8 Easy Cupcakes For Any Occasion That Will Make You A Baking Fan

Cupcakes are such a delicious treat to make and eat! It doesn’t matter if you have a classy reunion, a tea party or just a lunch at your best friends’ house, it’s always a good time to add cupcakes to the menu. Some people have even started making cupcakes and a small representative cake they don’t really cut during the celebration, instead they hand out the cupcakes. Many others use the cupcakes to give them to their party guests as a small thank you gift when they leave. Either way you decided to use your cupcakes, even if you bake them just for yourself, we bring you a few cupcake recipes you definitely need to try!

1. Chocolate Chip Cupcakes

Chocolate chip cupcakes are such a classic combination that matches so well. This recipe is easy to make, and the result are light, moist cupcakes you can use for a bake sale, as a gift or for any party! To make these cupcakes you will need:

  • 1 stick of unsalted butter
  • 1/2 cup of brown sugar
  • 3 eggs
  • 1/2 cup of heavy cream
  • 1 ½ cups of all-purpose flour
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • 2 tsp of vanilla
  • 2 cups of mini chocolate chips

Start by combining the butter, brown sugar and heavy cream in your mixer. Then add the vanilla and eggs, one at the time until its well combined. Proceed to add the rest of the ingredients until well combined. lastly, add the chocolate chips and spoon into a cupcake tin with liners. Bake for about 20 minutes at 350 degrees. When ready let them cool down and frost with your favorite frosting. Our favorite match for this would be a cookie dough frosting!

2. Lemon Cupcakes

Specially for the heavy heat and summer parties this lemon cupcakes will be a refreshing treat to add. These are not only easy to make but the result is a delicious yellowish lemony cupcake your friends are going to start asking for you to take them to any celebration! To make these cupcakes you will need:

  • 3 cups of self-rising flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 2 cups white sugar
  • 4 eggs at room temperature
  • 1 tsp vanilla extract
  • 2 tsp lemon zest
  • 1 cup whole milk (divided), room temperature
  • 3 tsp fresh lemon juice (divided)

Beat the unsalted butter and sugar with your mixer until light and fluffy. Add the eggs one at the time then the vanilla and lemon zest until when combined. Proceed to combine the flour, salt, milk and the lemon juice and beat until well combined, don’t overmix. Fill the cupcake liners with the batter and bake for about 175 degrees for approximately 15 minutes. When the cupcakes are done and cooled down frost them as desire. We recommend a lemon buttercream for this particular recipe!

3. Vanilla Cupcakes

A classic flavor that matches any occasion perfectly. These ones are not only easy to make the result is a super moist and fluffy cupcake that you will feel like doing any afternoon to eat with your favorite hot beverage. To make these you will need:

  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1 cup water

Start by mixing the flour, sugar, baking powder and salt until combine, set aside for a while. Then mix the milk, vegetable oil, vanilla extract and eggs and combine. Take the wet mixture and slowly combine it with the dry ingredient mixture, add the water on low speed until everything is well combined. fill the cupcake liners and bake for approximately 18 minutes at 175 degrees. When your cupcakes are done and cooled down be sure to frost them with your favorite frosting, we recommend a rich chocolate one to make a delicious contrast!

This recipe is actually quite easy, and you will impress your friends with these little treats on any occasion. The ingredients you will need for these cupcakes are:

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup full-fat sour cream
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe bananas

Start by mixing the butter and sugar until light and fluffy. When the sugar is creamy enough add the eggs, sour cream, baking soda and spices until just combined.   • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 3/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup milk or buttermilk
  • 1/3 cup oil
  • 1 tsp vanilla extract
  • 1/2 cup boiling water

Start by sifting together the sugar, flour, cocoa, baking powder, baking soda and salt into a large bowl. Add the egg, oil, milk and vanilla until just incorporated. Then pour the boiling water into the mixture and mix until its fully incorporated. Place the batter in the cupcake liners and bake for about 20 minutes at 175 degrees. Take your cupcakes out of the oven when done and let them cool down. Frost them with your favorite recipe when cold, we recommend a caramel buttercream!

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (room temperature)

A small twist on the regular churro you can have at fairs! These churro cupcakes have a mouthwatering combination of cinnamon sugar flavor and churro flavor that will melt everyone who tries these cupcakes. And the best thing is they are super easy to make at home! For this recipe you will need:

  • 1 2/3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup unsalted butter (room temperature)
  • 3 egg whites
  • 3 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whole milk

Start by mixing all the dry ingredients until well combined. then add the resulting wet ingredients until they are well combined. It doesn’t matter if the mixture looks a little lumpy, that is fine. Divide the batter evenly into the cupcake liners and bake for about 20 minutes. When your cupcakes are done, get them out of the oven and let them cool down before frosting them. We recommend a cream cheese frosting topped with a cinnamon sugar mixture and some Cinnamon Toast Crunch Churros cereal as a garnish!

8. Pumpkin Cupcakes

This recipe in particular works perfectly for the fall season when you have lots of autumn gatherings with friends and family. The pumpkin cupcakes are super soft, moist and they have that rich pumpkin flavor everyone loves! To make this you will need:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ginger powder
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup pure pumpkin
  • 1/3 cup milk

Start these cupcakes by whisking the flour, cinnamon, ginger, nutmeg, baking powder, baking soda and salt, set aside. Then mix the oil, sugars, eggs, vanilla extract and pumpkin. Then add the dry ingredient mixture slowly and the milk. Add the batter to your cupcake tins lined up with liners and bake for about 18 minutes at 175 degrees. Take the cupcakes out when done and frost when they have cooled down. Our favorite frosting for these cupcakes would be a cinnamon cream cheese frosting, be sure to try it!
