Next on our list of vegan recipes is a refreshing lemon juice pepper pasta. This recipe is great because it will be ready for the whole family in under 30 minutes, and it only includes a few ingredients!
First you will want to boil hot salted water for the noodles. While that is heating up, you will chop your asparagus into bite-sized pieces and put it in a pan with a little water on medium heat. Cover the pan and let the asparagus start to heat up.
Then you will add your noodles to the boiling water and let them cook while you begin to season your asparagus with salt, pepper, paprika, and some fresh garlic or garlic powder. If you like your asparagus to get a bit crispy, then just add a bit of avocado oil in and let them continue to cook (uncovered).
When the noodles are done cooking you will want to make a space in the center of your pan with the asparagus out to the sides. Next add a little avocado oil, your noodles, and a few chopped up tomatoes. Add as much chili flakes as you would like and then add your lemon juice and salt to taste.
Finally you can mix it all together and serve, seasoned to your liking. Add some vegan feta if you would like as well. This summer recipe is light and refreshing, and it is perfect for a family lunch or even dinner together!
