As we slowly start to defrost, it’s time to sit outside with a cold drink in hand and embrace the new season. You will need: (serves 4)
500mL Pimm’s No. 1
150mL Lemonade (chilled)
150mL Ginger Ale (chilled)
3-4 cups of ice cubes
1 lemon (thinly sliced)
1/2 cucumber (thinly sliced)
(Optional: orange/ apple slices, strawberries, mint leaves)
Directions:
Fill a 1-litre jug with half of the ice. Add lemon slices and any other desired fruit. Pour in Pimm’s, followed by the lemonade and ginger ale. Stir gently to combine. Divide remaining ice amongst glasses and fill with cocktail. Garnish with cucumber and enjoy!
A refreshing, bubbly and zesty cocktail – perfect for sharing with friends, or sipping on throughout the day. This cocktail is ridiculously easy to make and a sure way to pick up the mood on any given occasion.
You will need: (Serves 4-6)
3 cups of Prosecco (chilled)
1 cup Limoncello liquer (chilled)
1 cup frozen raspberries/strawberries
ice cubes (if desired)
a handful (or two!) of fresh mint
Directions:
If desired, lay ice cubes at the bottom of a large jug before gently adding and mixing the prosecco and limoncello together. Serve with raspberries and fresh mint before enjoying! This is one of the easiest spring drink recipes to make when hanging with friends. It’s the perfect cocktail!

You will need: (serves 4)
4tbsp fresh lime juice
8 large spearmint leaves (more if you want it for garnish!)
8 mint leaves
2 tsp raw sugar
2 cups of brewed green tea (chilled)
120mL white rum
ice cubes (to taste)
Directions:
Muddle the lime juice, mint, spearmint and sugar together in a large glass (keep going until the leaves are a little bruised so that the flavours are released!). Add ice to the base of a large jug, and pour in the muddled mixture. Add rum and green tea to jug and stir well. Garnish with extra mint and lime to taste before serving!
Guaranteed to please even the toughest of crowds, the sweet and slightly herbal twist on the standard Margarita is bound to become an all-time favourite! This recipe simplifies the often-complex art of mixing Margaritas, so if you’ve been doing it another way, by all means continue doing so, and remember, when it comes to Margaritas, everyone is different – so don’t be afraid to play around during the process!
You will need: (serves 8)
300mL of Limeade concentrate
10-15 strawberries (to taste)
8-12 basil leaves
300-400mL of your favourite tequila!
Directions:
Mix the limeade concentrate with your tequila and 300/400mL of water in a large jug (experiment a little with the amounts, depending on how strong you’d like your drinks to be). Hull the strawberries, slice them lengthwise and add them to the jug. Crumple the basil leaves gently in your hands, and add them to the jug too. Keep the jug (covered), in the fridge for at least 4 hours (but overnight works best!). When you remove the jug from the fridge, the margaritas should be a pretty pale pink colour! Serve with extra basil and strawberries to taste!

You will need: (serves 4)
250mL of gin
125mL freshly squeezed lemon or lime juice
125mL Raw Honey Simple Syrup
Lemon peel (if desired, for garnish)
Directions:
Make the Honey Simple Syrup first by heating 125mL of raw honey and 1/2 cup of water until dissolved. Cool to room temperature. Shake the gin, simple syrup and lemon/lime juice over ice. Strain into cocktail glasses and garnish with lemon peel before enjoying!
Looking for a quick, painless and easy punch recipe that’ll last all night long? Then look no further! It wouldn’t be spring without Aperol, and this citrusy punch will really amp up any gathering!
You will need: (makes about 5L)
1.25L of gin
750mL of Aperol
250mL Yellow Chartreuse
300mL freshly squeezed lime juice
525mL of freshly squeezed grapefruit juice
190mL of freshly squeezed orange juice
750mL bottle of sparkling wine, chilled
ice cubes
2 oranges, sliced thinly
Directions:
Mix the gin, Aperol, Chartreuse and lime/grapefruit/orange juices into a large punch bowl. Stir. Add several cups of ice, and leave to chill for 15 minutes (the ice will dilute the punch slightly). Top with the sparkling wine and stir gently, garnish with orange slices to taste and serve over additional ice.
Another one of the super simple spring drink recipes, perfect for a day out in the backyard or over brunch! Pro Tip: Make some moscato ice cubes to prevent the mixture from watering down over the day.

LOTS of ice
750mL Moscato (amount may depend on strength purchased)
250mL Strawberry Vodka (optional)
2L of Pink Lemonade
Sliced lemons and strawberries
Directions:
Put ice into the pitcher and add lemon and strawberry slices. Fill with moscato, lemonade and strawberry vodka – adjust mixture to taste. Enjoy!
This is one of my favorite Spring drink recipes! Rosé, the deliciously enjoyable “it” drink of the year, and one I wasn’t about to miss on this list! Taking a turn away from the popular Frosé trend, this sangria is the perfect way to cool off on a warm afternoon and indulge your sweet tooth!
What you will need: (makes roughly 2L)
750mL bottle of Rosé
125mL peach liqueur
250mL white peach juice
85mL simple syrup
3 sliced peaches (white)
1 cup sliced strawberries and/or raspberries
Directions:
Mix rosé, liqueur, fruit juice and simple syrup to a large jug. Adjust to suit taste before adding fruit and refrigerating for several hours. Serve chilled, over ice!
Simple Syrup can be prepared by bringing 1/2 cup of water to boil and adding 1/2 cup of granulated sugar. Stir the mixture until sugar has dissolved and chill before use.
Blood Orange is often thought of as a somewhat delicacy, not commonly used or consumed on a day-to-day basis. However, mixed in with the subtle intricacies of both gin and elderflower – the trio create a flavour so powerful and delicious, that it tastes as good as it looks!
You will need: (serves 4)
125mL gin
90mL St. Germain (or another elderflower liqueur)
60mL lime juice
350mL ginger ale
120mL blood orange juice
Directions:
In a jug, combine gin, St. Germain, lime juice and ginger ale. Top jug with ice and stir gently. Slowly add blood orange juice and garnish with blood orange slices if desired. Enjoy one of these amazing spring drink recipes!
