in the chicken reaches 155°F

18. Friendsgiving House Seasoning:

  • 1 cup of salt
  • ¼ cup black pepper
  • ¼ cup garlic powder
  • Mix

19. Friendsgiving Cornbread:

  • 1 cup self-rising cornmeal
  • ½ cup self-rising flour
  • ¾ cup buttermilk
  • 2 eggs
  • 2 tablespoons vegetable oil

20. Friendsgiving Dressing:

  • 7 slices white bread, dried in a warm oven
  • Cornbread
  • 1 sleeve saltine crackers
  • 2 cups chopped celery
  • 1 large onion, chopped
  • 8 tablespoons butter
  • 7 cups chicken stock
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried sage
  • 1 tablespoon poultry seasoning
  • 5 eggs, beaten

(19 & 20) Directions:

  • Preheat oven to 350°F
  • Cornbread: combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20–25 minutes
  • Let cool
  • Dressing: crumble dried white bread slices, cornbread, and crackers
  • Mix together and set aside
  • Sauté chopped celery and onion in butter until transparent, approximately 5–10 minutes
  • Pour over cornbread mixture
  • Add stock, mix well and add salt, pepper, sage, and poultry seasoning
  • Add beaten eggs and mix well
