Easy And Cheap Mug Recipes For Any College Foodie

No one has time for a full-blown out meal anymore. Especially when you’re in between watching Netflix and going out for the night. That’s why these cheap and easy mug recipes will get you to either help cool down your sugar cravings or will fuel you for a night out! Enjoy these great and cheap mug recipes that’ll make college like even simpler. 

1. Cinnamon Roll In A Mug

Vegan, Oil-free and one minute to make! If you love cinnamon rolls then this is the perfect breakfast or dessert for you! Grab your fork because this is going to be one mug recipe you don’t want to miss out on! 

Ingredients: 

  • 9 level tablespoons all-purpose flour
  • ¾ teaspoon baking powder
  • a pinch of salt
  • Around 3-4½ tablespoons water
  • A tiny dab of oil for greasing the mug coconut or mild olive oil/vegetable oil
  • ¾ teaspoon cinnamon
  • tablespoons coconut sugar you can sub any fine sugar – don’t use one with large chunky grains unless you don’t mind the grainy texture when it’s cooked
  • ½ teaspoon water

For the Frosting:

  • 3 tablespoons natural powdered sugar
  • A drop of plant-based milk or water around ¾ teaspoon

Instructions: 

  • Grease a normal-sized drinking mug (just a standard medium-sized one) with a tiny dab of oil. Be sure to reach into the bottom and the edges well.
  • First, make the frosting. In a small bowl mix the powdered sugar with either plant-based milk or water. Add the liquid a tiny bit at a time. It doesn’t take much at all and the most you will need is ¾ teaspoon of water, perhaps a tiny drop more if you are using milk. Stir well until smooth then set aside.
  • Add the flour, baking powder and salt to another small bowl and stir to combine.
  • Gradually add the water (from the 3-4½ tablespoons, stirring until it starts to form a dough then use your hand to bring it together, kneading a few times until its a smooth, flexible ball of dough. If you do accidentally add a drop too much water and it’s a bit sticky, add a little tiny bit more flour. If it’s very dry and won’t come together, add a drop more water. Only handle it as much as you need to.
  • Dust your work surface with a little flour, then roll your dough out into a long strip about 4 inches wide and a couple of millimeters thick
  • Sprinkle the coconut sugar and cinnamon evenly over the dough then fold the edges inwards to seal it in and stop it all falling out when you lift it into the mug.(see my video above).
  • You will be left with a long narrow strip that you can roll-up.
  • Roll it up and gently lift it and place it in the greased mug.
  • Pour over ½ teaspoon water then place in the microwave.
  • Microwave uncovered on full power for around 45 – 50 seconds. My microwave is 1200 watts. You may need to adjust the time a bit up or down. All microwaves are different so be careful not to overcook it. If you overcook it, it will become tough so be sure to check how powerful your microwave is first and adjust accordingly. The very maximum time it will need is about 1 min 10 seconds and that is only if you have a really low powered microwave. Remember that it will continue to cook a little bit after you remove so a tiny bit underdone is better than overdone as then it will go tough. If it needs longer cook in 5-second increments to avoid overcooking it.
  • It should have swollen up nicely when you check it and if you insert a toothpick or skewer into the dough it should come out clean. It is normal for the top and sides to be a little soft & damp & look a bit doughy when you first take it out because it has basically steamed in the mug.
  • Turn out onto a plate and spoon over the frosting. Eat immediately.

2. Chocolate Chip Mug Cake

This is a classic and you really cannot go wrong with some good cookie dough in a warm mug! 

Ingredients: 

  • 1 1/2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 large egg yolk (discard the egg white)
  • 1 drop (or 1/8 teaspoon) vanilla extract
  • 3 tablespoons all-purpose flour
  • pinch of salt (optional)
  • 2 tablespoons of chocolate chips
  • Brown sugar or white
  • Milk or egg yolk

Instructions:

  • Add the butter to a large mug and microwave until melted.

  • Remove from the microwave and whisk in the brown sugar (I use a fork for this).

  • Ensure that the butter isn’t too hot (otherwise, you’ll scramble the egg), then whisk in the egg yolk and vanilla extract. 

