15 Cheap Vegetarian Recipes With 5 Ingredients Or Less
Eating healthy can be really expensive if you don’t have some good recipes to follow. That’s why it’s pretty difficult for some people, especially college students or those with low incomes, to eat following a vegetarian or vegan diet even if they really want to. However, there are plenty of recipes out there with very few ingredients that won’t run the veggie lover in your life (or yourself) too much money. Check out these 15 cheap vegetarian recipes.
1. Veggie Fried Rice
It’s pretty simple; you get a bag of mixed frozen vegetables, some brown rice, eggs to bind things together, and some soy sauce for extra flavor! Just throw it all in the skillet and cook until it’s done all the way through.
2. Kale Pizza
Buy a pre-made pizza crust to make this a lot easier. Then, all you need is a large mushroom, some mozzarella cheese, olive oil, garlic, and A LOT of those delicious kale leaves! Bake it in the oven for about 15 minutes and VOILA!
3. Quinoa
White quinoa, black beans, corn, cumin, and salsa. That’s it! All you have to do is mix it up in a pan and you’re good to go!
4. Zucchini Fritters
Who doesn’t love a good fritter? All you need for these: zucchini, quinoa flour, scallions, seasonings, and oil to cook it in!
5. Chocolate Strawberry Truffles
Talk about mouthwatering. I would eat these every day if I could! You just need some unsweetened cocoa powder, maple syrup, almond butter, coconut flour and freeze dried strawberries.
6. Broccoli Mac ‘n’ Cheese
This is undoubtedly a much healthier version of the classic we all know and love. It’s pretty simple, too! Just some broccoli, vegetable broth, water, quinoa and nutritional yeast.
7. Almond Ricotta
Vegetarian (and vegan, too) ricotta can have a lot of different uses. The five ingredients here are nutritional yeast, lemon juice, water, blanched almonds and garlic powder. Creamy, tangy and DELICIOUS.

Crepes are magnificent foods that we all need more of in our lives. These crepes are a relatively healthier version of the classic that we all know and love. You need buckwheat flour, almond milk, coconut oil, flax seed meal, and some cinnamon for flavor.
9. Chipotle Aioli Sauce
I would dip pretty much everything in this if society didn’t frown upon that type of behavior. What you’ll need: cashews, lemon juice, maple syrup, sea salt and of course, chipotle peppers. Who says that cheap vegetarian recipes have to be boring?
10. Sweet Potato Chili
For those cold and rainy days, this chili recipe is a must-have. Onions, sweet potatoes, salsa, black beans and vegetable stock are the required ingredients, but you might wanna add some spices to heat things up!
11. Pumpkin Frappe
PUMPKIN + FRAPPE = LIFE. Now, you can make one at home. You just need cold brew coffee, pumpkin butter, any kind of milk to suit your needs, agave nectar and last but definitely not least pumpkin pie spice. Don’t wait until fall gets here, make one now!

Cheap vegetarian recipes don’t have to exclude sweets. One of my personal favorite desserts is peanut butter fudge, and this recipe makes it a bit healthier than I’m used to. You just need finely shredded and unsweetened coconut, creamy peanut butter, melted coconut oil and maple syrup.
14. Crispy Tofu
For the tofu lovers out there, this is for you. Grab some extra firm tofu, seal salt, curry powder and coconut oil. Bake it in the oven, and you have a nice little snack.
15. Watermelon Margaritas
Because everyone loves a good margarita. All you need is lime juice, watermelon juice and silver tequila (you might also want some sea salt for the trademark salted rim).
