This American flag cheesecake bar recipe is super easy and fun so that you can make your cheesecake bars as easy as possible. What you will need for the crust for this recipe is half a cup of whole almonds, one cup of all-purpose flour, one-third of a cup of firmly packed light brown sugar, and a fourth of a teaspoon of salt. For the filling, you will need three 8 oz. packages of cream cheese which is held at room temperature, three-fourths of a cup of sugar, 3 large eggs held at room temperature, 2 tablespoons of lemon juice, two teaspoons of vanilla extract, one-fourth of a teaspoon of salt, about a cup or 80 fresh, ripe blueberries, and one cup of seedless raspberry jelly.
To make this American flag cheesecake bar recipe, start by preheating the oven to 325F. Next, line a pan, preferably in a nine by thirteen-inch pan with foil. Add a couple extra inches of foil so that the foil folds over the side of the pan. Put the almonds in a food processor and after it is finely chopped, add the rest of the dry ingredients for the crust, and once it is combined well, add the rest of the ingredients. Spread this onto the pan and bake for 25 minutes.
For the filling, put the cream cheese and sugar in a mixer on medium until it’s smooth. Then, start to add the eggs, one at a time after reducing the speed to medium-low. Once it is all combined, add the lemon juice, salt, and vanilla.
After letting the crust cool, spread the mixture over the crust. To get rid of any bubbles that might be in the mixture, tap the pan on a countertop a couple times. Place the pan in a roasting pan and pour hot tap water into the roasting pan before putting it all in the oven. Bake for 40 minutes before cooling it and then refrigerate for at least six hours. After refrigerating, use the excess foil to take the cheesecake out of the pan. Cut it into about sixteen bars.
To decorate the bars, you will need the blueberries and jelly. Take about four or five blueberries and place them in the upper left corner of the bar. These will represent the stars on the American Flag. Next, take the jelly and pour it into a Ziploc bag. Push it into a corner of the bag and snip off about one-sixth of an inch from the corner. This will allow you to easily pipe the jelly. Pipe the jelly onto the cheesecake bars in horizontal lines. These will represent the stripes on the American flag.