  • Stir in the flour (the mixture should be thick like cookie dough), then stir in the chocolate chips.

  • Microwave on medium power (50-70%) for 60-90 seconds or until the top looks just set. Do not microwave on high power, otherwise, the cookie can become hard and the chocolate can burn. I check after 60 seconds to see, then add an extra 15 seconds as needed.

  • Enjoy immediately, optionally with a scoop of ice cream. 

3. Pumpkin Pie In A Mug

Fall is fast approaching and so this mug recipe is the perfect dessert for the season out of all of the cheap mug recipes. Grab your spoon because with just some ingredients and instructions you’ll be ready for all the seasonal feels. 

Ingredients:

  • 1/3 cup pumpkin puree
  • 1 large egg
  • 1 tsp. brown sugar, packed
  • 1 tsp. pumpkin pie spice
  • 14 grams gingersnaps
  • 1 tsp. butter, unsalted
  • 1 tsp. milk or cream

Instructions:

  • Place the butter in a microwave-safe mug that holds at least 10 ounces, and microwave on LOW until melted. Stir in the crushed gingersnaps and press the mixture firmly into the bottom of the mug.

  • In a separate small bowl, whisk together the pumpkin purée, egg, milk or cream, brown sugar, and pumpkin pie spice. Pour into the mug with the gingersnap “crust.”

  • Place the mug on a microwave-safe plate. Microwave on full power for 2 to 5 minutes, or until a knife inserted in the center of the mug pie comes out clean. The top may look slightly damp but it will set as it cools. (Cooking time will vary greatly depending on your microwave and the width and depth of the mug. Start with 2 minutes and continue cooking in 30-second increments until it is done.)

  • Use a hot pad or oven mitt to carefully remove the mug from the microwave. Let it stand for a couple minutes to cool, then top, if desired, with whipped cream and crushed nuts before eating.

4. Fudge Cocao Mug Brownie

Ready in five minutes? get your dessert on!

  • 1 1/2 tablespoon all-purpose flour
  • 2 1/2 tablespoon cocoa powder, dutch process
  • 1 1/2 tablespoon dark chocolate
  • 2 tablespoon white sugar granulated
  • 2 tablespoons oil
  • 2 tablespoons water

Instructions: 

  • In an 8 oz microwave-safe mug, add cocoa, flour, and sugar. Whisk together with a mini whisk.

  • Add in oil and water. Whisk briskly until batter is smooth, making sure to break up any cocoa or flour lumps.

  • Add half the chocolate to the mug and briefly stir into batter. Sprinkle remaining chocolate on top of the batter.

  • Cook cake for about 40 seconds at full power. (I used a 1000 watt microwave. You may need to adjust time and/or power if you are using a different wattage.) The top of brownie should no longer be wet but may still be a little moist. Allow brownie to cool a few minutes and then eat the brownie while warm. 

5. Pizza In A Mug

For those nights you don’t want to order in, you can make a pizza right in your mug! 

Ingredients: 

  • Refrigerated biscuits
  • spaghetti sauce
  • pepperoni
  • mozzarella
  • of course a mug!

Instructions: 

  • First, make sure to spray the inside of your mug with nonstick spray. Then lay a Grands (large) refrigerated biscuit at the bottom.
  • Microwave for 30 seconds.
  • Spoon 2 tsp. of spaghetti sauce in the middle of your partially cooked biscuit. Sprinkle some cheese over that. Add your toppings.
  • Microwave for 1 minute. Enjoy your pizza in a mug!

6. Mac ‘N Cheese In A Mug

Another great lunch or dinner option when you don’t feel like moving all too much. All you’ll need is a mug, microwave, and some simple ingredients. 

Ingredients: 

  • a large mug
  • a liquid measuring cup
  • a 1/3 cup dry measuring cup
  • elbow noodles
  • some pre-shredded cheese
  • a little milk
  • and water

Instructions: 

  • Put the macaroni and the water into a mug. Microwave on full power for 2 minutes.
  • Microwave for another minute. Stir.
  • Microwave for a fourth minute, and then check to see that all the water has been absorbed.
  • Stir in the milk and shredded cheese and microwave for a final 30-60 seconds.
