10 Back To School Breakfast Ideas

We all know that breakfast is the most important meal of the day, but a lot of people tend to skip this first meal due to lack of time in the morning. When you are running out the door to head to school, it can be difficult to find the time to cook up an intricate and healthy breakfast for yourself. Luckily, there are a ton of recipes out there that are well-balanced and will keep you full. Keep reading for 10 breakfast ideas that are perfect for back to school! 

1. Avocado Toast

Toast is always a great option in the morning. Avocado toast is quick and delicious. Toast two pieces of your bread of choice, and then spread some fresh avocado on top.

You can top it with whatever you would like, but here are some of my favorite options. Lemon juice, everything but bagel seasoning, nutritional yeast, red pepper flakes, and red onion. If you have extra time, you can place a sunny-side-up egg on top.

2. Overnight Oats

The best part about overnight oats is that you do all of the work the night before, and then you get to enjoy it in the morning. These are super easy and very customizable. Start by combining rolled oats and whatever type of milk you would like. A good ratio for this is 1/2 oats and 3/4 cup milk. 

To give it some sweetness, add some honey or maple syrup. From this point, you can pretty much add in whatever you would like. Fruit, cinnamon, nutmeg, coconut shreds, chocolate, chia seeds, and nuts are just a few of the options. Close up the jar and place it in the fridge overnight to chill.

3. Protein Smoothie

Protein smoothies are my go-to in the morning because I can take them with me out the door. Here is my favorite recipe. Start by adding some ice to a blender, followed by some milk. I usually do almond milk, but it is up to you. Next, drop in an entire banana and some frozen wild blueberries. Add a heaping spoonful of plain greek yogurt, one scoop of collagen powder, a teaspoon of blue spirulina powder, and one scoop of vanilla protein powder. Adding the protein powder will keep you feeling full!

While I highly recommend trying that recipe, you can change it up to fit your preferences. Chocolate protein smoothies are also amazing!

4. Breakfast Quesadilla

If you know how to make a regular quesadilla, this will be a piece of cake for you. The first step is to scramble one to two eggs. Set those aside once they are done, and place a tortilla on a skillet. Add cheese on top of it, the scrambled eggs, and whatever toppings you would like to add. Add another tortilla on top, slice it up, and you are ready to enjoy!

5. Banana Oatmeal Pancakes

I know what you are thinking, pancakes typically are not a quick and easy breakfast recipe. But this recipe is made in a blender, so it saves you so much time.

Start by adding 1 cup of oats to a blender, to create oat flour. After that, add in a banana, a good splash of almond milk, an egg, vanilla extract, baking powder, and salt. Blend until you get that pancake batter consistency and then cook like normal on a skillet.

You can top off your pancakes with some maple syrup or some extra slices of banana. This recipe makes enough pancakes for two people, so you can share!

6. English Muffin Breakfast Sandwich 

If you love McDonald’s Sausage and Egg McMuffins, then you will love this recipe. Start by placing your english muffin in the toaster, and then add a slice of cheese to the bottom. The next step is to cook your eggs. You can use egg rings to get that perfect circle shape. Cook up a sausage patty and then assemble your sandwich.

7. Breakfast Bowls

Breakfast bowls are another super customizable meal. I start my bowls with scrambled eggs as my base and then fill it up with my toppings. Bacon, sausage, potatoes, veggies, cheese, the possibilities are endless.

Here’s a little tip. Fry up bacon, cook your sausage and chop your veggies the night before. In the morning you will only have to cook up the eggs. This works for omelets too!

8. Chocolate Baked Oats

Baked oats have been all the rage recently. It literally tastes like you are eating cake for breakfast, but it is a lot healthier! There are a bunch of different flavor variations of baked oats, but my personal favorite is chocolate.

To make chocolate baked oats, combine one half cup oats, half a tablespoon of cocoa powder, half a banana, one teaspoon baking powder, one teaspoon brown sugar, vanilla extract, and a half cup of any kind of milk into a blender, and blend until you reach a smooth consistency. Pour into a greased bowl and top with chocolate chips. Bake at 400 degrees for 20 minutes, and enjoy!

9. Yogurt Parfait

These are great grab-and-go breakfast items. You can even make it the night before. In a jar, begin by adding a scoop of your favorite type of yogurt. Personally, I like to do plain Greek yogurt with some honey mixed in. Next, add a layer of your favorite fruit. Repeat those two steps until you reach the top of your jar. Finish with some granola on top.

10. Almond Butter Toast

I had to finish off our list with another great toast recipe. This one is super easy. Toast two pieces of your desired bread and then spread some almond butter on top. Slice up a banana to put on top, and sprinkle on a little bit of granola for some crunch. Finish with a drizzle of honey for sweetness, and you’re done!
