Delicious Vegan Recipes To Bring In The Fall Weather

Fall is on its way and cooler weather’s upon us, so that’s mean it’s time to make some delicious food that’ll warm us up! Here are 5 tasty vegan recipes that’ll help you bring in the fall this year. 

1. Vegan Pumpkin Ravioli

Ravioli Dough Ingredients:

  • 1, 1/2 Cups All-Purpose Flour
  • 1, 1/2 Cups Whole Wheat Flour
  • 1 Cup Water (room temperature or slightly warmed)
  • 1/2 Tsp Sea Salt

Pumpkin Filling Ingredients:

  • 1 Cup Pumpkin Puree
  • 1/3 Cup Raw Cashews (soaked 20 minutes in boiling water)
  • 1/3 Cup Nutritional Yeast
  • 1 Tbsp Lemon Juice
  • 3 Garlic Cloves
  • 1/2 Cup Low Sodium Vegetable Stock
  • 1 Tsp Sea Salt
  • 1 Tsp Sage
  • 1 Tsp Dried Basil
  • 1 Tsp Nutmeg
  • 1/2 Tsp White Pepper or Ground Black Pepper

Sauce Ingredients:

  • 1 Tbsp Vegan Butter
  • 1/4 Cup Onion (finely chopped)
  • 2 Tbsp Fresh Sage (roughly chopped)
  • 1/4 Cup White Wine
  • Sea Salt and Ground Black Pepper To Taste

2. Coconut Potato Lentil Soup

Soup is the perfect thing to warm you up when the weather starts to get a bit cooler. This hearty and healthy recipe by Ellen Fisher is an amazing thing to make for you, you and your friends, and/or your family this fall! Here’s what you’ll need for about 4-6 people:

  • 6 Cloves of Garlic (minced)
  • 1 Medium Onion (diced)
  • 3 Pounds of Potatoes (diced)
  • 2 Cups of Red Lentils
  • 4 Cans of Coconut Milk
  • 3 Medium Carrots (chopped)
  • 3 Sticks of Celery (chopped)
  • 1/2 Pound of Mushrooms (diced)
  • 1 Medium Broccoli (diced)
  • 1/2 Head of Cauliflower (diced)
  • 1 Large Zucchini (diced)
  • 1 Tbsp Oregano (or pizza seasoning)
  • 1 Tsp Salt
  • 1 Tbsp Black Pepper
  • 1 Tbsp Cumin
  • 1 Tsp Curry Powder
  • Optional: 1/4 Cup of Apple Cider Vinegar and 1/4 Cup of Sauerkraut

3. Fall Forest Salad

Next on our list of vegan recipes is a delicious fall forest salad by Full of Plants. All the ingredients in this salad go together so well and they’ll remind you of the wonderful warm fall flavors. Here’s what you’ll need:

For Roasted Orange Carrots:

  • 12 Baby Carrots (you can use different colors)
  • 1/2 Cup Orange Juice
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • 1 Tbsp Maple Syrup
  • 1/2 Tsp Cinnamon

For Lentils/Brown Rice:

  • 2/3 Cup Brown Rice
  • 1/3 Cup Green Lentils
  • 2 Cups Water
  • 1/2 Tsp Salt

For Garnish:

  • 6-8 Mushrooms (washed)
  • 1/2 Cup Cooked Chestnuts (roughly chopped)
  • 1/4 Cup Pecans
  • Optional: 1/4 Cup Dried Cranberries (chopped)

For Dill Vinaigrette

  • 1/3 Cup Fresh Dill (finely chopped)
  • 2 Tbsp Olive Oil
  • 2 Tbsp Balsamic Vinegar
  • 1 Tbsp Soy Sauce
  • 2 Tsp Maple Syrup
  • 1 Small Shallot (minced)
  • Optional: Zest from one orange

4. Apple Banana Spelt Muffins
