5 Veggie Recipes To Make You Eat Your Greens

When it comes to eating veggies, it can feel like a chore. Whether it’s leafy or fibrous, vegetables can be hard to choke down when we would simply rather be eating something else. Yet veggies don’t have to be a chore. With fun filled recipes, and yes, a little bit of butter, eating your greens can be easy, fun and delicious. Here are 5 veggies to make you eat your greens.

This recipe is a great way to make your asparagus delicious.

1. Baked Lemon And Garlic Asparagus

This recipe is great for getting that sense of fiber back in your life. The zing of lemon and the soft bite of garlic, make this recipe feel less like a veggie and more like a five star entree. The slow baking of the asparagus makes those rough stalks, tender and flavorful. Baked asparagus is perfect for when you want to stay in and simply pop something in the oven. When you want something for your next workday dinner, try this recipe out. 

Ingredients

  • 1 bunch of asparagus
  • 2 tbsp olive oil
  • 4 cloves of garlic, peeled and minced
  • 1 pinch salt
  • 1 pinch pepper
  • Juice of ½ lemon( or 1 whole lemon if you like that extra zing)

Directions

 Preheat your oven to 425F. Rinse your asparagus and lightly pat dry with a paper towel. Remove excess stem and place into an oven safe baking dish before adding your olive oil. Lightly toss with tongs or your hands to make sure all surfaces of the asparagus are coated. Next, season with your salt and pepper. Add in your lemon juice and minced garlic. Place into the oven and bake for 10 to 15 minutes, depending on how tender you like it. Serve and enjoy.

2. Wilted Spinach With Bacon And Onion

If you’re like me, spinach can be hard to get down. Yet with this recipe, eating your spinach is made easy. With the soft crunch of onion and succulent rich taste of bacon crumbles, you will be licking your plate for more with this spinach recipe. 

Ingredients

  • 1 tbsp bacon grease
  • ½ white onion, diced
  • 3 cloves of garlic, peeled and minced
  • 1 dash red wine vinegar
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch red pepper flakes
  • 1 serving of spinach

Directions

Begin by taking a large flat pan and heating over medium high heat. Add a small amount of bacon grease to your pan and gently move it around until the bottom is coated. Next, add in your onions and garlic and cook until soft for about 5 minutes. Proceed to add in your salt, pepper, red pepper flakes and vinegar. Add your spinach and lightly toss. Cover and let wilt for 1 to 2 minutes. Serve and enjoy.

3. Kale And White Bean Stew

Are you looking for a recipe that is perfectly tender and decadent? Kale and white bean stew is a great way to get your protein and fiber in a new delicious way. This French inspired dish is perfect for any sick day or to warm you up after a long work day. This recipe is not only a way to eat more veggies but a great healthy comfort food.  When you’re looking for something to warm your soul after a long day, this stew is perfect for you. 

Ingredients

  • 2 tbsp cooking oil
  • 2 small white onions, chopped
  • ¼ lb of mild sausages, casing removed
  • 3 cloves of garlic, peeled and minced
  • 1 pound of kale, de-stemmed, washed and shredded
  • 1 can of diced tomatoes, juice included
  • 1 large pinch of salt
  • 1 pinch pepper
  • 1 can of white beans, drained

Directions

In a large pan or skillet, heat your cooking oil over medium low heat. Add your sausage breaking up in the pan and let cook for 2 minutes. Next, add in the remaining cooking oil and stir in your onions and garlic. Cook until soft, about 3 minutes. Add your kale and cook until it begins to wilt, about 2 minutes. Note, if you want to speed up this process, cover the top and the steam and  wilt your kale faster. Add in your tomatoes, salt and pepper, bring to a rolling simmer. Reduce the heat on low and cover for 15 minutes. Then, add your beans until warmed through, about 5 minutes. Serve and enjoy.

4. Roasted Butternut Squash

If you’re in the mood for something soft, tender and sweetly aromatic, this recipe is a must try. Roasted butternut squash is a naturally sweet veggie to begin with, but coupled with the deep rich earthy aromatics of rosemary, it’s simply out of this world. This recipe is great for a holiday side dish or giving you that sweet sense of comfort for when you need it the most.

  • 1 butternut squash, peeled and cubed
  • 2 cloves of garlic, peeled and minced
  • 2 sprigs of rosemary, chopped
  • 2tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Directions

Begin by preheating your oven to 400F. Mix your butternut squash cubes with your olive oil, salt, pepper, garlic and rosemary. Take a baking dish and spread an even layer of your butternut squash mixture across the bottom. Bake for 45 to 50 minutes until golden brown. Serve and enjoy.

5. Steamed Artichoke

This recipe is great for a party snack or a party of one. When you feel like being fancy for your next veggie occasion, this recipe is a great way to make an appetizer for yourself that gets you that veggie fix. The soft zing of lemon and the sweetness of aromatic butter, makes this recipe perfect for any snack or meal. 

Ingredients

  • 4 medium artichokes
  • 1 lemon, halved
  • 1 pinch salt
  • Butter, melted
  • 1 sprig rosemary, chopped

Directions

Begin by snapping the stems off your artichokes and remove the outer leaves. Using a knife, cut off the top of the artichoke. Rub the surface with your lemon. Next, set a steaming basket into a large pot and add your water. Squeeze the remaining lemon juice into the water. Add your salt and bring to a rolling boil. Place your artichokes into the steaming basket. Steam for 25 to 35 minutes. While this is going, melt your butter and rosemary sprigs. Pour into a small dish for dipping sauce and set to the side. Remove artichokes from heat and let cool. Serve and enjoy.
