Easy Breakfast Recipes To Make If You’re Late For Class

We’ve all been there. Frantically running around with eyes barely open grabbing at anything in sight to eat before you make a mad dash to campus. Don’t let breakfast be another worry to add to your morning. Here are some easy breakfast recipes to make in under 5 minutes if you’re late to class to ensure the rest of your day goes a bit more smooth than your morning did! 

1. Yogurt

Yogurt is no-doubt the easiest grab-and-go breakfast on a busy morning. While it’s easy, it could also get a bit boring after a while. Some of the ways that I like to make my yogurt more exciting are so easy and delicious that you’ll wish you were doing them sooner. I like to take the yogurt out of its original packaging and put it into a slightly bigger bowl to make room for the toppings. Granola, my favorite is vanilla almond, and fruit, like strawberries or bananas, are always my go-to for making yogurt more exciting. Drizzle with some honey or add a dollop of Nutella and you’ll be good to go! This will take no more than 5 minutes and will be sure to keep you full until lunch, or at least through your first class. 

2. Avocado Toast

Ah, yes. The most beloved food by VSCO girls and millennials across the globe. Can you blame them for their obsession, though? Avocado toast was sent to earth by the gods above. If you don’t like avocado toast, I’m convinced you’re just not making it the right way. My favorite way to prepare this divine treat is very simple. Start with a slice or two of wheat bread and pop it in the toaster for 3 minutes. While your bread is toasting, grab an avocado and slice it in half. I use one half of an avocado per piece of bread. How the avocado is presented on the toast is totally based on preference. I like to mash mine with a fork on a separate plate and spread it on the toast. After the avocado is on the toast, I like to add salt, pepper, garlic powder, red pepper flakes, hot sauce, and honey. I’ve never tried, but I hear great things about the Everything But The Bagel Seasoning! There are dozens of ways and flavor combinations to make avocado toast, so get creative! Maybe not too creative, though. I mean, you are late for class!

3. Eggs

The most versatile of the breakfast food is definitely the egg. Eggs are the easiest breakfast of all time and they can be cooked a million different ways. Literally. Eggs can be scrambled, cooked over easy,  fried, or even hard-boiled. They can be paired with toast or veggies like tomatoes, onions, peppers, mushrooms, etc. They can be eaten with salsa and avocado (my personal favorite). I love to scramble an egg with some cheddar cheese and put it on a wrap with avocado, salsa, and some sour cream for an easy breakfast burrito. Eggs are the busy college students’ best friend. So many possibilities than can be made in literal minutes. 

4. Smoothie

Smoothies are a great choice for an easy and fulfilling breakfast recipe. If you’re too tired to take a spoon to yogurt and raise it to your mouth, throw it in the blender! Grab a yogurt and your favorite milk (mine is oat milk) from the fridge and blend them together with your fruit of choice and you have a portable, easy breakfast you can scarf down on your way to campus. Add some honey or cinnamon to your smoothie mix for a little boost of flavor and you’ll be good to go! My go-to smoothie on a busy morning is vanilla yogurt, oat milk, bananas, a dollop of peanut butter, and a sprinkle of cinnamon. I like my smoothies on the thick side so I don’t blend it for very long. If you like your smoothies less-than-thick, keep in the blender for a few seconds longer! Throw your smoothie in a mason jar or your favorite travel cup with an environmentally friendly straw and not only are you nourishing your body, but you’re also looking cute while doing it!

5. Oatmeal

A little pack of instant oatmeal can be transformed into a quick meal that will make you feel like a chef and an influencer wrapped in one with just a few steps. Grab your favorite flavor of oatmeal, mine is brown sugar cinnamon, and heat that up whichever way you prefer. I like to make mine with milk (oat milk) instead of water to make it a bit more creamy. I then like to add some apple slices and cinnamon to mine, but use whatever fruit tickles your fancy at the moment. Some other great fruit combinations can be bananas and strawberries or strawberries and blueberries. I top it off with a drizzle of honey and make it look cute. Post an Instagram story of your creation real quick to flex on your followers with this magnificent breakfast you made, when in reality it took you 3 minutes and you’re rushing out the door like a crazy person. They don’t have to know!

6. Fruit

So simple, yet so satisfying. Fruit can be eaten on its own or can be paired with toast, peanut butter, Nutella, honey, cinnamon, etc. Some really easy ways to enjoy fruit for breakfast can be sliced banana with peanut butter on toast, Nutella and sliced strawberries on toast, apple slices dusted with cinnamon dipped in Nutella or peanut butter (or both!), or simply just grab a banana or an apple on your way out to eat on the way to class. Proceed with caution. We don’t need any apple-related injuries as you run to class!
