8 Easy Breakfast Ideas For When You’re Running Late
When you’ve slept through your alarm or you’re already running late to work, school, or any sort of morning event, breakfast is pretty much the last priority. Getting ready quickly and getting out the door is the main mission, and cooking a full meal has no place in those crazy mornings.
Still, breakfast is the most important meal of the day, and even when you’re running late, it shouldn’t be skipped! For those days when you simply don’t have the time, here are eight fast and easy breakfast ideas that will leave you feeling full and ready for the busy day ahead.
1. Smoothie
If you have a blender, making a smoothie in the morning is a super easy breakfast, and you can completely customize it to include whatever ingredients you want! You can make smoothies in a matter of minutes, and then you can take them on the go with you! Smoothies don’t have to be consumed at home; they’re perfect for taking out the door.
Here are some examples of delicious and simple smoothie combinations that you can try:
- Spinach, coconut milk, and frozen pineapple or mango
- Frozen strawberries, a banana, and vanilla yogurt
- Kale, blackberries, and frozen blueberries
- Milk, a banana, peanut butter, and oats

2. Overnight Oats
While this requires some planning ahead, overnight oats are a super easy breakfast for when you know you’ll be short on time in the morning. You can make these the night before, as they have to be refrigerated for about eight hours before being eaten.
Here’s a very standard recipe for the base of overnight oats:
- ½ cup of the milk of your choice
- ½ cup of old-fashioned rolled oats
- ¼ cup of vanilla yogurt
- 1 tablespoon of maple syrup or honey
- ¼ teaspoon of vanilla extract
Simply combine all the ingredients above in a jar, cover it, shake well, and leave it in the fridge during the night. When you wake up, you’ll have a delicious and easy breakfast ready to go! Most people add in extra ingredients in the morning, such as various fruits, peanut butter, cinnamon, nuts, and chocolate chips. You can pretty much mix in anything you’d like!
3. Eggs Any Style
Eggs can sound like a big undertaking on mornings when you’re already running late, but they truly do not take much time to make. A couple scrambled eggs can be done and ready to eat in two minutes, and the same goes for fried or sunny-side-up eggs. The cook time on these is much shorter than you might think.
Also, another great tip is to make boiled eggs when you do have spare time to keep in your fridge. You can grab them quickly and head on the door on the mornings when you really don’t have a single second for breakfast!
4. French Toast In A Mug
You can make this easy breakfast in just a few minutes… in your microwave! All you need is the following:
- A mug
- 1 cup of small bread pieces (use sourdough or french bread)
- 1 egg
- 3 tablespoons of milk
- 1 teaspoon of butter
- 1 teaspoon of syrup
- ¼ teaspoon of vanilla extract
- ¼ teaspoon of cinnamon
First, you need to place the butter in the mug and microwave it until it’s fully melted. Then add all of the ingredients except for the bread pieces and mix it together. Finally, add the bread pieces and stir everything around, and then microwave the full mug for about 90 seconds. You can add on 20 second intervals after that if it’s not hot enough or doesn’t seem fully cooked.
Now just add your preferred french toast toppings (syrup, whipped cream, berries, etc.) and you’re all set!
5. Yogurt &…
You can add so much to a simple bowl of yogurt. Choose a plain flavor, such as a vanilla, and mix in some granola and fruit! This is possibly the easiest breakfast idea of all time, and it’s super quick to make and to consume. Strawberries and blueberries are great fruits to add, and even honey can make a world of difference to a bowl of yogurt.
6. Egg Cups
This is another make-ahead breakfast idea, but if you put aside some time to make these one night, you’ll be thanking yourself every morning for the rest of the week. Egg cups, or egg muffins, are super easy to make and they reheat well.

7. Bread… In All Forms
You can never go wrong with toast, bagels, or English muffins. It’s super easy and fast to make all of these things in either a toaster or an air fryer, and you’ll definitely thank yourself later for eating something filling in the morning, even if it is just bread.
You can add peanut butter, avocado, jam, or anything else that you like to your bread, and you can mix this breakfast up in a lot of different ways. This is also another easy breakfast that you can grab and go; it travels pretty well!
8. Air Fryer Cinnamon Rolls
This is last on the list because cinnamon rolls tend to be more of a dessert than a filling breakfast, but who doesn’t want something sweet in the morning every once in a while? Plus, if you have an air fryer, this can be made extremely quickly and easily!
All you need is a standard package of Pillsbury Cinnamon Rolls, and you can make as many as you want. Try spraying the air fryer with something such as coconut oil and place them in the basket facing up. Once they’re in there, cook them for about 8 minutes at 360 degrees fahrenheit. You can cook them for another minute or for a minute less, depending on you prefer your cinnamon rolls.
While this is a bit of a treat, it’s an easy breakfast that you can throw in the air fryer while you’re still getting ready, and something this delicious and sweet will be sure to put you in a good mood for the rest of the day!
