5 Easy and Delicious Dessert Recipes

1. Chocolate Mousse.

Our first dessert recipe is an easy and delicious chocolate mousse. This recipe only has a few ingredients, and makes a small enough batch that you won’t need to worry about storage. You can also garnish it with whipped cream or fresh fruit and berries if you want. If you’re planning on sharing this chocolatey goodness, you should make several batches. Mousse goes well with berries, cookies, or shortbread, but is delicious enough to stand on its own if that’s how you prefer it. 

  • Ingredients:
    • 1/4 Cup Semisweet chocolate Chips.
    • 1 Tablespoon water
    • 1 Large egg yolk, lightly beaten
    • 1 and 1/2 teaspoons vanilla extract.
    • 1/2 Cup heavy whipping cream
    • 1 Tablespoon sugar
  • Directions:
    • In a small saucepan, melt the chocolate chips with the water, stirring until smooth. 
    • Stir about a tablespoon of the melted chocolate mixture into the egg yolk, then add it to the pan, stirring constantly. 
    • Stir and cook for about two minutes, or until slightly thickened. 
    • Remove from heat and stir in vanilla, then quickly transfer the mixture to a small bowl, Stirring occasionally until completely cooled. 
    • In a small bowl, beat the whipping cream until it begins to thicken, then add sugar and beat until soft peaks begin to form. 
    • Fold the cream and sugar mixture into the cooled chocolate mixture. 
    • Cover and refrigerate for at least two hours.

2. Chocolate Paninis. 

This funny little dessert recipe is quick, easy, and kind of hilarious. It goes great with fresh or grilled fruits, and its incredibly simple in terms of what you need. This particular recipe makes four sandwiches, so its great if you’re having some friends over and want to surprise them with something unique. 

  • Ingredients:
    • 8 Slices Challah bread or Hawaiian sweet bread, about 3/4 of an inch thick. 
    • 2 Tablespoons butter, melted. 
    • 6-8 ounces semisweet chocolate, finely chopped. 
    • Powdered Sugar. 
  • Directions:
    • Heat a large grill pan or heavy non-stick skillet over medium-low heat. 
    • Brush one side of each slice of bread with melted butter. 
    • Set half the slices of bread on a parchment or cutting board, buttered side down, and sprinkle with chocolate, but try not to get the chocolate closer than 1/4 inch to the crust. 
    • Complete the sandwiches with the remaining bread slices, buttered side facing up, away from the chocolate. 
    • Cook the sandwiches in the pan, 2 at a time. Remember to weigh the sandwiches down with another heavy pan or skillet. 
    • Grill the sandwiches for 6-8 minutes over medium-low heat, or until the bread is golden-brown and the chocolate is melting. Make sure to flip the sandwich halfway through. 
    • Repeat with remaining sandwiches. 
    • Dust with powdered sugar, cut into quarters, and serve warm.

3. Vegan Coconut Chocolate Bars

This dessert recipe only has a few ingredients, is simple to make, and is entirely vegan. It also requires no baking at all. It does need a food processor in order to make correctly, but that’s an investment you’ll need to make eventually. Enjoy!

  • Ingredients (Bars):
    • 2 and 1/2 cups of unsweetened Coconut flakes. 
    • 2 tablespoons coconut oil
    • 1/4 cup and 2 tablespoons coconut cream 
    • 3 tablespoons maple syrup

    • 1/2 cup chocolate chips (vegan possible) 
    • 1/4 cup coconut cream. 
  • Directions (Bars)
    • Line an 8-inch square baking pan with parchment paper. 
    • Mix coconut flakes, oil, coconut cream, and syrup in a food processor. Blend until you get a sticky mixture with very small coconut pieces. The size of the pieces determines how crumbly the bars will be. 
    • Pour the mixture into the baking pan. Press down and smooth until tightly packed. Set aside. 
  • Directions (chocolate topping):
    • Place chocolate topping ingredients in a medium, microwave safe bowl. 
    • Heat in 15 second increments, until just beginning to soften and melt. Stir thoroughly between each 15-second interval, until well mixed. 
    • Pour melted chocolate mixture over the coconut bars and smooth down with a spatula. 
    • Freeze for 40-70 minutes and enjoy. 

4. Microwave Peanut Butter Fudge. 

This next dessert recipe is probably the simplest on the entire list. It can be made in just a few minutes, only has three ingredients, and you only need a few basic tools to prepare it. It also makes quite a few servings, so you get a lot of reward for very little work. Extremely efficient and very delicious.

  • Ingredients:
    • 8 ounces unsalted butter
    • 1 cup creamy peanut butter
    • 1 pound powdered sugar. 
  • Directions:
    • Line an 8×8 inch pan with parchment paper. If you let the parchment hang over the sides, its easier to get the fudge out later. 
    • In a microwave safe bowl, combine butter and peanut butter. Microwave for one minute and stir. Microwave for another minute and stir until mixture is smooth and completely incorporated. 
    • Add powdered sugar and stir until smooth. You’ll know the batter is ready when it becomes  thick and paste-like. 
    • Spread the batter onto the lined pan. With another sheet of parchment paper, cover the batter and press down to ensure the batter is flat and even.
    • Refrigerate for at least 2 hours, remove the fudge from the pan, cut into cubes with a knife, and enjoy.

5. Vegan Chocolate Chip Cookies. 

Another vegan dessert recipe, these chocolate chip cookies are a classic treat that can be enjoyed by vegans and non vegans alike. These cookies go from ingredients to ready in just about half an hour. Easy, fast, and delicious, this dessert recipe is the perfect way to round off the list. 

  • Ingredients:
    • 2 cups all-purpose flour
    • 1 and 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup brown sugar
    • 1/2 cup melted coconut oil 
    • 1/3 cup tahini
    • 6 tablespoons water
    • 2 teaspoons vanilla extract
    • 1 heaping cup of dark chocolate chips. 
  • Directions
    • Preheat the oven to 350 degrees, and line two baking sheets with parchment paper. 
    • In a medium-sized bowl, whisk together flour, salt, baking powder, and baking soda until combined. 
    • In a large bowl whisk together brown sugar, coconut oil, tahini, water and vanilla extract until smooth. 
    • Pour the dry ingredients into the bowl with wet ingredients and use a spatula to combine. Fold in the chocolate chips. Use a large spoon or scoop the dough onto the baking sheets. 
    • Bake, one sheet a time for 12-14 minutes. After removing a sheet from the oven, let it cool for about 10 minutes before eating the cookies. 
    • Enjoy.
