The wintertime is personally my favorite season when it comes to getting creative with cooking at home. Here are some Delicious Recipes For Winter Cooking that are super easy to follow, even if you aren’t a chef!
When I moved away from home as a college student, I knew little to nothing about how to cook recipes for winter. After too many meals spent at the dining hall, I decided it was time I learn how to make some of my all time favorite recipes I enjoyed growing up. Once I learned how to make these meals, I discovered cooking really wasn’t too hard after all and was actually something I really enjoyed doing. Now that cooking has become a favorite hobby of mine I am here to share my go to recipes for winter cooking that are beyond delicious.
Chicken noodle soup is an all time classic that everyone enjoys, especially during the wintertime. Soup is the best way to warm up after a long day outside when it starts to get chilly out, and tastes ten times better when it’s made from scratch. Sure you can easily make a can of soup in a couple minutes, but I definitely suggest trying this mouth watering, comfort food recipe if you feel like cooking and will make you feel right at home.
Ingredients:
-8 cups of chicken broth
-1 tablespoon of olive oil
-1 cup sliced carrots
-1 cup sliced celery
-Rotisserie chicken meat
-1 garlic clove
-1 onion
-salt and pepper to taste
-3 cups of noodles of choice
-1 tablespoon of parsley
-1 teaspoon of fresh thyme
Start by adding oil to your pot, then add the carrots, onion, celery, and garlic and stir until the vegetables have softened. Next, add your chicken broth, thyme, and parsley and bring to a boil. While this is cooking, slice your rotisserie chicken to the desire amount. Once the broth has boiled, add your noodles and allow them to cook for about 10 minutes. Then add your shredded chicken to the pot. Finish off by adding salt and pepper to taste, and your soup is ready!
My mom’s roasted lemon chicken was always one of my favorite meals she made while growing up. It may seem like a lot at first, but the recipe is actually quite easy to follow and straight to the point. I recommend serving with some roasted potatoes and veggies.
Ingredients:
-1 whole chicken
-2 tablespoons of live oil
-2 tablespoons of butter
-2 lemons
-3 cloves of garlic
-salt and pepper
-garlic powder
Start off by slicing your lemons and removing seeds. Cut up your garlic cloves. Juice on lemon into a bowl, then add the olive oil, softened butter, salt, pepper, and garlic powder and mix. Preheat your over to 425 degrees, then pat your washed chicken dry and coat chicken with butter mixture. Add sliced lemons around the pan for taste. Cook for about an hour and a half or until chicken looks done.
As a pasta lover, I have discovered a bunch of new easy pasta recipes, but this creamy sun-dried tomato pasta is my all time favorite. This recipe is very simple, but tastes like it’s straight from a restaurant. This is a great recipe if you’re looking for a dish to bring to a holiday party, or just feel like making some pasta for yourself one night. Feel free to add any meat such as chicken, or fish like salmon or shrimp for some added protein!
Ingredients:
-Box of pasta of choice
-Sun-dried tomatoes
-Regular tomatoes
-Spinach
-Shredded Parmesan cheese
-2 tbsp of butter
-1 clove of fresh garlic
-Red pepper flakes
-Salt and Pepper
-Garlic Powder
-1/2 cup of heavy cream or half n’ half
If you are cooking a large amount, feel free to change the amount of each ingredient to your liking. Begin by boiling your water and cooking pasta according to box. For the sauce, melt small amount of butter in a pan, then add your fresh garlic and cook at a low heat. Next, add your regular tomatoes on a higher heat, then add sun-dried tomatoes. Once the tomatoes have come to a boil, add your heavy cream and stir at a medium heat. Once the ingredients are evenly mixed, add as much Parmesan cheese as desired and mix in to thicken the sauce. After this, add your handful of spinach and stir. Once the spinach has cooked, add your salt, pepper, garlic powder, and red pepper flakes to the pan for some added spice. After pasta has been drained, add it to the sauce pan and mix. Serve with some sprinkled Parmesan cheese on top and you’re done!
Who doesn’t love a warm grilled cheese on a cold winter’s day? I know these deluxe grilled cheeses have become one of my favorite sandwiches to make, with this pesto avocado sandwich being my all time favorite. This meal is not only easy and quick, but melts perfectly in your mouth after that first bite.
Ingredients:
-2 slices of sourdough or ciabatta bread
-Pre-made pesto sauce
-Butter
-4 cherry tomatoes
-1 avocado
-Arugula
-Shredded mozzarella cheese
-Goat cheese (crumbles or sliced)
Begin by buttering the outer sides of each slice of bread. Spread an even layer of pesto sauce on the inner sides of one bread slice. Cut up your avocado, mash it, then evenly spread on the other slice of bread. For the cheeses, first add your shredded mozzarella cheese to the slice with pesto, then sprinkle on your goat cheese. Slice your tomatoes, then place on top of the cheese blend. After this, add a handful of arugula to the bread slice with avocado to prevent the arugula from falling out of the sandwich. Once all the ingredients have been added, combine the bread slices and pressed together. Cook in a pan at a low heat to prevent bread from burning.
