5 Avocado Recipes If You’re Sick Of Avocado Toast

Our generation is obsessed with avocados — namely, avocado toast. But if you’re trying to work the superfood into all of your meals and reap the benefits of numerous nutrients and antioxidants, you might have to branch out a little. Here are some incredible avocado recipes for all hours of the day.

1. Breakfast: Avocado Banana Bread

Starting off, we’ll stay close to the bread and avocado comfort zone. Try substituting avocado for butter to make a healthy, warm, and delicious loaf of banana bread. To start off, blend two whole avocados until smooth and creamy. Then add about one cup of sugar and mix again. In a separate bowl, start to mix two brown bananas, six tablespoons of milk, two large eggs, one tablespoon of baking soda, and one tablespoon of vinegar; you can use a food processor for this if it helps. Pour about half of the original banana mixture into this bowl and mix together with one cup of flour. Once smooth, add the other half of the banana mixture with another cup of flour. Spray a pan with cooking spray, pour the batter in, add chocolate chips if you want an extra sweet note, and bake for 45 minutes at 350 degrees Fahrenheit. The final step, enjoy the delicious and freshly baked avocado goodness.

2. Lunch: Avocado-Buttermilk Soup

This one step avocado recipe makes for a delicious soup that is both easy to make and healthy. All you have to do is add seven ingredients into a blender and mix until creamy: 3/4 cup of fat-free buttermilk, 1/2 cup of fresh tomatillos, 1/2 cup of fat-free, low sodium chicken broth, 1/2 teaspoon of salt, two ripe avocados, one serrano pepper, and one garlic clove. If you’re a vegetarian or just a picky eater, you can stop there. For a more adventurous version, serve the soup in a bowl and add some bell peppers, lime juice, about half a tablespoon of grated orange rind to the top of it. Finally, place grilled chicken chunks or even crab meat on top to complement the rich avocado base.

3. Snack: Avocado Fries

A fun way to prepare avocados is to make them into fries. Start by cutting three avocados into chunky wedges. In a bowl, combine one cup of bread crumbs, one teaspoon of salt, and half a teaspoon of either cayenne pepper flakes or garlic power — pick your favorite. In another bowl, whisk together three large eggs and place one cup of flour into a third bowl. Now, you get to assemble all the pieces. Roll the avocado slices in flour, then dip them in the eggs, and finally roll them in the bread crumbs. Place the finished products onto a baking sheet sprayed with cooking spray and put them in the oven for 12 minutes at 450 degrees Fahrenheit. 4. Dinner: Spaghetti with Avocado Sauce

Avocado makes for an incredible pasta sauce. It’s mild enough to allow you to add your own flavor with garlic, basil, or whatever ingredients you love. While you boil about 12 ounces of pasta for eight to ten minutes, start prepping the sauce. Place two ripe avocados, 1/2 cup of basil leaves, 1/2 cup of spinach leaves, two cloves of garlic, two tablespoons of lemon juice, and one teaspoon of salt into a blender and blend for about a minute. Next, slowly add in 1/4 cup of olive oil as you continue to blend. When your pasta is cooked, drain the water from it and serve onto plates. Drizzle the avocado sauce over the top of the pasta, adding cherry tomatoes or Parmesan cheese for additional flavor.

5. Dessert: Avocado Ice Pops

For a refreshing summer dessert, turn to the following avocado recipe for ice pops. Start by adding six tablespoons of sugar to 3/4 cup of water in a saucepan over medium heat. Once completely stirred, take the sugar water off the heat and allow it to cool to room temperature. Add this liquid to a blender with two cups of chopped avocado, 1/2 teaspoon of grated lime rind, two tablespoons of lime juice, and a pinch of salt. Pour the liquid evenly into six ice pop molds and place in the freezer for about four hours. The end result is a perfectly creamy and sweet ice pop that isn’t totally bad for you.
