  • 1 tbsp olive oil
  • 2 onions, chopped
  • 1 bell pepper, stemmed, seeded and chopped
  • 1 jalapeno, stemmed, seeded and chopped
  • 2 cloves of garlic, minced

  • 3 tbsp chili powder
  • 2 tbsp unsweetened cocoa powder
  • 1 small pinch salt
  • 1 pinch pepper
  • 1 can diced tomatoes, drained
  • 1 cup beef broth
  • Zest of 2 limes

Directions

Set your slow cooker to the lowest setting and place in your olive oil. Wait for 1 minute for it to warm before adding your pepper, onion, garlic and jalapeno. Proceed to cook with the lid off, stirring occasionally for 5 minutes until everything begins to soften. Add in your beef and cook for 5 minutes. Add in your chili powder, cocoa powder, tomatoes, broth, salt and lime zest. Cover your slow cooker and let cook for 5 hours. Remove from heat and add your beans. Cook for an additional 5 minutes. Begin by heating up a large skillet over high heat. Sear your beef cubes on all sides for about 60 seconds per side. We just want to start cooking them here! Remove from heat and add to your slow cooker. Place in your onion, bell peppers, celery, carrots, beef stock, tomatoes and worcestershire sauce, followed by all your spices. Cook on low for 8 to 12 hours. 30 minutes before it is finished, remove ½ cup of the liquid from the chili and set it to the side in a small bowl. Add some cornstarch to it and stir until smooth.
