We all know it, the most important meal of the day, breakfast. Yet when life gets in the way, like  tight deadlines or running late, it can be hard to find the perfect fast and easy recipe to start your day. 1. Three Cheese Omelette

Three cheese omelettes are the ultimate protein when it comes to breakfast recipes. If you’re craving some cheesy goodness but need to pack in the protein, three cheese omelettes are a must try. This breakfast is great for when you need that extra protein kick to start off your day right. This is a perfect breakfast for those who are working out and looking to gain muscle,or simply enjoy the taste of egg. Let’s get started. 

Ingredients

  • 1 ounce of butter, melted
  • 3 eggs, beaten
  • 1 ounce Provolone, diced
  • 1 ounce Cheddar, shredded
  • 1 ounce Swiss, diced

Directions

Using a nonstick pan, melt your butter over medium high heat. Then, add your beaten eggs to the skillet. Make sure to keep an eye on it, as eggs are known to cook very fast! When your eggs have begun to stick together, add your three cheeses. Once the cheese begins to melt, flip your omelette. Continue to cook for an additional minute or until all your cheese is melted through. Then, flip an additional time and let it cook for 1 minute. You will be left with a golden brown omelette cooked to perfection. Serve and enjoy.

2. Crispy Breakfast Potatoes

This golden delight is a must try among all breakfast recipes. Crispy breakfast potatoes are perfect for when you have a little extra time at the start of your day or have the availability to prep them the night before. These crispy oven baked delights are a personal favorite of mine. Potatoes are full of starches and fiber that are a great start to your day. So get your nutrients from some delicious crispy potatoes! 

Ingredients

  • 2 ½ pounds of red potatoes, cubed
  • 1 pinch salt
  • 1 pinch black pepper
  • ⅓ cup olive oil
  • 1 large pinch garlic powder
  • 1 large pinch paprika
  • 1 small pinch onion powder

Directions

Preheat  your oven to 450F degrees. Spray or butter a baking dish. Arrange your potatoes in a mound in the center of the baking dish. Lightly drizzle with olive oil. Season with your salt, pepper, garlic powder, onion powder and paprika. Toss with your hands or a large spoon to evenly coat all surfaces of the potatoes. Next, spread your potato cubes in an even layer in the dish and bake for 15 minutes. Remove from the oven and toss lightly before baking for an additional 15 minutes. Set your oven to broiler mode and broil your potatoes for 2 to 3 minutes. This will ensure you are getting the maximum crispy golden goodness! Remove from the oven again, toss lightly and broil for an additional 2 to 3 minutes. Remove from heat. Serve and enjoy.

3. Bacon And Cheese Quiche

This bacon beauty is packed full of nutrients and protein that is guaranteed to start your day off right. And while this recipe can be slightly more time consuming, this is time well spent! A quiche can last one person for several days and is still delicious after being reheated. Want to impress your family and friends with your breakfast game? Try out this recipe. 

Ingredients

  • 1 pie crust
  • 1 cup of half and half
  • 4 eggs, lightly beaten
  • 1 pinch salt
  • 1 pinch pepper
  • 8 slices of bacon, cooked
  • 1 cup of Cheddar cheese, shredded
  • ¼ cup parmesan, grated
  • 1 tbsp white onion, chopped

Directions

Preheat your oven to 350F. Place your pie crust in a baking dish or pie tin. In a medium mixing bowl, combine your half and half, eggs, salt and pepper. Next, layer in your bacon, onion and cheese blend at the bottom of the pie crust. Pour your egg mixture over the top. Bake for 40 to 50 minutes. Note, you can test if it’s done by sticking a knife or fork through it, if the knife or fork comes away clean, it’s ready! Let sit for 5 minutes. Serve and enjoy.

4. Beef Breakfast Burrito

This recipe is the ultimate on the go breakfast. Piled high with protein, eggs and veggies, nothing beats this beef breakfast burrito when you’re in a rush. And the best part, you can add anything you want to this recipe! Burritos are meant to be totally customizable to what you want out of them. Unlike other breakfast recipes, this beef breakfast burrito is a great way to start your day and gets you out the door fast. 

Ingredients

  • 12 ounces of ground beef
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 tsp chili powder
  • ½ tsp cumin
  • 4 eggs, beaten
  • 2 tbsp of water
  • 1 tbsp cilantro, finely chopped
  • 1 pinch salt
  • ⅓ cup Mexican cheese blend
  • 4 medium spinach or plain flour tortillas
  • Salsa

Lime Cilantro Cream

See Also
  • 1 squeeze lime juice
  • 1 bunch cilantro, chopped
  • ½ sour cream

Directions

Combine your lime cilantro cream ingredients to a bowl, cover and refrigerate until you are ready with your burrito. Next, heat a large nonstick pan over medium high heat. Add your ground beef along with your bell pepper, onion, chili powder and cumin. Cook for 8 to 10 minutes, breaking up into small crumbles and stirring. Pour any excess moisture out if need be. Combine your eggs, water and cilantro into a medium mixing bowl. Spray or butter your skillet and pour into the pan over medium heat and cook for 2 to 3 minutes, scrambling your eggs. Next, stir in your beef mixture and cheese and cook for 1 minute. Then, remove from heat and spoon mixture evenly in a line in the center of each tortilla. Fold the edges and cut diagonally and half. Add your lime cilantro cream and salsa over the top. Serve and enjoy.

5. Corned Beef And Hash

This breakfast delight is perfect for packing that extra protein into your day. Corned beef is so soft and tender it’s great for starting your day off right. Corned beef and hash is one a favorite among breakfast recipes, yet not many people know how to make it. This recipe is great to test your cooking skills and make something delicious.  If you want to add some extra protein into your day, try adding eggs to this recipe. Let’s get started. 

Ingredients

  • 1 package of cubed  hash browns
  • 1 ½ cup of white onion, chopped
  • ½ cup canola oil
  • 4 to 5 cups of cooked corned beef, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 8 eggs
  • 2 tbsp parsley, minced

Directions

In a large ovenproof pan, cook your hash browns and onion until golden brown and the onions are tender. Remove from heat and add your corned beef and salt. Make 8 wells in the hash browns. Break an egg into each well and sprinkle it with salt and pepper. Cover and bake for 20 to 25 minutes at 325F. Garnish to your liking, serve and enjoy.
