5 DIY Vegan Cookie Recipes For The Holidays

These recipes were made by a vegan and plant-based baker!! Her recipes are to die for, and I knew I needed to share them with my fellow college students for this upcoming winter break! 

These vegan cookie recipes are so fun to bake, so good to eat, and even better to share with your loved ones this Christmas season! Most of them can be made gluten-free too! Let’s dive in.

1. Vegan Gingerbread Cookies

The first recipe is a vegan cookie recipe geared towards gingerbread lovers! With a hint of molasses, they are so sweet and rich– perfect for the cold, bulking season! You are going to need vegan butter, dark brown sugar, molasses, vanilla, sugar, ginger, salt, cardamom, baking soda, and a flax egg!

The baker recommends Brer Rabbit and Crosby Fancy Molasses for baking these eggless molasses cookies! Of course, you go ahead and mix your wet ingredients together, and then stir to combine in the dry ingredients! You bake at 350 degrees F, for about 10-12 minutes or until the middle is slightly chewy but the edges are crispy!

2. Vegan Pistachio and Cranberry Cookies

The second recipe is also perfect for the holiday season and is such a bright flavor combination that it really needs to be shown off this winter! The best thing about these cookies is that you only need 5 ingredients, and they can be made gluten-free as well!

You will need dried cranberries, roughly cut pistachios, all-purpose flour (or almond flour/gluten-free option of your choosing), cold and cubed butter, and powdered sugar! You can also add some orange or lemon zest if you so choose! 

You combine the butter, flour, and sugar, and then toss in your nuts and berries (zest is optional)! You roll them into 1″ balls and bake on 350 degrees F for about 12 minutes or until they are golden brown! You can also choose to roll the dough out with a rolling pin or an emptied wine bottle, and then use cookie cutters to create cute and festive shapes, but that’s totally optional!

These are just so amazing… definitely give them a shot! I use this vegan cookie recipe whenever I want a cup of tea and a shortbread snack!

3. Vegan Chocolate Peppermint Cookies

This next recipe is a bit more geared to Christmas season aka the only time it’s socially acceptable to eat or drink anything peppermint flavored. You are going to follow the basic vegan cookie recipe with vegan butter, a flax egg, and brown sugar, then you are going to add in peppermint extract, cane sugar, cocoa powder, flour (of your choice), chopped candy cane and chocolate chips, and baking soda and salt! 

You follow the basic method of wet ingredients first, then dry ingredients, and you roll them into 1″ balls and bake at 350 degrees F for about 10-13 minutes! Definitely let them sit out for 5-10 minutes to cool down and harden before serving, but once you do, they are phenomenal!

4. Vegan Candy Cane Sugar Cookies

The fourth vegan cookie recipe is for candy cane sugar cookies! Oh my gosh these are so delicious and so addicting too! Again, you are going to use the basis of any good vegan cookie recipe which will include: a flax egg, began butter (Earth Balance is my personal favorite), cane sugar, peppermint extract, flour, baking powder and soda, salt, and then peppermint candies!

Essentially you combine the wet ingredients, then the dry ingredients, and then the two of them together. You can roll them out with a rolling pin, and then get creative with the shapes! I bought a 100 pack of Santa cut-outs, and they’ve lasted me years, so I usually just stick with that Christmas theme– but let your wild side ride! 

You place the shapes on some parchment paper and thrown them into the preheated oven at 350 degrees F for about 10-12 minutes. Let cool down and enjoy! I absolutely love these cookies and they are so perfect for any sort of holiday party! They’re always such a hit.

5. Vegan Brown Sugar Chai Cookies

The last vegan cookie recipe is for brown sugar chai cookies, and when I say these are phenomenal, I am not lying. They are so good. Addicting. Cookie rehab needs to be a thing after eating an order of these cookies.

The ingredients are simple, but the key that the baker made very sure to emphasize was to use DARK brown sugar!!! This will ensure that your cookies have such a rich integrity to them, and it can totally change the taste and texture of the dough!

You are going to combine all of these ingredients: flour, baking soda, cinnamon and nutmeg, dark brown sugar, vegan butter, a flax egg, and some cane sugar for the top!
