Who doesn’t love eclairs? They are so good, and you will love them. This is one of my favorite desserts with graham crackers that I know you’ll want to eat more of.

1. Beat the pudding and milk in a large bowl with a whisk for about two minutes. Let it stand for five minutes. Cover the bottom of an 8-inch square pan with graham cracker squares, overlapping the squares as needed.
2. Stir the cool whip into the pudding. Spread half over the graham cracker squares, and then cover the cool whip with ten more graham cracker squares. Repeat until you use all of the graham crackers and the cool whip.
3. Refrigerate for three hours. Then spread the chocolate frosting over the cool whip. Enjoy!
This toffee is really easy to make, it only has five ingredients. And it tastes like real toffee. This is another one of my favorite desserts with graham crackers.

1. Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper or aluminum foil. Spray lightly with nonstick cooking spray. Place the graham crackers in a single layer, touching, on the baking sheet. Set it aside.
2. In a medium saucepan, melt butter and brown sugar together over medium-high heat. Bring butter and brown sugar mix to a boil, and then simmer for four minutes, stirring constantly. Pour the mixture evenly over the graham crackers. Bake for 8 minutes.
3. Remove the pan from the oven and immediately sprinkle chocolate chips evenly over the top of the graham crackers. Let the chocolate chips sit for two minutes so they can melt. Spread the melted chocolate with a knife or a rubber spatula. Sprinkle almonds or pecans on top.
4. Let the graham cracker toffee sit for about two hours, or until the chocolate hardens. Break the toffee into pieces once the chocolate is set. Enjoy!
This cookie is filled with chocolate chips, graham crackers, and nuts. This is another one of my favorite desserts with graham crackers, and you’ll love it, too.

1. Preheat the oven to 350 degrees. Line a 9-inch square pan with foil or parchment paper. Crush the graham crackers in a food processor or a ziplock bag with a rolling pin.
2. Add crumbs and sugar to a large bowl. Add milk, butter, and vanilla to the bowl. Mix until well blended, then fold in chocolate chips and walnuts.
3. Spread evenly into the pan. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean. Cool completely and cut into squares.
These brownies are made with peanuts, so don’t make them if you’re allergic. This is another one of my favorite desserts with graham crackers and I hope you like it.

2. Crush the graham crackers in a food processor. You want them broken up into smaller pieces but not a powder. Chop the peanuts however you like.
3. In a large bowl, mix all the ingredients except for the powdered sugar, until they’re well combined. The dough will be thick.
4. Dump the mixture into the prepared pan and press down. Smooth the top flat. Chill for 30 minutes to two hours.
5. Remove the bars from the refrigerator. Put the powdered sugar into a mesh strainer, and sprinkle over the top of the bars. Cut into squares and serve.
6. Store in an airtight container. They’ll be fresh for up to a week. Enjoy!
