This recipe is an easy Cinco De Mayo party food idea to prepare and it can be done in less than 10 minutes. You will need just a few ingredients: 1 large chopped jalapeño pepper, 1 large chopped habanero pepper, 8 ounces of shredded cheese, and a bag of tortilla chips. Microwave your chips for 30 seconds. Sprinkle the peppers and cheese over the chips and then microwave again for 45 seconds.

To begin, in a large pot place the pork shoulder, pork belly, and chicken stock. Bring the mixture to a boil and then reduce the heat to medium. Cook for about 2 hours. Then fry the onions and cabbage together until golden. Then warm the tortilla. Grab a plate and place the tortilla on it. On top of the tortilla add your desired amount of pork, onion, avocado, and cabbage. Then dig in!
This Cinco De Mayo party food is for your guests who rather stick to the lighter and healthier choices of foods. It’s a party and there would be all types of people there so it’s best to make a variety of food choices. There are only a few ingredients needed to make this delicious snack. To begin, you will need, 1 large jicama (make sure it is cut into thick sticks), 4 cucumbers cut long ways, 1 can of hearts of palm also cut long ways, 1 tablespoon of Tajín Clásico seasoning, and 1 lime cut into halves. On top of a cutting board place the jicama, cucumbers, and hearts of palm on top and squeeze lime juice on top of them. Then sprinkle your desired amount of Tajín Clásico. Grab a tall jar and place the vegetable inside, sitting upright, and then serve.

For this recipe you will need 1 cup of drained and rinsed corn, 1 zucchini cut into small slices, 2 tablespoons of olive oil, salt and pepper, 4 flour tortillas, 2 cups of cheese, and 1 can of drained and rinsed black beans. Begin by preparing the vegetables. On the oven top, set the temperature to medium. In a large skillet place the zucchini, oil, corn and add salt and pepper for taste. Cook in the skillet and turn over repeatedly for about 8 minutes or until no longer tender. Remove from heat and place to the side in a bowl. With the oven top at the same temperature add 2 tortillas to the same skillet used for the vegetables, it will soak up the flavor while heating up. When one side of the tortilla is a golden-brown color flip it. Once flipped add a spoonful of corn, a spoonful of beans, ¼ of cheese, and a spoonful of zucchini on top of one tortilla. With the other tortilla place it on top of the tortilla with the vegetables. Cook for about 2 minutes and then flip to the other side. Once the side is golden then you are finished.

To make a serving for 4 you will need 4 ears of corn, vegetable oil, ½ teaspoons of salt and pepper, ¼ cup of mayonnaise, and ¼ cup of grated Cotija cheese. You will need ½ cantaloupe skin and seeds removed, ½ pint of raspberries, 1 cup of simple syrup, 2 tablespoons of lemon juice, and 2 tablespoons of unseasoned rice vinegar. In a blender set to low, blend all the ingredients together until smooth. Divide the mixture into ice-pop molds and add sticks. Place in the freezer for at least 6 hours.
