Add the butter to a large mug and microwave until melted.
Remove from the microwave and whisk in the brown sugar (I use a fork for this).
Ensure that the butter isn’t too hot (otherwise, you’ll scramble the egg), then whisk in the egg yolk and vanilla extract.
Stir in the flour (the mixture should be thick like cookie dough), then stir in the chocolate chips.
Microwave on medium power (50-70%) for 60-90 seconds or until the top looks just set. Do not microwave on high power, otherwise, the cookie can become hard and the chocolate can burn. I check after 60 seconds to see, then add an extra 15 seconds as needed.
Enjoy immediately, optionally with a scoop of ice cream.
Fall is fast approaching and so this mug recipe is the perfect dessert for the season out of all of the cheap mug recipes. Grab your spoon because with just some ingredients and instructions you’ll be ready for all the seasonal feels.

Place the butter in a microwave-safe mug that holds at least 10 ounces, and microwave on LOW until melted. Stir in the crushed gingersnaps and press the mixture firmly into the bottom of the mug.
In a separate small bowl, whisk together the pumpkin purée, egg, milk or cream, brown sugar, and pumpkin pie spice. Pour into the mug with the gingersnap “crust.”
Place the mug on a microwave-safe plate. Microwave on full power for 2 to 5 minutes, or until a knife inserted in the center of the mug pie comes out clean. The top may look slightly damp but it will set as it cools. (Cooking time will vary greatly depending on your microwave and the width and depth of the mug. Start with 2 minutes and continue cooking in 30-second increments until it is done.)
Use a hot pad or oven mitt to carefully remove the mug from the microwave. Let it stand for a couple minutes to cool, then top, if desired, with whipped cream and crushed nuts before eating.

In an 8 oz microwave-safe mug, add cocoa, flour, and sugar. Whisk together with a mini whisk.
Add in oil and water. Whisk briskly until batter is smooth, making sure to break up any cocoa or flour lumps.
Add half the chocolate to the mug and briefly stir into batter. Sprinkle remaining chocolate on top of the batter.
Cook cake for about 40 seconds at full power. (I used a 1000 watt microwave. You may need to adjust time and/or power if you are using a different wattage.) The top of brownie should no longer be wet but may still be a little moist. Allow brownie to cool a few minutes and then eat the brownie while warm.
