5 Refreshing Spring Recipes

It’s almost here. Spring is right around the corner and it’s time to kiss our warm winter recipes goodbye and embrace the sweet freshness of spring. But exactly does it mean to cook for spring? Utilizing fresh veggies and ingredients, Soceity19 is here to help you. Here are 5 refreshing spring recipes that will keep you coming back for more.

This recipe is a fun and fresh way to liven up your spring.

1. Spring Rolls

This wouldn’t be a spring list if I didn’t include the ultimate springtime dish. Like the name suggests, this spring roll is full of light delicate veggies coupled with the sweet meat of shrimp. This recipe is great for parties or enjoying on your own. Embrace the freshness of spring, with this recipe. 

Ingredients

Peanut Sauce

  • ½ cup hoisin sauce
  • ¼ cup peanut butter
  • ¼ cup water
  • 1 tbsp rice vinegar
  • 1 tbsp peanut chopped

Shrimp Spring Rolls

  • 1 package of rice noodles
  • 10 large shrimp, deveined and tails removed
  • 10 round rice paper wraps
  • 10 lettuce leaves
  • 1 cup shredded carrots
  • 1 cup red cabbage, finely chopped
  • 1 package of mint leaves
  • 1 cup bean sprouts
  • ½ cup cilantro leaves

Directions

Start by making your peanut sauce. In a medium mixing bowl whisk together your hoisin sauce, peanut butter, water, rice vinegar and peanuts. Transfer over to a serving bowl and lightly sprinkle with peanuts. Assemble your spring rolls by bringing 2 cups of water in a medium pot to a rolling boil. Add your dried noodles and cook until tender. This should take around 4 to 6 minutes. Drain and transfer over to a bowl, refrigerate. Next, bring the water to a rolling boil and add your shrimp and cook for 1 minute until the shrimp is pink. Drain and let cool in the refrigerator. Next, soak your rice papers according to the package directions. Note, this is a very time sensitive process, you should only soak them for about 15 to 20 seconds. Remove and gently shake excess water off the rice paper. Lay your lettuce over the bottom third part of the rice paper. Place your noodles above the lettuce. Add your noodles, cabbage and bean sprouts. Roll up halfway before laying your shrimp halves in. Carefully fold and crease your rice paper. Place some cilantro next to the shrimp. Keep rolling until it is a tight seal. Serve with your peanut sauce. Enjoy. 

Unlike some pasta recipes, this pasta is a light filling way to use your fresh ingredients for Spring.

2. Pasta Salad

This recipe is a light and fresh way to cater to parties or for any dinner. I love this sweet combination of deep green olives and sweet tender pasta. It creates the perfect balance of natural sweetness and  cheesy starch that is unforgettable. This recipe is filling and fresh for your next spring recipe. 

Ingredients

Dressing

  • ¼ cup olive oil
  • 2 tbsp sun dried tomatoes
  • 2 tbsp red wine vinegar
  • 2 cloves of garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 dash red pepper flakes
  • 1 pinch salt
  • 1 pinch pepper

Salad

  • 1 package of pasta
  • 1 cup pitted sliced green olives
  • 1 cup pitted kalamata olives
  • ½ cup sun dried tomatoes, chopped
  • 8 ounces of mozzarella cheese, cubed
  • ⅓ cup parmesan, grated

Directions

Cook your pasta according to the directions on the package. Drain and add to a mixing bowl. Combine your ingredients for your dressing and shake before adding to pasta. Add your olives, sun dried tomatoes and cheeses. Lightly drizzle the dressing over the pasta and toss. Chill for 1 to 2 hours before serving. Serve and enjoy. 

This tender meat is fall off the bone good for any meal.

3. Korean Short Ribs

This recipe is perfect for a springtime centerpiece. The style of the Korean short ribs are soft, tender, salty and smooth.  And unlike some recipes, the texture is both smokey and salty and pairs perfectly for any spring side dish. Say hello to spring cookouts with this recipe. 

Ingredients

  • 5 pounds Korean style beef short ribs
  • 1 cup of brown sugar
  • 1 cup soy sauce
  • ½ cup water
  • 1 onion, peeled and finely chopped
  • ¼ cup mirin
  • 1 small Sian pear, peeled and grated
  • 4 tbsp minced garlic
  • 2 tbsp dark sesame oil
  • 1 pinch black pepper
  • 2 green onions, thinly sliced for garnish

Directions

Lightly sprinkle your ribs in brown sugar and mix well to coat every surface. Let sit at room temperature for 10 minutes, really letting that sugar absorb into the meat. In a bowl, mix your remaining ingredients together. Transfer your beef into a bowl or bag and add your marinade, pressing out excess air. Seal and let marinate in the fridge for at least 4 hours. Heat up your grill on medium hot. Drain the marinade from your beef and grill your short ribs. Cook for 3 to 4 minutes on each side. Remove from heat and garnish with your green onions. Serve and enjoy.

4. Carne Asada Tacos

Are you looking for the ultimate party food recipes for your next cookout? Carne asada tacos are packed full of flavor and heat that are perfect for a quick spring dinner. And while the prep is slightly time consuming, the deep richness of the meat and the zing of lime are well worth it.

Ingredients

  • 1 carne asada batch
  • 2 avocados
  • ⅓ cup cilantro, chopped
  • 3 tbsp cotija cheese
  • ⅓ cup onion, diced
  • 6 corn tortillas
  • Limes for garnish

Directions

Begin by grilling the carne asada until it is thoroughly cooked to your desired rareness. Slice it against the grain and cut it into small pieces. Heat your tortillas. Use the spoon to mash the avocado and spread a large spoonful onto each tortilla. Add your carne asada.  Lightly sprinkle your cotija cheese and some diced onion. Top with some lime juice. Serve and enjoy.

5. Berry Salad

This salad is a great way to add that special sense of freshness to any meal. In addition to adding fresh veggies to your regiment. The natural sweetness of the berries and the zing of the raspberry vinaigrette is the perfect hello to spring. 

Ingredients

  • ½ cup blueberries
  • ½ raspberries
  • 1 dash of raspberries vinaigrette dressing
  • ½ cup pomegranate seeds
  • ⅓ cup parmesan cheese grated
  • 1 cup mixed greens

Directions

Combine the ingredients of your salad and drizzle your dressing over the top. Sprinkle lightly with the cheese. Serve and enjoy.
