Directions 

Preheat your oven to 400F. Prepare a baking pan lined with parchment or glass baking dish. Beat your egg and stir in your vanilla extract. Next, take one puff pastry sheet and roll out into a 12 inch square. Lightly brush with your egg and sprinkle your cinnamon sugar over its surface. Then cut your puff pastry into 3 squares. Bake for 15 minutes or until golden brown. Add berries and lightly dust with powdered sugar. Serve and enjoy.

Make sure to cover every surface so it doesn’t burn! This will help get that golden brown effect. Fold your pastry sheet into thirds and cut a 3 inch round hole out of the middle, making sure they are in the middle of the pastry and an inch away from the edge of the pastry. Chill in the fridge until the dough has firmed up. This should take around 30 minutes. Remove from the fridge and place in your frying oil, frying each side for 3 minutes each or until golden brown. Place on a paper towel lined plate and sprinkle lightly with sugar. Next, fill a pipe bag with your vanilla pudding and gently fill the doughnuts, on each side.
